Low-Fat, Good Fat Eggplant (Aubergine) Casserole

This is adapted from an old Pennsylvania Dutch casserole to fit my ballet diet:) It is extremely good, low fat and has no "empty calories"- everything fits into the AHA/Diabetic Exchange system. Original credit goes to Rachel Sitler of Berwick, PA for a great, versatile recipe. 1 additional cup of tomato juice can be substituted for tomatoes to make a spaghetti sauce or salsa base. Squash or zucchini, of equal volume and in season, can be used instead of eggplant. This recipe always turns out very good, but I have found that its texture varies greatly with small adjustments in temperature, and from oven to oven. Experiment a little first before planning a dinner party around it:) Serves 3-4. Store leftovers for up to four days. -- posted by Emmie Gruchow

Amish Gooey Rhubarb Rolls

This is based on a recipe from a copy my daughter has of the cookbook “Amish Cooking” compiled by a committee of Amish Women, published by Herald Press. In the book, it is known as “Sarah Schwartz’s Rhubarb Rolls” but it makes such deliciously gooey rolls that the new name is more apt! -- posted by Juliesmom

Pot Pie Noodles W/ Ham, Beef, Chicken, or Turkey

My Grandma was Pennsylvania Dutch and this is the very simple recipe she used to create a savory, mouth watering main dish.

These are the dough squares that are added to your favorite broth. Another "comfort food" that brings back fond memories of Mom and Grandma's kitchens.

My favorites include: Ham, beef, chicken, or turkey. Some have told me they have also used ground beef but I have yet to try it that way.

If you have never made this dish, it may seem difficult at first, but after a couple times you'll be glad you didn't give up, because it really is simple to make and it's delicious. -- posted by Chef #1W

Feel free to add your favorite seasonings such as Lawry's. This isn't the exact recipe but way back when I was a kid my mother who made a lovely tuna casserole [right.. 3 bottles of ketchup spaghetti queen] and my Grandfather had one heck of a fight over the Tuna Casserole or the Hamburger Gravy. Grandfather ate his Hamburger Gravy over saltines that night and Mom MADE me eat the tuna.
Ruhrei.... Mennonite Scrambled Eggs

This is a different and delicious way to make Scrambled Eggs, my MIL used to make them this way and we loved them!
Very creamy. She said originally they used to make eggs this way to stretch the eggs further when feeding a large family, now we just make them because we like them!
From the Mennonite Cookbook.
*Caution: These eggs are of a very creamy and different texture and need to be fully cooked and set through. -- posted by ~Leslie~

Cooked Turnips and Pork

I found this Pensylvania Dutch recipe at teriskitchen.com anwsering a community request. I post it here so that it can be put in my cookbook. I haven't tried it yet, so let me know what you think. - Here the original comment for the recipe,"This is the way my mother and grandmothers cooked turnips. It is an example of simple, basic Pennsylvania Dutch cooking. Beef can be used in place of the pork. I like it either way. We usually use this as a main dish, served with rye bread and Apple Butter. But the Dutch would also serve it as a side dish for a large meal." -- posted by Inge 1505

Pa Dutch Chicken Pot Pie Noodle Soup

A combo of my maternal and paternal grandmothers' recipes. It's what I grew up on....slow-cooked stuff w/ the veggies cooked to mushiness. Kinda comforting sometimes. They made their own pot pie noodles--I buy 'em. They used onion; I like leeks. I also added a bay leaf. It's a tummy-warmer. You could use chicken thighs and/or breast, but thighs are just so more juicy! ;)
Serving size is a guess. The way my grandparents ate, this would probably feed two--maybe four if they were saving room for Shoo-Fly Pie.

Good 'n Plenty Pennsylvania Dutch Shoo-Fly Pie

Truly one of my favorite desserts ever!
This recipe comes from the AMAZING Good 'N Plenty Family Restaurant in the heart of Lancaster County, PA.
Bar none, my favorite restaurant ANYWHERE. (And I get around!)

Try this, and prepare to be amazed by the delicious, gooey/crumbly, SWEET richness!

One of the characteristics of a traditional Shoo-Fly pie is a crumbly, messy, almost floury crust on top...I understand that all tastes are different, and for that, I'm sorry you and DH didn't like it, Sistah. :( -- posted by GoodMorningBurger

Easy Crock Pot Apple Butter

This is the first recipe I ever used to can apple butter. Recipe starts out with applesauce, great for any time of year. It was my first time canning and it turned out great! This would make great Christmas gifts. I gave a lot of mine away earlier this year and everybody loved it. Their only complaint: put it into bigger jars! This recipe make a dark, spicy, and sweet apple butter. Makes a great sandwich with PB.

