Grilled Zucchini, Onions, and Red Peppers

This is a great recipe to use up all those vegetables that are coming in from the garden about now. Plus, I love to grill, and this just makes it easier to make a complete meal on the grill. These are also good in a pita with garlic mayo or tzatziki sauce! **Prep time does not include the time to get the grill ready for grilling! -- posted by breezermom

The Best Bloody Mary

I will spare you the details - this my friend, Judy & her husband, Ed want to use this as one of the mixed drinks for their shindig - they tried it and loved it and even though it seems like a lot of work - they say it is worth it. Bon Appetit Magazine, September 2009 Edition. "The Bloody Mary, to quote cocktail guru Dale DeGroff, is like "backyard barbecue: Everyone thinks his is the best." We just might be able to settle that debate. At Holeman and Finch Public House in Atlanta, co-owners and bartenders Greg Best and Andrew Minchow serve the definitive artisanal Bloody Mary using surprise ingredients." Cooling & chilling times have already been included. -- posted by Manami

Felfel B'tomatish - Algerian Pepper & Tomato Salad

This is a classic Algerian 'salad' dish. You can either grill the tomatoes & peppers over an open flame, deep fry them or roast them. My family loves this recipe & we always mop it up with fresh bread! You can also serve this as part of a mezze selection. The vinegar is of course optional but it acts as a flavour enhancer so I do recommend at least trying a little of the salad with a few drops of vinegar on! -- posted by Um Safia

Easy Oven Roasted Vegetables

This recipe was a quick side dish to my Tuna Casserole. I felt like I needed more veggies on my plate, so I raided my fridge for whatever I could find. The baby bella mushrooms I used added a nice meaty texture to the dish, and absorbed the flavour of the dressing nicely. Use whatever vegetables you have on hand; zucchini, carrots, and even corn would make a nice addition. This fast side dish recipe could also be used over pasta or rice for a complete meal. -- posted by BrittanyS

Pineapple Green Chile Marmalade

Found this in the New Mexico State University's Cooperative Extension Service Guide E-326 (Home Canned Sweet Spreads Made
with Green Chile) http://aces.nmsu.edu/pubs/_e/E-326.pdf Am up to my hips in tomatoes now so the peppers can wait a bit but I did not want to lose this gem. Sounds like it would be marvelous alongside a bit of crispy roast pork belly or high temp roasted duck when the cold rain is pounding down outside. -- posted by Buster's friend

Acadia's Ratatouille

We love ratatouille! I usually have an abundance of zucchini and yellow squash in my garden, however, this year since we received so much rain the zucchini & squash crop was poor. So I have been force to buy my ingredients. For my family's taste, I omit the red pepper flakes and salt as the canned tomatoes have enough salt in them, however if you choose to use fresh tomatoes I would add the salt. -- posted by Acadia

Bulgarian Vegetarian Mish Mash

Great vegetarian dish. Very simple to make with just a few ingredients. Could be served either as a main course or as a side dish. You can use 2 yellow (instead of green) and 2 red bell peppers if you prefer. If you like feta, you could use more. I personally, love feta and double the amounts for the feta. This super cheese dish goes great with a crispy crust bread like ciabatta. Enjoy! -- posted by Nadia Melkowits

Corn and Cheddar Souffle

This is from the September 2008 Homemakers magazine. Our family has always enjoyed souffle and this was a twist on our usual. I really like the fresh corn but you could likely substitute frozen or canned in the off-season. Goes great with in-season asparagus or green beans, and fresh bread.
Cabbage Salad

This cabbage salad is very flexible, and very tasty! It's one of those salads where you can't stay out of it! You can add just about any vegetable you'd like. There are many variations of this recipe. I got this version from a coworker. This recipe is vegetarian, but be sure you read the ingredients on your Ramen Noodles. Not all oriental-flavored noodles are vegetarian. For non-vegetarians, I've heard of adding chicken instead of the tofu. Enjoy! -- posted by Chef #585105

Thai Sweet Chili Sauce for Spring Rolls or Fried Tofu

Really good on any Thai food or whatever you need a dipping sauce for. Even chicken strips or ... whatevs. MMMM... o la la Your jalapeno mileage may vary, so adjust the heat accordingly. Keep in mind, however, that the heat is the strongest the day you make the sauce and starts to dissipate gradually the longer it is kept in the refrigerator. I usually start off with more pepper than I would like and let the sauce sit in the fridge for a couple of days before I use it. This sauce keeps for a long time, and after a couple of weeks, you can't even taste the pepper. -- posted by College Girl

I used red raspberries, red bells, and apple and pomegranate juice to bring more red to this so no need for food coloring.

