Rosalie's Ice Cream Pie With Peanut Butter Crust

My mom, Rosalie, made this pie for the first time about 20 years ago. Everyone that has had it asks for the recipe, and it is known by all of her friends all over the country as "Rosalie's Ice Cream Pie". It is my favorite ice cream pie. You can use different flavors of ice cream if you like, but I still prefer the original. Prep time does not include freezer time. -- posted by Kelly M.

Peach Ice Cream Pie

Frozen peach ice cream pie in a crunchy chocolate crust...a cool treat on a hot summer day! From the Peach Tree Tea Room in Fredericksburg, TX, deep in the heart of Texas hill country. Would be extra refreshing garnished with fresh mint leaves. You could also make these in muffin pans for little individual frozen peach ice cream tarts. Cook time does not include freezing time. -- posted by winkki

Summer Pie Anytime (Make-Ahead Fruit Pie Filling)

This is a make-ahead pie filling from freezer to oven. Great way to use fresh apricots or peaches, This way you will have a fresh fruit pie in the middle of winter. Note: To thicken this filling, use a basic ratio of 1 tablespoon of flour for every 2 cups apricots. Peaches may be juicer; for very juicy fruit, increase flour to 1 tablespoon per cup of peaches. The recipe comes from Sunset.com. -- posted by Barb Gertz

Grasshopper Pie Lulubelle

With its old-west dancehall decor and its hearty western dinners (or dainty ladies' lunches), Lulubelle's used to be THE place to eat here in Scottsdale. This pie was the specialty of the house, and people often came just for a slice. Do not be put off by the name; do try this recipe. It is a basic recipe and may be varied with your favorite liqueurs if you choose -- suggestions are at the end. There are shortcuts you can take with this recipe, too. Use a commercially prepared chocolate crumb crust, for example. Two cups thawed Cool Whip may be substituted for the whipped cream. -- posted by Lorraine of AZ

There are several fillings so will add them in the directions, these can be desserts or lunch pockets. They can be baked, fried, or even deep fried. How versatile can you get? Now add to this that you can make these up and freeze them prior to cooking for OMAC's Ohhhhh yah, now this is one of those really welcome recipes with all around appeal. -- posted by Chabear01

Freezer Peach Pie Filling and Pie Freezing Method

This method will work perfectly every time! If you follow this recipe and do not change any ingredient amounts, you will have perfect peach pies all year round! You can omit the nutmeg if desired though, I like to add it in for an extra flavor boost!
Peanut butter, honey, vanilla ice cream, nuts and chocolate fudge are my idea of a heavenly dessert! Turkey Hill ice cream is so delicious and so are their recipes.
Peanut Butter-Chocolate Freezer Pie

I made this recently it is *SOOOOOOO* good, it's like a frozen Reese's peanut butter cup :) If you are a lover of peanut butter and chocolate you will love this! it has a chocolate layer spread over the crust, then a creamy peanut butter/cream cheese middle, then topped off with chocolate drizzle, you could double the amount for the chocolate topping which I did do but found that it was too much for my liking, if you like lots of topping then go ahead and double, remove this pie from the freezer about 15 minutes before slicing, I think this pie could also be served from the refrigerator and not frozen ;-) -- posted by KITTENCAL

Pineapple Cloud Pie

A co-worker brought this in for myself and my wife to try. I was apprehensive at first (I don't usually like pies) but was completely won over on my first bite! I came home from work and started searching RZ for the recipe. To my surprise, no one had sent it in. I ended up finding similar ones on the site, but none that used the Rice Krispies as the crust. Personally, I think this made the pie better (and was why I loved it). I finally found the recipe on RiceKrispies.com and knew I had to submit it first thing! I have left the directions alone but substituted the brand names of the products my co-workers used (since I KNOW how AMAZING this is). I hope you enjoy this as much as I do!
I don't remember how I got the idea that I wanted to try a Grasshopper Pie. I don't drink, so it took a bit of searching the web to find a recipe without alcohol. One time I forgot to buy the Andes mints, so I used semi-sweet chocolate chips. Not as good. Might be okay if they were the itty-bitty kind.
These cute little pies look so impresssive and are perfect to wow guests at a dinner party. The sweet lemon filling is what makes these bite sized delights disapper in seconds. But don't be put off be their apperance.. they are incredibley easy to make. You can make the lemon filling and pie cases ahead of time but the meringue topping is best done no more than a few hours before serving. -- posted by Brittney_xo

Frozen Pineapple Pie

This was posted on the back of a store brand can of sweetened condensed milk. It sounds so good. Unfortunately, my daughter's allergic to pineapple, but it gives options for lime, lemon, cranberry, orange or tangerine juice. I think the combination of orange and chocolate could be delicious. The prep time is a guess and does not include freeze time.
Deep-Dish Apple Pie

From Cooks Illustrated: "We wanted mounds of tender, juicy apples in our deep-dish pie, but first we had to wade through half-baked apples, soupy fillings, and sodden crusts." Use a combination of tart and sweet apples for this pie. Good choices for tart are Granny Smiths, Empires, or Cortlands; for sweet, we recommend Golden Delicious, Jonagolds, or Braeburns. Wrap leftovers tightly in plastic wrap and store at room temperature for up to 24 hours. To reheat, remove the wrap and warm the pie in a 350-degree oven for 15 to 20 minutes.
