The cotija cheese ia a Mexican grating cheese. 			<description>This is a twist on many classic green bean dishes, but I really just like this dish.  I used my grill pan, or you could use a saute pan, but the grill pan inside or out works so much better for this. I like the grilled taste it offers to this dish.  I use red, yellow and orange bell peppers thin sliced, fresh green beans and olives.  All tossed in a spicy balsamic vinaigrette tossed with kalamata olives and topped with grilled/fried fennel. 			<description>This is a fantastic sauce.   It's similar to thousand island dressing although it uses fresh ingredients instead of a relish which gives it more of a gourmet twist.  I put it on belgium frites, traditional french fries and hamburgers.  I love it so much I've started keeping a jar in my fridge at all times.  The capsaicin is not only hot on the tongue, it is brutal on the eyes or in cuts on your fingers.  When preparing peppers you can wear rubber gloves to protect your hands and keep your hands clean.  capsaicin has a way of staying on your hands even after washing.  Safety glasses will help you avoid splashes or touching your eyes while cutting and cleaning peppers.
 The steam from boiling vinegar is very strong.  Avoid breathing it. 
Cooking your hot sauce will help blend the flavors together, break down pieces of solid ingredients and pasteurize the sauce.  It is an important step which should only be skipped if the sauce will be used up completely within 1 week. Davis makes a compelling case for this fire-roasted pepper salsa: it makes a great appetizer over cream cheese, a delicious side dish, or a complement to grilled foods. The trick to getting the peppers really fire roasted is to have the grill grate as close to the heat source as possible. Nothing wakes up your camp-mates like the warmth of a campfire and the sounds and smells of sausage, bacon, and veggies. You will NEED a REAL camping dutch oven (get the cast-iron kind with the little legs and the lip on top for putting coals on the lid - if you camp much, this is well worth the investment). You will also need two hot-pads, tongs, and a heat-resistant spatula. A long-sleeve shirt and leather gloves are recommended so that you don't singe your arms and hands. 			<description>Thai Tom Yum soup is a delicious and aromatic Thai soup. I crave this soup ALL of the time. I have brought this to parties and people always rave about it.  Now friends always ask me to make it whenever we're getting together.  I made it completely from scratch for years.  A few years ago, I started using the paste and prefer it.  I find it to be more flavorful.
Tom Yum is distinctly known for it's hot and sour flavor.  My version maintains the distinct hotness and sourness of the traditional soup but it also is slightly sweet and spicy.  I make a side of jasmine rice and serve it with the soup.  
I noted the ingredients and amounts I use however, I encourage additions, deletions and alterations. I don't care for the mushrooms and I love broccoli which may come as a surprise to some. Broccoli is not a traditional component of this recipe but it's healthy and I find that it goes nicely with the broth.