El Torito Restaurant's Caesar salad has been a popular favorite for decades; I obtained the recipe in 1994 when it was published in the Los Angeles Times and have made it many times since. The recipe contains some Mexican ingredients such as pepitas, which are roasted pumpkin seeds, avilable at Trader Joes, as well as at Mexican markets. The cotija cheese ia a Mexican grating cheese.
This wonderful appetizer, when served with warm pita, marinated strips of red pepper & tasty olives, can be a meal unto itself... or tucked into a pita with the aforementioned for lunch, a very nice lunch. Per the Times: "This Turkish recipe is from Paula Wolfert's upcoming book, "The Slow Mediterranean Kitchen," which will be published in October by Wiley. Wolfert notes that the slower the grilling, the smokier the flavor of the eggplant. She thanks Dr. Ayse Baysal for sharing the recipe."
Note: When large eggplants are roasted whole, you may notice black juices seeping out of the skin. If this happens, immediately slit the eggplant on one side and drain on a slanted board in the sink. -- posted by Buster's friend

Leek and Pepper Omelette

I found this recipe in Janet Wright's book "The top 100 health tips", published by Lifetime Distributers, Castle Hill, Australia.
Janet says "Eating the right meal within an hour or two after excercise could make the biggest difference you've noticed yet. That's the time when your body needs - and most effectively uses - food to turn your effort into stronger muscles and increased energy levels. It's also when you burn fat most effectively. Eggs are a concentrated source of muscle-building amino acids and other body-building nutrients. They're also rich in vitamin K, which helps to heal bruises and other minor sports injuries. This vitamin works by ensuring that blood is able to clot normally, so it could also reduce the danger of blood clots in arteries."
The original recipe called for groundnut oil, but I think butter would work just fine - or any other oil you have on hand.
This would make a nice breakfast for an extremely hungry person, or could be shared among a few people. If you're just making it for yourself, you might want to halve it.
I haven't tried this recipe yet. -- posted by TALIA #3

Classic Chili Rellenos With Anaheim Peppers

Anaheim's are very popular in Southwestern US Cuisine. Also called "New Mexican Chile". These were developed by Dr. Fabian Garcia in New Mexico about 100 yrs ago who was seeking a chile pepper that was bigger, fleshier, and milder.

They got the name "Anaheim" when a farmer named Emilio Ortega brought these seeds to the Anaheim area in the early 1900's. This chile can be roasted and peeled and used in recipes or stuffed to make chile rellenos just as the Poblano Chile.
Classic Chili Poblano Rellenos

I love chili rellenos and with poblano chilies, they are super good! I hope you enjoy this classic recipe, using poblano chilies!
This chile pepper is often mislabeled 'Pasilla', which is a different pepper entirely. It is one of the most popular chiles in Mexico and has won the appreciation of many a chef worldwide because of the superior flavor it has over regular bell peppers.

They have a tough outer skin that usually requires roasting and peeling before use. These very large chile peppers are most popular in chiles rellenos recipes, but cooking with these as a substitute for bell peppers in any recipe will enhance the flavor. -- posted by Sharon123

Habanero Mango Hot Sauce

I blend fresh organic carrots, mango, onions, garlic, and a hint of lime juice with the Habanero. The result is a pepper sauce that harmonizes heat and flavor without the overpowering pungency found in traditional vinegar-based hot sauces. Creating a spicy but not overpowering sauce that allows you to spice your food without drowning out the original flavor.
The capsaicin is not only hot on the tongue, it is brutal on the eyes or in cuts on your fingers. When preparing peppers you can wear rubber gloves to protect your hands and keep your hands clean. capsaicin has a way of staying on your hands even after washing. Safety glasses will help you avoid splashes or touching your eyes while cutting and cleaning peppers.
The steam from boiling vinegar is very strong. Avoid breathing it.
Cooking your hot sauce will help blend the flavors together, break down pieces of solid ingredients and pasteurize the sauce. It is an important step which should only be skipped if the sauce will be used up completely within 1 week.
Acorn Squash With Citrus and Chile

