Cinnamon-Steeped Pineapple

A great dessert should neither tie you down in the kitchen nor weigh you down after eating it, making this easy and light cinnamon- and cardamom - steeped warm pineapple, topped with vanilla ice cream, perfect. Pop out the core of the pineapple and slice it into two thick rings. The rings will seem large, but any thinner and they might break up during simmering. The pineapple is steeped in a sugar syrup spiked with cinnamon and cardamom, but you can play with the spices. For a bit of heat add a pinch of chili powder. To make this dessert ahead, steep the pineapple as directed, then place the entire pan of pineapple and syrup in a 200F oven until ready to serve. The chocolate sauce can also be prepared early. I found this recipe in our local newspaper. -- posted by Chef mariajane

Grilled Pineapple With Basil and Mint

My favorite thing thing to make on the grill is pineapple. Grilling fresh pineapple brings out the sweetness of it. This recipe really takes it up to another level in flavors. It is fancy enough for guest and easy enough to make anytime. I like it with spiced rum too. -- posted by Jess4Freedom

Tropical Fruit Trifle

This recipe was conceived from the "ashes of failure." I made Mark H's Coconut Pound Cake, Recipe #17617, but due to my error, I absolutely stuck to the bundt pan and came out in chunks. After I tasted the cake, it was too delicious to even consider trashing, so I came up with this instead. I suppose you could use any tropical fruit, I just used what I had on hand. Amount of fruit and cake you will need will depend on your bowl. I have a very deep trifle bowl (see pic). -- posted by SweetSueAl

Thick Tropical Smoothie With Bananas and Strawberries

Just had a root canal and having other toothache problems so it's difficult for me to chew solid food, including fruits. I recently had purchased a can of Safeway brand Tropical Fruit with Pineapple and Passion Fruit Juices. The ingredients read: pineapple, red papaya, yellow papaya, pineapple juice, water, sugar, passion fruit juice, banana puree, citric acid. I emptied the can with the juice into a freezer-safe container and froze overnight. I let the frozen fruit thaw in the fridge for a few hours and then ran the container under cool water for a about 30 seconds to break up the mass of frozen fruit from the edges of the container and then cut it up with a plastic pancake turner. I used a square-shaped container and broke the frozen fruit up into 4 large pieces so it would fit into the blender. Bf bought me fresh strawberries so chose to use those over the frozen ones I had. I always keep sliced, frozen bananas on hand in the freezer. The water in the recipe is necessary for the blending and it doesn't taste too watered down, and I needed just about 1/2 cup. The honey is for a little added sweetness. This makes two very large servings. This turned out thick, but drinkable. Please let me know how you like my recipe. It would make a great breakfast, snack, or even dessert! Prep time doesn't include freezing time for the fruit. -- posted by blancpage

Caramelized Pineapple Sundaes With Coconut

This dessert treat uses fat-free vanilla frozen yogurt, but you could substitute vanilla ice cream if you prefer. The flavors of coconut and the carmelized pineapple create a delicious topping. This is best when fresh pineapple is used. Sometimes you can find already peeled and cored pineapple in the produce department.
Tropical 7 Layer Twist Bars

*After making 7 Layer Bars for a bake sale at work, I started thinking about how well white chocolate chips and macadamia nuts go together. Then I thought, "Hey!!! What would happen if I threw them together with some pineapple and coconut?", and this is what I came up with ... A refreshing tropical twist on an old favorite.
Depending on how big you cut your pieces, you can get about 12 to 16 bars.

Tropical Fruity Jello

To make jello a little more interesting, I added my favourite tropical fruits and it worked beautifully! This is so refreshing on a hot day and the low sugar version is great for waistline-watchers. I use sugar free jello but feel free to use a small packet of regular peach jello. I have been told that fresh pineapple prevents gelatin from setting so only use canned for this recipe.
Grilled Pound Cake Sundaes

Grilled pound cake with pineapple, fruit, and ice cream. A good no bake recipe for hot weather. If fresh pineapple is not available use canned pineapple slices, drained, 2 per serving. Substitute any fresh fruits in season. For a no-grill option, broil pound cake and pineapple separately on a rack set 6” from heat source until lightly browned, turning once, 1 or 2 minutes per side. Instead of cooking spray, use additional melted butter to coat pound cake slices. The original recipe from Woman's World magazine called for serving with caramel topping and dulce de leche ice cream. I skipped the caramel topping and served it with French vanilla ice cream. -- posted by foodtvfan

A creamy cream cheese and nut date filling and topped with sweet grilled pineapple.
Creamy Coconut and Rum Baked Pineapple

I came up with this as a solution to leftover coconut milk and a fresh pineapple. And even on Weight Watchers, it was worth saving points for this dessert. The whole recipe has a total of 8 points. The rum for this dessert should be golden- a light rum will not produce the same depth of flavour. Number of servings will depend on the size of pineapple used- increase the sauce if using a large pineapple. -- posted by Shuzbud
