German Chocolate Pie

This is such a wonderfully tasty pie that is so simple to make and it pretty much no fail. It is made with pecans, but I actually prefer walnuts. There is just something about chocolate and walnuts. Yummy! Oh, the recipe comes from my all time favorite cookbook-Virginia Hospitality. I hope you will enjoy. -- posted by beth

Bountiful Hot Fudge Sundae Pie

I've made this pie several times over the past twenty years and everyone always raves about it. It's especially good in the hot summer months after a BBQ or cookout. It's originally from an August 1981 issue of Bon Appetit magazine in a feature entitled "Cool Desserts". I've used both the Oreo crumbs in the box or the sleeve of chocolate wafer cookies by Nabisco and crush them in my processor -- posted by Leslie in Texas

Chocolate Chess Pie

This is yummy! Some people would call this Chocolate Fudge pie. I found this recipe in a friend's cookbook but I can't remember the name of the cookbook. Make sure you do NOT use a deep dish pie shell. Also, the recipe calls for an unbaked pie shell but I do bake it just a little and push the bubbles back down before I put the pie mix in it. I would highly recommend doubling this recipe, the frozen pie shells come in twos anyways. I am posting in case I lose my paper copy :) -- posted by cburke11616

Mutti's Mousse

This is the mousse recipe my grandmother (Mutti) would make. It's excellent as a mousse or even as a pie filler. Just pour it into a pre-cooked pie crust for an amazing chocolate pie.

The original recipe calls for rum, but I prefer to use 1-2 tablespoons of vanilla extract instead.

Better chocolate yields better results, so buy your favorite or chop up a quality bar of chocolate rather than using the cheap stuff (unless the cheap stuff IS the good stuff!). Also, you can mix dark and semi-sweet for a richer, darker mousse.

After making this recipe many times I find that it pays to have everything ready to go rather than strictly moving from step to step. If you can manage without burning the milk, whip the cream while waiting for milk to boil (and for the ice to melt in the blender if you need more time). If you don't do it all serially, this takes very little time and effort to make for how well received it always is! -- posted by Chef #750804

Chocolate French Silk Pie (Copycat Bakers Square's French Silk)

My b/f loooooooves Bakers Square French Silk pie. However, the chain has closed all of its stores in Southern California. A few Valentines days ago I tried the recipe that calls for Knox Gelatin and buttermilk - that was a disaster. This recipe which I found on bigoven.com is the closest to perfection as I have been able to find. Making sure everything is well mixed is the secret to a nice high fuffy pie. -- posted by Aussie-In-California

Chocolate Mascarpone Pie

A friend brought this to a dinner party, and it was so wonderful I had to have the recipe. If I make it again, I might strain the orange marmalade first, as I feel it doesn't really fit the texture of the rest of the pie. If you use it as is, be prepared for a very creamy pie with a layer of small orange chunks in between the filling and the crust. For the chocolate cookie wafers, you could either use Nabisco Famous cookie wafers, or Oreos taken apart with the filling scraped out. All substitutions listed in the recipe were suggested by the original chef. -- posted by Vicki in Houston, TX
