Healthy Persimmon Cookies Recipe

This is a modified recipe of my favorite desert: persimmon cookies.
I lowered its fat and sugar content and I increased its fiber, making these cookies an ideal breakfast or snack meal for people who want to enjoy great cookies and still want to live by the rules of a healthy diet.

Possible substitutions:
Instead of persimmon pulp you can use Organic reduced-sugar Apricot preserve.
Instead of sour cream use buttermilk.
You can try eliminating the whole grain flour altogether.

Once you'll try them you'll get hooked! -- posted by Chef #940686

These cookies are like fudgy brownies -- slightly soft when done. They won't feel set if you gently tap them, but the tops will look dry. Semisweet chocolate chips can be substituted for the dark chips.
Easy Moist Banana Bars

I found another version of this recipe online and changed it to match the ingredients I had on hand and what sounded good to me. This made a moist, tasty cookie bar that's a nice alternative to chocolate brownies. It is also another good use of those badly overripe bananas. I liked this because it had a mild banana flavor which didn't overwhelm the bars. These bars need no frosting...they are the perfect sweetness without it. -- posted by CarrolJ

Cherry and Chocolate Brownies

A decadent delight I found in a March 2005 issue of 'Fresh' magazine. This was a reader's recipe from Sharon Johnston, Mount Crosby, Queensland (Australia). There is a photograph on the same page as the recipe, and Sharon looks about 10 years old. The page bore the heading 'A slice of heaven.' I considered adding nuts to the recipe, but decided to leave it exactly as it was. Nuts would be the obvious addition here, possibly instead of the coconut. Or perhaps 1/2 cup of coconut and 1/2 cup chopped macadamia nuts. Hope you enjoy Sharon's slices of heaven! -- posted by bluemoon downunder

I have some friends that are allergic chocolate and carob is so much healthier for you that this is a good alternative "fudge." It's not vegan only because of the honey which I believe is a must for the fantastic taste.
Extra Rich Chocolate Peanut Butter Oatmeal No Bake Cookies

With all the variations on RecipeZaar I was surprised when I didn't find this one that a friend gave me a few years ago.
Pb 'n Oat Chip Cookies

The texture of these lightened up cookies is what I love most about them, of course the mini-chocolate chips comes in a close second! While still warm, the peanut butter taste is very light - although it really comes through when cookies are completely cooled. Recipe is easily doubled or tripled. -- posted by Brooke the Cook in WI

Swag Bars (Chocolate & Peanut Butter Bars)

This recipe was in the Jan/Feb 2009 issue of Cooking Light magazine. It was in their "Lighten Up" section - where a reader can submit a favorite recipe and COoking Light will make it healthier. This was very tasty and the kids LOVED them. Next time I might try and sub honey or brown rice syrup for the HFCS. I also increased the chocolate a teeny bit and spread it over the bars instead of drizzling it. -- posted by dukeswalker

Chocolate and Cherry Brownies

These heavenly brownies are quick, easy and totally indulgent. They are perfect at tea-time or equally delicious served with crème fraîche as a treat after lunch or dinner with friends. Make sure you use the correct size baking or roasting tin and take care not to overcook them. As a rule, when you start to smell them they are usually close to being done: you are better off removing them too soon and putting them back, which does them no harm at all! Try adding nuts or other dried fruits as an alternative to the cherries, or make plain chocolate brownies without any extras at all. -- posted by English_Rose

Chocolate Peanut Butter Blondies

Chocolate-y peanut-buttery goodness! These bar cookies will definitely satisfy your sweet tooth! I found this recipe in America's Test Kitchen's Family Baking Book. I wanted to make their Recipe #343983 but didn't have unsweetened chocolate on hand, so I decided to try something else for my chocolate-peanut butter fix. The Test Kitchen suggests letting the blondies cool for 2 hours before removing from the pan. Ha ha - as if anybody could wait that long! They are also most delicious when slightly warm. So I wait only 1 hour, just enough time for them to cool and firm up a bit before removing from the pan. -- posted by appleydapply

Cornflake Chocky Rocks (Chocolate Chip Cookies

My mum always cooked these delicious cookies when I was a child. I believe the recipe was originally published by Kellog's on the back of the cornflake cereal box (in Australia).
Greeny's Chewy Chocolate Chip Cookies

I will admit, this is similar to both the Hershey's and the Ghirardelli cookie recipes - the back of the chip bags are my best sources of inspiration. :) However, I live at high altitude, so I have changed it up a bit for that and for my family/our friends' tastes. I find that they never flatten (once out of the oven) and they stay chewy for several days. They also freeze well. My store-bought chocolate chip cookie-loving nephew even asked if I could make more of these once they had all been eaten. That was awesome. I have substituted Splenda for half of the granulated sugar portion, and it works well, but I think any more than that would compromise the texture too much. -- posted by Greeny4444

Peanut Butter Quickies

This is a very easy 4 ingredient delicious soft cookie recipe. I have had this recipe for so long, that I don't remember where I got it.

Put Graham Crackers in zip top plastic bag & crush until fine with rolling pin, or use food processor.

I used a # 30 scoop & got 40 cookies.

Make sure cookies are cooled completely or when you put them up for storage they will stick together.

They taste better if stored overnight for flavors to blend.

