			<description>This recipe came from the nice mother of a guy I dated while living in Mexico. Very easy and flexible, can be adjusted with low-fat ingredients or lemons or oranges can be substituted for a different taste. I prefer mine frozen, though it is not originally intended to be. The Galletas Marias cookies can be found in the Hispanic section of my local supermarket. If you can't find them, a graham or other light cookie crust will work fine. This lovely, creamy Key Lime Pie is adapted from a Delia Smith recipe and I've added an optional meringue topping made from the left-over egg whites. The secret to this pie's velvety texture is not to overcook it. Otherwise it's simple to make and you can, of course, omit the meringue topping if time is an issue. 			<description>I have been told hundreds of times that this is the best lime pie my friends and aquaintances have ever had, and have had requests for it at every pot luck and party. I truly believe that the limes from my yard in PR are the reason. They have the most incredible flavor. But another factor is that the filling is slightly tart. The sugar content of most lime pies masks the lemony flavor. Your limes should be juicy. If not, increase the number of them. My limes (actually, &quot;limon&quot;) are around 1 1/2 inches in diameter and juicy. You can experiment with yours. Except for the crust which must be regular, not graham cracker (again too sweet), the preparation is simple and quick. The pie contains no eggs, and will not be stiff. If you prefer a stiffer pie, add an ingredient like &quot;Whip It&quot; to the cream. &amp;quot;Most of the key lime pie recipes circulating, including the recipe found on bottles of key lime juice, have a glaring error: They don't make enough filling to fit properly into a standard 9-inch graham crust pie shell. That's probably because most of the recipes are designed around one 14-ounce can of sweetened condensed milk. But come on, if we're going to make a beautifully thick key lime pie like the one served at Jimmy Buffet's Margaritaville restaurants we need to use something like 1 1/2 cans of sweetened condensed milk, or more accurately, two cups of the stuff. The clone recipe for the pie is a simple one that's for sure, with only four ingredients including the pie shell. But don't stop there. I'm also including a special way to make mango sauce by simply reducing a couple cans of Kern's mango juice. And there's a raspberry sauce recipe here that's made easily with frozen raspberries. 			<description>You can adjust this recipe to have even lower fat, or use all full-fat ingredients.  I use regular sugar and one can of full-fat condensed milk, but you could use Splenda and use non-fat milk for both cans.  You could also use egg substitute rather than whole eggs.  However, I wouldn't go any lower than reduced-fat sour cream, the non-fat is too thin and runny for a topping.  And do NOT attempt this with bottled lime juice - blech.

			<description>I needed to use up some fresh limes, and I wanted to make a pie.  This is the perfect balance between sweet and tangy.  You could probably get away with lime juice from your fridge too.  I cheated and used a Marie Callender's pre-made crust to cut down on time, but I do think the graham cracker crust would be even better.  Super simple, and you feel like you got a 2-for-1 deal because it makes 2 pies.  I found this recipe in America's Best Church Supper Recipes/Taste of Home from Diane Bell of Manvel, Texas.  Next time you have a potluck, make 2 pies and keep 1 at home to enjoy.  Loved this with fresh whipped cream...MMMM.  Waiting for the pie to chill is the hardest part of making this pie.
