Shrimp & Avocado Salad With Mango Dressing

In Middle Quarters, a village on the southern coast of Jamaica, roadside stands serve sweet shrimp simmered in peppery broth. Inspired by this, Bradford Thompson simmers shrimp in a fragrant broth made with lager, chile and fresh ginger, then serves them with avocado and a light mango dressing for a great salad. F&W Magazine, Recipe by Bradford Thompson, from: "Real Flavor of Jamaica: A Fast & Fabulous Road Trip, Pairing of the Day: June 2008. Didn't allow for chilling time. -- posted by Manami

Black Bean, Corn and Red Pepper Salad With Chile-Lime Dressing

This recipe was in the Seattle Times August 20, 2008. It's different from other black bean and corn salads I think because of the lime juice. When I made it, I used only one can of beans and that was plenty for us. I also used garlic salt instead of regular salt. This is a very good and refreshing salad that goes well with Mexican food. I think it would also be good with a couple of fresh, seeded, and minced jalapenos added. -- posted by Kendra*

Nuernberg Red Bell Pepper Salad

A simple red pepper makes a bright-colored and bright-flavored side salad usually served with grilled Bratwurst and Kartoffelsalat (potato salad) in Bavaria.
Avocado and Onion Salad

Lovely, simple recipe from www.avocadosalad.com; I haven't tried it yet, but I can just imagine how wonderful it will be next summer with homegrown tomatoes! Mmmmmm.... Also, while the salad says to toss the salad components and dressing, the picture shown was of a beautiful salad constructed of layers. So I'm modifying the instructions to make it as shown. If you're short on time or patience, just gently toss it all together, season with salt & pepper, and dish up. Times are estimates. -- posted by Halcyon Eve

Italian Chicken Salad

The best chicken salad ever.
Take a few hours to marinade but definitely worth the wait.
I would recommend doubling the chicken recipe because you will want to pick at it.
You can try different Italian dressing but the Kraft Tuscan House Italian taste the best with this recipe to me. -- posted by beeyouteful

Tuscan Bread Salad

Haven't tried this yet; clipped it from the local newspaper.
"Use a good-quality bread, and reduce the basil and celery leaves to taste if you wish. Chef Glen Manzer suggests using the tender celery leaves from the heart of the stalks. He likes this dish with a simple roast chicken and Chianti."
The bread for this salad can be seasoned and toasted before, if you wish. Other additions to the salad can be added, such as buffalo mozzarella, olives, cooked eggs, or poached tuna belly. -- posted by frozen_rain

Recipe by Jean-Georges Vongerichten for Food & Wine Magazine." Pairing of the Day, Jean-Georges Vongerichten's Easy Island Cooking" published January 2009.This cellophane-noodle salad, with creamy avocados, crunchy peanuts and a chile-honey dressing, is an excellent
showcase for Caribbean spiny lobsters. Also known as rock lobsters, they are sweet but can be slightly dense. This recipe uses Maine lobsters; they’re more tender than spiny lobsters—and just as delicious. :) -- posted by Manami

Singapore Cucumber Salad

A quick cool & refreshing use for the cucumbers coming out of the garden when gets hot. Just quarter & seed, then proceed with recipe if you don't have seedless cucumber or use 6 or 8 pickling cucumbers. Same with the peppers - use what you have - minis, cherries, any sweet pepper will work. Whatever you have, use it! Exotic but not too exotic - good foil for grilled fish or poultry, even BBQ'd pork. Found in The Seattle Times. Cook time is setting time. I plan to chill several hours before serving to wilt the cucumbers a little. -- posted by Buster's friend

Mexican Layered Salad

This sounds like a light, Mexican version of the classic Seven-Layered Salad. You could add black beans, chicken breast, or other protein to make it more filling, if you wanted to serve it as a main-course salad.
Light and Versatile Seafood Salad

I initially wanted to make a lower-calorie version of seafood salad (the kind that often goes on a sandwich), and then when I threw it together the first time just wanting to see how it would taste, did less chopping. With larger pieces, it's great as a stand-alone salad, and more finely chopped works as a dip or would go well with pasta. -- posted by Chef #1322378

Felfel B'tomatish - Algerian Pepper & Tomato Salad

This is a classic Algerian 'salad' dish. You can either grill the tomatoes & peppers over an open flame, deep fry them or roast them. My family loves this recipe & we always mop it up with fresh bread! You can also serve this as part of a mezze selection. The vinegar is of course optional but it acts as a flavour enhancer so I do recommend at least trying a little of the salad with a few drops of vinegar on! -- posted by Um Safia

Cabbage Salad

There are many variations of this recipe. I got this version from a coworker. This recipe is vegetarian, but be sure you read the ingredients on your Ramen Noodles. Not all oriental-flavored noodles are vegetarian. For non-vegetarians, I've heard of adding chicken instead of the tofu.
Andalouse French Fry / Burger Sauce

This is a fantastic sauce. It's similar to thousand island dressing although it uses fresh ingredients instead of a relish which gives it more of a gourmet twist. I put it on belgium frites, traditional french fries and hamburgers. I love it so much I've started keeping a jar in my fridge at all times. A good tip to finely blend all ingredients is to (carefully) use a cheese grater on the vegetables, that way you're using more of the juice from the vegetables. -- posted by OwlMonkey

This is a delicious recipe from Weight Watchers New Complete Cookbook.
The crunchy tortilla cups soak up the yummy dressing and become a treat on their own.
To make the tortilla cups use my Recipe #381215
The Weight Watchers cookbook calculates the calories to be 307. Zaars calculation is lower which would make the points value lower as well. I think the cooking spray might be counted in the calorie count by WW. -- posted by Dreamer in Ontario
