Vivian's Raw Pie

Raw, naturally sweet & amazingly healthy and delicious. This is my take on Vivian's original recipe. There is a lot of room to improvise here. I've had several different versions of this pie and it was excellent every time. This recipe comes from an old hand written recipe card from a friend's mom's recipe collection. Whoever Vivian is, bless her heart, I love this pie. -- posted by jude503

Bittersweet Chocolate Pecan Pie

Not your usual pecan pie. A rich layer of bittersweet chocolate balances the sweetness of this pie. Chocked full of pecans for a decadently satisfying filling. Be sure to use a high quality bittersweet chocolate which is 60 - 70 % cacao for this pie. Cook time reflects baking pie dough and cooling.
Grandma's Butter Tarts

This was my Grandma's recipe and has been a family favorite for years. Every time she would make these we would practically inhale them. Now, I make them on all the holidays. My family absolutely raves about them. They get gobbled up so fast that I always have to make a couple batches!

Note: I don't put raisins and nuts in the filling mixture at first. I add them to each individual tart after I've poured in the mixture. About 5-8 raisins and a sprinkle of nuts to each tart.

Also, to get a really flakey crust, keep all ingredients and utensils cold. I put my bowl, rolling pin, pastry whisk, and the flour I will use in the freezer prior to making and I keep the butter and shortening in the fridge until ready to use -- posted by ProudMamaT

Cranberry and Almond Bakewell Tart: English Classic With a Twist

This is a twist on the classic English Bakewell Tart or to be more authentic, a Bakewell Pudding. I added cranberries to the basic almond sponge mixture and my family loved it! ( All because my Mum had excess cranberries after the Festive Season! ) I made my own shortcrust pastry for this recipe, but any good quality ready-made pastry will be fine if you want to cut back on prepping and cooking time. This is delicious served warm or at room temperature, maybe with a dollop of cream, creme fraiche or even better, custard! I plan to make this with blackberries and raspberries when they are season, or indeed any other soft fruit. -- posted by French Tart

This is from the issue of April 2006 of Coup de Pouce. The taste of the butter crust goes well with the taste of maple but if you want to save time, you can also buy store-bought dough (fresh or frozen, about 1 lb in total) or even better : frozen tartlets crust.
Dark Pecan Pie - Virginian Hostess Style

This is a very fine dark pecan pie, its chess pie custard looks similar to commercial pies.
Low Sugar Coconut-Almond Pie Crust or Cheesecake Crust

I put this together so my husband could make his favorite key lime pie but still be a "little" healthy. We enjoy collaborating on recipes! He is quite the cook in his own right.
Almond meal is finely ground. You can make your own by pulsing in a food processor but be careful not to make almond butter out of it, which can happen if it is processed for too long. Same with the coconut, although I buy mine ready made. Just make sure it is unsweetened coconut or the recipe will be off. Pulse it in the food processor until it is like tiny crumbs. For unsweetened coconut you can also try making that from a fresh coconut if you can't find unsweetened coconut at the market. Enjoy! -- posted by Sue L

Okinawan Purple Sweet Potato Pie With Haupia Topping

The Okinawan sweet potato is a very special potato.
Kathi's Ode to Almond Joy Haupia Pie

I hope you enjoy my version of this traditional coconut milk-based Hawaiian dessert, which is often found at luaus and other local gatherings in Hawai'i. Key differences include a dark chocolate layer of coconut-flavored gelled-pudding (in addition to the regular white layer), and almond flavored whipped topping. So easy to make and like the recipe says, BEST IF REFRIGERATED OVERNIGHT to let the layers set up and the flavors develop - in the words of Alton Brown: "Your patience will be rewarded!" (This pie also freezes well - I would say easily keeps for 6 months in the freezer. If you want to make more than one at a time, use regular 8" instead of deep dish pie shells, and then split the coconut mixture and chocolate coconut mixture each into equal halves after step 12 & proceed w/the rest of the steps for each pie shell. You will then have one to share, and a spare!) -- posted by Kathi Ann

Pastelitos -- Little Fruit Pies (Southwest)

This recipe was found in the 1986 cookbook, I Hear America Cooking. These "little pies" are a version of those pastries made in Arizona & New Mexico, especially during Pueblo feast days.
Triple Threat Coconut Cream Pie

We're in love with Tom Douglas' Coconut Cream Pie from Dahlia Bakery here in Seattle, but at $35 a pie plus a $5 deposit for the plate--I knew I had to come up with my own. I watched a demo of his on the local public television website, but still felt I needed to add my own touch. I'm proud to say it's a winner! Take that, Mr. Douglas. . . .

One note: I would highly recommend you follow the instructions for a great pie crust below, for optimal crispiness and flavor. Otherwise, you can roll out a store-bought dough, and just before rolling it out, sprinkle the coconut on top and roll it in. Will be more susceptible to burning, but should be okay if you watch it close. I always make a big batch of my All Butter Pie Pastry, recipe #239831, and keep it in the freezer for easy prep. I've rolled the coconut into the prepared, thawed dough with no problem. -- posted by Battle in Seattle

There doesn't seem to be anything similar on Zaar yet, so this had to be posted!! This is a wonderful, versatile 'pie'. I serve it cold with thick yoghurt and passionfruit pulp, however others like it warm with ice-cream. It's totally up to you. If you like a very moist cake with a tang, then you'll love this - it's to die for!!
Note: My mum uses milk and coconut extract instead of coconut milk, so that could be an option. -- posted by Mellowpuff

Deep Dish Peach Streusel Pie

This is VERY loosely based on some of the pie instructions in How to Cook Everything. I've done a lot of adjusting and tweaking. A food processor is used to make the pie dough. I like the filling with all brown sugar, but you can substitute all white sugar, or use a combination. The topping is best with brown sugar.

Asa Ransom House Butter Pecan Pastry

In 1799, the Holland Land Company offered lots 10 miles apart in what is now Clarence, New York, to "any proper man who would build and operate a tavern upon it". A young silversmith named Asa Ransom, had been plying his trade in the little fur trading post on the shores of Lake Erie. He was among the first to accept this opportunity and in the hollow of the ledge, near a pine grove, built a log home & tavern. In 1803, he built a grist mill, the first in Erie County. Over time, the business has evolved into a charming inn noted for it's authenticity, hospitality and cuisine. Enjoy! -- posted by Nif

This is so yummy! Beautiful for festive holidays or just because! The whole family will love this! It's simple to make using canned pie filling, and a make-ahead pie crust. Gotta try this! -- posted by FLUFFSTER