I used Cinnamon Grahams and recipe turned out very good. -- posted by SadAnna

Campfire S'mores (Aka Robinson Crusoes)

If you like regular S'mores, you're going to LOVE these! Start with chocolate graham crackers, smear on some creamy peanut butter, add the chocolate candy pieces, the melty marshmallow; then top with the other square of graham cracker. THE TRICK to making these perfectly is being patient while the marshmallow is roasting....don't stick it into the fire, twirl it slowly over the warmth, so that it starts to swell up. That's your signal that the inside is getting all soft and smooshy--just right for perfect s'mores. I first made these back in the early 90's when taking 10 girls on a church youth camp-out in eastern Washington State. We cooked all our meals over the open-fire (no campstove!!) including chocolate chip pancakes MADE FROM SCRATCH, pioneer hotdogs (yum, yum!) and caramel apples roasted in the coals. I guess I need to post those recipes too. After all...it's summer-time and people are camping!!! -- posted by Debber

British Fig Rolls - Almost Better Than Shop Bought!

This is a recipe I found many years ago for authentic Fig Rolls, and they are almost better than the shop bought variety, much though I love the commercial ones! Try to roll out the pastry as thinly as possible, other than that, this recipe is a breeze to make. Fig rolls are a much-loved "biscuit" from my childhood days and I make them whenever I can as I now live in France, as we cannot get them here. Fig rolls are great for a mid-morning snack with a cuppa as well as being ideal for school lunchboxes, picnics, gifts and afternoon tea. (I have posted this recipe on Zaar especially for Lalaloula, who asked about a fig roll recipe in the British forum.) -- posted by French Tart

I found this recipe in a magazine i got in a pharmacy in Örebro, Sweden called "Apoteket". I reminds me of our great holiday me and DH had in summer 2009.
Note: You can use 1 cup chopped walnuts only or use a mixture of other nuts and/or seeds. I also like pumpkin seeds or sunflourseeds or a combination.
Note#2: You can substitute butter and eggs by 1 cup of whey and a dash of milk for a super healthy but though delightful version. -- posted by Iceland

Bake Sale Time: Rice Krispies W/ Malted Milk Ball Bars

Here's one to add to your bake sale repertoire--and they'll be just enough different [but still the same thing] to get the kids curious, and good enough that they'll sell like "hot cakes!" Save a couple for the home-folks, because you won't be bringing any home when you take these to the potluck or family reunion picnic!
Yum Yum Yo Yo Biscuits

Adapted from a recipe I found on the Simply Great Meals website. Faced a dilemma in settling on a name for these. They are n-e-v-e-r called Yo Yo Biscuits, just Yo Yos... the Simply Great Meals website called them Yo Yo's, but the apostrophe makes no sense, and without the apostrophe the name looks like Yo YOS - which sounds silly and is NOT what they are known as! Conversions: 150g = just under 5oz; 60g = 2oz. Personally, I'd prefer to omit the food coloring. Not anti-pink, just prefer to avoid unnecessary chemicals. Seems to me that even a 1/2 teaspoon of cherry juice would achieve the pinkness if that's what you're after. The slivered almonds are not generally found in a traditional Yo Yo: I've added those. I'm of the belief that yummy nut never goes astray, be it in sweet or savoury dishes. -- posted by bluemoon downunder

The conversions you may need: 125g = 4oz; 400g = just under 13oz; 250g = 8oz. Marie biscuits are a plain sweet biscuit. You could also use Granita biscuits or shortbreads.
Dark Chocolate and Sangiovese Pear Brownies

This yummy and super-rich chocolate brownie recipe has been adapted from a recipe by Maggie Beer, a revered Australian chef and author of many cookbooks. If Sangiovese Verjuice is not available use any Verjuice; and you could use glacé cumquat, ginger - or whatever glacé fruit you like instead of the pear - and you could use a mixture of fruit and nuts. I'd recommend macadamia nuts. Some conversions: 300g = approximately 91/2 ounces; 250g = 8 ounces; 60g = 2 ounces; 40g = 11/3 ounces. For the BEST results, do use top quality chocolate, such as Lindt 70% cocoa. Recently, I tried some German chocolate that was 85% cocoa... that was probably too rich and too bitter for most tastes, so rich in fact that you'd find that much as they enjoyed it people wouldn't be coming back for a second and third brownie - so your brownies would last longer! -- posted by bluemoon downunder

I really like the seasonings--cinnamon, ginger, and cloves. It makes a nice twist on a classic treat. Next time I'll skip the shortening and use real butter (just a personal preference). I'd also dip my fork in white sugar and press them in a criss cross pattern after they come out of the oven instead of before.
Mayonnaise Biscuits (Cookies)

I got this recipe from my niece who made them in her first cookery class at school. Very simple and unusual. -- posted by Coasty

Whole Wheat Applesauce Cookies

My favorite cookie recipe! These are moist, chewy and delicious. Because most of the sweetness and the moisture comes from the applesauce rather than fat or sugar, not to mention the whole-wheat flour, I don't feel guilty about sneaking one or two of these for breakfast! -- posted by CorianneW

Coconut, Cranberry, White Chocolate Oatmeal Cookies

I saw someone else with somewhat of a similar recipe and I tweaked everything. It's much healthier than the recipe I looked at originally. Make sure to take out the cookies immediately when they are ready. If they stay in the oven, they will quickly become too hard. -- posted by Linh #2
