Andouille Sausage and Peppers Marinara

This is a "wow" recipe that I created last night. I had been wanting to try Andouille sausage and finally found it at a local grocery. It gives this dish just the right "kick" to spice up your dinner, though feel free to add some red pepper flakes if you really like it hot!
Idaho® Potato Pancakes/Roasted Corn & Poblano Peppers

Recipe courtesy Chef Harley French of the 5151 Cafe & Catering in Dallas, Tx. These quick & easy pancakes will be great with your favorite salsa. The estimated cost per serving is $1.00 Also a dollop of reduced-fat sour cream would be awesome with guacamole, of course - I know, it would raise the price slighly. ;) -- posted by Manami

Why not substitute your favorite Swiss cheese for the Gruyere to make it more cost effective. Also, most soft-ripened cheese can work in place of the Brie - just don't forget to remove the rind. This is oh-so good!!
Roasted Salmon With Peperonata and Balsamic Syrup

My brother made this for us the other night after finding this recipe in April 2009 Coastal Living magazine. The original recipe used Artic Char but we had a sockeye salmon that needed cooking. We have lived on the west coast, and have been eating salmon, all of our lives and this is one of the best recipes we have had. Although it looks long and complicated it really isn't and believe me the results are more than worth it. Preperation time includes the chopping of peppers and onions but is worth every knife stroke. The chopping and balsamic syrup reduction could all be done ahead. We used two large fillets which should have been enough for 8 people but the 4 of us ate it all! -- posted by southshore cook

(rub rosemary and basil in the palm of hand and add over all)
(Add cayenne pepper to add a lil heat to it.)

when cooking this dish you want to remember to keep the veggies nice and crsp when you eat it. -- posted by Lynn54

Classic Chili Rellenos With Anaheim Peppers

Anaheim's are very popular in Southwestern US Cuisine. Also called "New Mexican Chile". These were developed by Dr. Fabian Garcia in New Mexico about 100 yrs ago who was seeking a chile pepper that was bigger, fleshier, and milder.

They got the name "Anaheim" when a farmer named Emilio Ortega brought these seeds to the Anaheim area in the early 1900's. This chile can be roasted and peeled and used in recipes or stuffed to make chile rellenos just as the Poblano Chile.
Classic Chili Poblano Rellenos

I love chili rellenos and with poblano chilies, they are super good! I hope you enjoy this classic recipe, using poblano chilies!
This chile pepper is often mislabeled 'Pasilla', which is a different pepper entirely. It is one of the most popular chiles in Mexico and has won the appreciation of many a chef worldwide because of the superior flavor it has over regular bell peppers.

They have a tough outer skin that usually requires roasting and peeling before use. These very large chile peppers are most popular in chiles rellenos recipes, but cooking with these as a substitute for bell peppers in any recipe will enhance the flavor. -- posted by Sharon123

Acorn Squash With Citrus and Chile

I really enjoy acorn squash and can't wait until the fall crop is ready each year. Zaar has a ton of recipes with acorn squash stuffed with just about everything, but after an extensive search I couldn't find one similar to this one. I was surfing the 'net and found this recipe at the Care2 website @ http://www.care2.com/greenliving/acorn-squash-with-citrus-and-chile.html Care2 says this about recipe: Something magic happens when you roast an autumn squash—it transforms from a hard, grainy, starchy thing to a mellow, creamy, sweet miracle. Matching autumn squash with flavors like cinnamon and brown sugar is a natural; but we found a recipe that adds tart and spicy to the sweet taste of acorn squash, that is fresh and surprising but still warm and comforting. Why not switch things up a bit with this roasted acorn squash with chili and citrus! -- posted by SassiFras

Mushroom Lasagna

I had recieved this recipe from Curves where I used to work out. This was from their meal plan that is part of their program. This is a mushroom lover's recipe. My husband asks for it all the time. This is a very low carb meal. For meat I usually use the Johnsonville Mild Italian sausage. I also used the presliced mushrooms to save on my fingers. The gal from curves who gave me this recipe uses Wahoo Chili seasoning and Jimmy Dean spicy sausage. -- posted by JensKitchen

I was trying to come up with something quick and inexpensive to cook for my family but something with a ton of flavor. I just threw this together. My family loves this pizza. Better than anything you can buy. This is my family's favorite. But you can really make it with whatever you have around the house. I use mango salsa for a little fruit taste but you can use any kind of salsa, tomatoes, even spaghetti sauce and it will still taste great. -- posted by Chef #553668

Baked Bacalhau / Salted Cod

I order this in our favorite Portuguese restaurant. I didn't see any on zaar close to what we enjoy. Bacalhau is a staple of the Portuguese cuisine. This dish has sliced garlic, onions, peppers, potatoes and olives made with lots of olive oil. I used red, yellow and red bell peppers for vibrant color and sweetness but if you prefer green go for it. -- posted by ~Rita~

Creamy Quesadillas - With Guacamole

My favorite restaurant is Chipotle - hands down but I moved far away from it and now the closest is over 2 hours away. So this guacamole is my tribute to Chipotle's - it's not exact, but very close. This quesadilla is a nice light option for lunch when you are dieting. [Remember avocados are high in fat/calories, but very beneficial to your health!] By my calculations, each serving is around 300 calories.
Healthy Un-Stuffed Pepper Soup

This is one of my all time favorite soups! It's thick and hearty similar to a chili, but has the same flavor as traditional stuffed peppers! Using extra-lean ground beef, 98% fat free beef broth, and brown rice make this recipe surprisingly healthy. It's very easy to make and also freezes well. Serve up with some crusty bread and you have a one pot dinner. -- posted by PSU<3

Mexican Salad in a Tortilla (Ww 6 Pts)

This is a delicious recipe from Weight Watchers New Complete Cookbook.
The crunchy tortilla cups soak up the yummy dressing and become a treat on their own.
To make the tortilla cups use my Recipe #381215
The Weight Watchers cookbook calculates the calories to be 307. Zaars calculation is lower which would make the points value lower as well. I think the cooking spray might be counted in the calorie count by WW. -- posted by Dreamer in Ontario

Roasted Tomato Sauce
