I think this is a wonderful coconut cream pie recipe. I got it out of the Luby's Cafeteria 50th Anniversary cookbook. I am posting it in response to a recipe request. Coconut lovers will love this rich, creamy pie. I don't have a clue as to the prep time. I did not include baking the pie crust in the cook time. -- posted by Julie in TX

Buco (young Coconut) Pie

A Philippine dessert. Buco is the tender young coconut meat that can be scraped from the inside of the coconut shell with a spoon. We were able to taste buco in the Philippines, along with the liquid from the coconut (coconut water). Together they are used in this recipe, which I am posting in reply to a request. The recipe is from The Complete Guide to Baking, The Best of the Maya Kitchen, Maya Kitchen Culinary Arts Center, Makati City, 1991. You will need two to three young coconuts for the 2 cups buco. -- posted by mianbao

Decadent Banana Cream Pie With Coconut Crust

This is my very own creation--one that I'm very proud of. What's different about it? How about a silken, creamy texture and a little extra kick?! I got this recipe from a lady at a Strawberry festival, if you like coconut and strawberries..you will love this.
Coconut Cream Pie

This pie is my husband's all time favorite dessert. It takes some time to make but it is worth the effort as the taste is heavenly. I like to cook the pudding mixture and chill it before putting in the pie shell. Just before serving I assemble the pie by filling it with the pudding mixture and then whipping the whipped cream. This prevents the pie crust from becoming soggy. The result is a luciously creamy pie with a crisp flaky crust. Yummy!! Note: Prep time doesn't include the 3-4 hour chilling time. -- posted by Delish

I have altered the recipe to cook in the microwave, and have included stove top directions also.

Every time I take this to a potluck, I have to give out recipes--so I thought I would just refer them here!

Cream Pie (Chocolate, Coconut, and Banana Variations)

Hands down, the BEST cream pie recipe I've ever tasted! It was passed down from my mom, who got it from a neighbour while living briefly in Los Angeles way back in 1969. The chocolate variation has been the universal birthday 'cake' in my family for almost as long as I can remember. I've adapted it to be more microwave friendly and even less time-consuming than the original. (Cooking time is cooling time) In case you don't have a microwave or just want to try this on the stovetop, see my cousin CrystalB's Recipe#108268 for the method. -- posted by Swan Valley Tammi

Coconut Custard Pie, Impossible-Style

I call this "impossible-style" because although it makes its own crust as it bakes as all the traditional "impossible" pies do, it does not use commercial biscuit baking mix. Instead it uses fresh, scratch ingredients, and that, along with the fact that you are not adding all those chemicals the mixes contain,is what I think gives this pie such a good flavor. It is one of my favorite desserts, and I always get really nice compliments every time I serve it.

This recipe fits perfectly into my 10-inch quiche pan, but I often halve the ingredients (except for the baking powder which I keep at 1/2 tsp.) and bake it in a 8 or 9 inch pie pan instead. The results are just as good. Hope you enjoy it. -- posted by Catwhispers

Royer's Cafe Buttermilk Pie

To DIE for! Now don't count your chickens before they are hatched. You may think, Buttermilk Pie? Trust me, it is AWESOME! The base recipe for this Buttermilk pie is from the Royers Cafe Cookbook. Their pies are now trademarked and they are NOT giving away any secrets that I am aware of! They now have another Buttermilk pie that has chocolate chips and pecans in it and has been known to send people over the edge! I am not sure how much they add to theirs BUT this is how much I have found works nicely. People come from all over just to visit this cafe and eat some pie. Royer's is a very well known little restaurant in Round Top which is just down the road from my hometown of Carmine. Both towns are VERY tiny towns that together MIGHT have a pop. of 200. If you are ever around this neck of the woods make sure you stop in and have some pie. Bud is almost always at the door ready to pick on you and make you feel right at home! Royers has even been seen on Food Network's, Road Tasted! Don't fret though, if you can't come to Texas, Texas can come to you! Royers ships their pies all over!
Okinawan Purple Sweet Potato Pie With Haupia Topping

The Okinawan sweet potato is a very special potato. It doesn't look like much from the outside (<a href="http://labofedibles.wordpress.com/2007/12/13/the-ugly-duckling-okinawan-purple-sweet-potato/">This site</a> calls it the ugly ducking of potatoes), but it is one beautiful and delicious spud!
<p>
This pie is a mixture of recipes from <a href="http://onokinegrindz.typepad.com/ono_kine_grindz/2004/10/okinawan_sweet_.html">Reid at Ono Kine Grindz </a> and my family's special shortbread recipe. <p>

I would not use any other potato for this recipe. It IS labor intensive, but the pay off is so worth it! This should be a smooth, rich, mouth-watering treat. People always ask me to make this for them.<p>

Triple Threat Coconut Cream Pie

We're in love with Tom Douglas' Coconut Cream Pie from Dahlia Bakery here in Seattle, but at $35 a pie plus a $5 deposit for the plate--I knew I had to come up with my own. I watched a demo of his on the local public television website, but still felt I needed to add my own touch. I'm proud to say it's a winner! Take that, Mr. Douglas. . . .

One note: I would highly recommend you follow the instructions for a great pie crust below, for optimal crispiness and flavor. Otherwise, you can roll out a store-bought dough, and just before rolling it out, sprinkle the coconut on top and roll it in. Will be more susceptible to burning, but should be okay if you watch it close. I always make a big batch of my All Butter Pie Pastry, recipe #239831, and keep it in the freezer for easy prep. I've rolled the coconut into the prepared, thawed dough with no problem. -- posted by Battle in Seattle
