It is a great accompaniment to a picnic, backyard bbq or anywhere you need multiple dishes that are easy to make and go well with a variety of foods. Super with chicken or sandwiches. If you substitute tri-color pasta it makes it even more colorful when matched with the fresh vegetables.  
You can add onions for more flavor but it is good without too.

			<description>This is a very good potato salad from the folks at America's Test Kitchen.  I must confess that I love dill pickles and prefer that flavor to sweet pickle relish.  I wound up adding a couple dill pickles and some dill pickle juice to this recipe (just a personal preference) and quite a few more eggs.  Here are the tips from Cook's Illustrated:  If you only have celery salt available, use the same amount but omit the salt in the dressing.  When testing potatoes for doneness taste a piece.  If you overcook they will become mealy and break apart.  The potatoes must be just warm or even fully cooled when you add the dressing.  If you find the potato salad a little dry for your liking, add up to 2 tablespoons more mayonnaise. 			<description>Delicious potato salad recipe that I made up.  I always make it for any BBQs or summer parties we have at home and there is never any left.  Also make it regularly to eat for lunches and it always goes down well with my friends who sometimes ask me to make extra portions so they can have it for lunch at work too :-)  A 1kg bag of potatoes makes enough for 4-8 portions depending on whether you are eating it as a full meal e.g. 4 portions if eating as a meal in itself, or 8 portions if serving as a side at a BBQ etc.

It can be eaten straight away but it tastes better the longer it's left for the flavours to mature.  I usually leave it at least overnight before eating but sometimes even longer, up to a few days and it tastes better the longer you leave it :-)
