Light Crustless Pumpkin Pie

This is a recipe for pumpkin pie which I have sort of concocted myself. It is absolutely delicious, and unbelievably lowfat/low-calorie. It's perfect for diabetics or those watching their weight, but it tastes so yummy that most people would love it! It is a bit spicy, so if you don't like spices very much, leave out the cloves. -- posted by hannahactually

Sugar Free Sweet Potato Custard/Pie Filling II

In my Sugar free pumpkin custard, I used Equal sugar substitute but I find that Splenda works better. This recipe was modified from Splenda's website, www.splenda.com of pumpkin pie. I used sweet potatoes and omitted the vanilla extract. Easy dessert for two. I used a creme brulee dish to bake this delicious, guilt free dessert. Substitute with pumpkin if desired -- posted by dcwang wang

Pineapple Cream Pie (Diabetic)

This wonderful pie is just too good for words! I think it's the sour cream that adds so much richness without overpowering. I got this recipe from a junior high school cook I work with. She brought this pie to a get together and I JUST HAD to have the recipe! So smooth, creamy and sweet, it does not taste diabetic!
Fruit Cocktail Chiffon Pie

This is a yummy, fluffy and easy pie to prepare. Made with basic ingredients that can be found in any mom and pop grocery store. Each serving is only 221 calories. The diabetic exchanges are: 1 Starch, 1 Fruit and 1 Fat. I'm posting it as written, but I use reduced fat graham cracker crust, and fat free Cool Whip. The nutritional inforamtion is for the pie as posted, not with my changes.
Teet Bush's Dutch Apple Pie (Diabetic)

Teet is what we call my "nother mother" Marline's mom and have been for years (a nickname given by her dad, I think - they all have nicknames). It's soo good as apples are one of my favorite fruits just about anyway you fix 'em. This one is simple and quick (Splenda change by me for my diet) and is great served with vanilla or cinnamon ice cream.
Darned Near Sugar Free No-Bake Pies

Okay, the no-bake is misleading, as you do have to bake the pie crust, but this is so trouble-free, and tastes so darned good. It's decadence for a diabetic, and a special treat for those special events. This is being posted for the 4th of July [hopefully], but you can substitute any fruit topping you wish for this recipe. I've used fresh diced cherries, orange slices [blended in 1 box sugar free orange gelatin into the top mixture for this], lemon [same as oranges], pears [used lime with this], etc. Use your imagination and let the fruit complement the day. If you aren't concerned with sugar/carbs, try Comstock brand pie fillings on top! -- posted by Pagan

Apple Pie Filling

I couple this with 1 quantity of my shortcrust pastry recipe #177343, will give instructions as a note at the end of the filling recipe. Times will not include for making the pie. I put this one by my dietician and she's o'kayed it for diabetics as the sugar is very minimal over one slice. Please note I use granny smith apples and the end result is a tarty tasting filling and not sweet. -- posted by I'mPat

Crustless Apple Pie

I can't make decent pie crust. So I make my pies crustless in a casserole dish instead. When I lived in Massachusetts, where apples are in great abundance every fall, I'd take this to church potlucks where half a dozen heart patients would see to it that I took home an empty, washed plate. They'd missed pie on their low-fat, low-sugar diets. A very controlled portion of real butter, and the natural sweetness of a good apple, make this dessert rich enough to satisfy. -- posted by 3KillerBs

YOU WON’T BELIEVE THIS!!!!!
I am a diabetic. This is amazing. You will love this lemon pie. Works very well in individual tarts too. Bite sized heaven to serve to guests. I hope you try this. It is low fat, low calorie and low sugar. I find that using both the Splenda and NutraSweet together is cheaper. Do not add the sweeteners until the thickened water is at full bloom and OFF the stove. High heat kills NutraSweets sweetening power. -- posted by MUSEconnie

Wonderful flavor with less calories! Crunchy, tasty pecans in a maple flavored filling. Great for a diabetic, those on a low sugar diet or for someone that just wants to watch their calories. Travels well to a potluck dinner.
Banana Coconut No-Cream Pie

A healthier, yet still delicious, variation to the fat and sugar loaded typical pie. This pie freezes well, and the longer it's left in the fridge before eating, the softer and better the crust tastes. I used extra coconut and banana chips to decorate the pie. I think the package of tofu was around 13 oz...I used the lite version. Cooking time is refrigeration time. -- posted by analog kid

Caramel Apple Crisp

Recipe from Pillsbury. Baking apples are best. I would use something like Granny Smith, Cortlands, Jonathans, Empires, Yellow Delicious, Honey Crisp, Ida Reds or Winesap (Winesap are my favorite and are usually found late season during October). I would avoid such apples as Red Delicious or Macintosh. They are great for eating but fall apart when cooked. And one of my secrets is to make a blend of baking apples, so the flavors are more well rounded and less one dimensional. Some apples, such as the Granny Smith, have that nice bite to them but are short on sweetness other apples have and aren't that great by themselves. -- posted by Sue L