I really enjoy acorn squash and can't wait until the fall crop is ready each year. Zaar has a ton of recipes with acorn squash stuffed with just about everything, but after an extensive search I couldn't find one similar to this one. I was surfing the 'net and found this recipe at the Care2 website @ http://www.care2.com/greenliving/acorn-squash-with-citrus-and-chile.html Care2 says this about recipe: Something magic happens when you roast an autumn squash—it transforms from a hard, grainy, starchy thing to a mellow, creamy, sweet miracle. Matching autumn squash with flavors like cinnamon and brown sugar is a natural; but we found a recipe that adds tart and spicy to the sweet taste of acorn squash, that is fresh and surprising but still warm and comforting. Why not switch things up a bit with this roasted acorn squash with chili and citrus! -- posted by SassiFras

Fire-Roasted Pepper Salsa

If you like hot food, this may be for you! I found this recipe on the Care2 website @ http://www.care2.com/greenliving/fire-roasted-pepper-salsa.html In 25 Techniques for Grilling (Harvard Common Press, 2009), author Ardie A. Davis makes a compelling case for this fire-roasted pepper salsa: it makes a great appetizer over cream cheese, a delicious side dish, or a complement to grilled foods. The trick to getting the peppers really fire roasted is to have the grill grate as close to the heat source as possible. On a charcoal grill, this means putting something like bricks, hardwood, or more charcoal in the bottom of your grill, so when you dump the coals in, they will sit higher, nearer the grill grate. -- posted by SassiFras

Creamy Quesadillas - With Guacamole

My favorite restaurant is Chipotle - hands down but I moved far away from it and now the closest is over 2 hours away. So this guacamole is my tribute to Chipotle's - it's not exact, but very close. This quesadilla is a nice light option for lunch when you are dieting.
Vegan Potatoes

A simple recipe for people who are vegetarian and/or transitioning to vegan. Theres not a lot of vegan recipes on here, so I decided to post it. It's something simple that's a good thing to have for lunch or even as a side dish. It gives a lot of nutrients and you really cant taste them in with the potatoes, for those of you who are picky eaters like me. I left his really open, I put in peppers and mushrooms, but this recipe is very easy to turn into a "Clear Your Kitchen Of Unwanted Or About To Spoil Veggies" recipe. And it's good because it's healthy, filling, and uses no meat and or animal products. Enjoy. -- posted by Mariah Me

Roasted Tomato Sauce

This is inspired by Janet and Greta's roasted tomatoe sauce they used on their canneloni show but I didn't have some of the ingredients they used so I improvised it. One pound of my tomatoes were heirloom tomatoes in various colors just cause I happened to have them on hand. The chicken broth was made from roasted chicken bones to give it a deeper flavor as well. -- posted by Ladymedic

White Bean Bisque With Red Pepper Swirl

I got this from 'Simple Vegetarian Pleasures' It is very good and even my kids (3 & 7) loved it. The red pepper swirl also makes a great dip. If you are useing canned beans use 3 - 15oz. cans. -- posted by sav_lee

Fettuccine With Spinach, Red Peppers and Smoked Cheese

this is a variation on a recipe I got from 'Simple Vegetarian Pleasures' you can combine all the ingredients into one bowl at the end but I don't like that the vegetables clump together so that one person gets spinach for supper and everyone else gets plain pasta. -- posted by sav_lee

Extreme Vegetable Goodness

Beyond good. Prepping the vegetables takes a while but then it's virtually hands-free with spectacular results. You'll be glad you made this. This will serve 8 as a side-dish, 4 or 5 as a main course. -- posted by evelyn/athens

Spicy Easy Corn Casserole (Without Egg!)

Needed to clear some cans out of my storage space. The result? A ridiculously simple casserole packed with flavor. Feel free to use your own spice mix or taco seasoning, I use Recipe #389616. Something like Green Giant Mexi-Corn would probably work nice in this but I worked with I had at hand. -- posted by the80srule