Homemade Vanilla Honey Ice Cream

My grandpa used to make tis with a hand churned ice cream maker, I have adapted it somewhat for an up to date "new fangled" ice cream machine. Since he was a bee farmer he had this made every honey bee season. -- posted by kittenangel2001

Vanilla Puff Pancake

This is such a wonderful breakfast. It's sweet and comforting, yet packed with protein to give the kids a good start to the day. Super easy to make. You can even make the batter the night before and throw it in the oven the next morning. For a variation, omit the vanilla bean and add a chopped Granny Smith apple. -- posted by Dewdropdeb

I found this at Teri's Kitchen, a site about Pennsylvania Dutch cooking. It's become a favorite in our family. Since we don't eat pork, we substitute beef ingredients for the sausage and bacon. However, the pork version is more authentic. It is very hearty and filling. -- posted by Halcyon Eve

Smoked Beef Brisket With Sauerkraut and Dumplings

Here is our family favorite brisket recipe:
This recipe is a combination of cool smoking and good old Pennsylvania Dutch cooking. The smoke flavoring blends deliciously well with the sauerkraut and the dumplings.
NOTE: Do not use corned beef brisket, this recipe requires a fresh brisket.

Big Brother Ted's Veggie Beef "stoup"!

An extremely hearty, aromatic and very flavorful rustic type soup/stew. My dear big brother has developed this recipe over the years by adding & subtracting ingredients and perfecting his version! I'm honored that I was able to persuade him to write out and share the recipe! It's a stick-to-your-ribs meal in itself but be sure to serve with crusty peasant bread and a big salad! Nothing subtle about THIS "stoup"! I do believe he adapted this recipe from some of the soups and stews our mother and grandmother made (both restaurateurs)-and that may account for the quantity!!! -- posted by bestbema

Schnitz Und Knepp - Dried Apples and Dumplings

I am a man well up in years with simple tastes and few,
But I would like to eat again a dish my boyhood knew.
A rare old dish that Mother made that filled us all with pep,
This generation knows it not-we called it Schnitz and Knepp.
I patronize all restaurants where grub is kept for sale,
But my search up to the present has been without avail.
They say they never heard of it, and I vainly wonder why,
For that glorious concoction was better than pie.
Dried apple snits, a slab of ham and mammoth balls of dough
Were the appetizing units that filled us with a glow,
When mother placed the smoking dish upon the dinner table,
And we partook of its delight as long as we were able.
My longing for that boyhood dish I simply will not shelf;
If I cannot find it anywhere, I'll make the thing myself. -- posted by Molly53

Sho-Fly Pie

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Loleda Shutt. It was one of five Sho-Fly pie recipes in the book. The real question for Sho-Fly pie lovers is - wet or dry? -- posted by Sarah_Jayne

Grandma Strohecker's Cider and Raisin Sauce

Another recipe from the 1980 version of the Grace Evangelical Congregational Church cookbook from Muir, Pennsylvania that was given to me by my Nana when I became an adult. This recipe was submitted to the cookbook by Grandma Strohecker. As with so many of these recipes, she didn't specify serving yield. So, I am guessing a bit. I have had a version of this so many times growing up and it is *so* good. -- posted by Sarah_Jayne

Chicken Popeyes (Bott Boi)

I have been looking for a recipe my mom used to make us as kids, for a long time and someone helped me out in the Zaar forums recently and told me the real name of it. This is what I came up with after reviewing many recipes and concocting one of my own. I am thinking the noodles aren't quite what I remember so I will be tweaking them and may repost a 2nd revised recipe later. Since this is a stew it freezes beautifully, and it makes a lot so I serve half of it and freeze the rest for a quick dinner some other time. -- posted by DbKnadler

Mom's --pea--salad

This is a recipe that is done mainly by taste so trust your own tongue!!....

I was raised on this salad but for most people when you say PEA SALAD, they have never had it but it is really good and the kids LOVE it..it's a good way to get kids to eat peas!..It is ALWAYS great for a picnic or BBQ..it is also a conversation starter as it is unique!..VERY important to keep this VERY cold and eat it cold! -- posted by Dapanamakidd

Van Gelder Dutch Baby

A warm souffle-style soft thick pan-cake, made from simple ingredients you probably have in your cupboard already. Perfect for a quick and easy meal or snack when you don't feel like shopping.

I make these for company or just because. They are so easy, delicious and lovely to look at, they are a completely satisfying snack, breakfast or dessert anytime. Also extremely versatile! I sometimes leave out the sugar and lemon and add a teaspoon of savory herbs and salt, then add grated cheese and sausage as a topping/filling at the end for a more hearty breakfast. My recipe is for a 12" skillet, if you use a regular 8" or 9" pie pan, reduce servings to 6 above (or just cut recipe to 3/4). -- posted by RupaMagic

Creamy Brussels Sprouts With Bacon

Quick and easy to prepare, and not a bad way to get the young'uns to eat the much-hated Brussels Sprouts. The sweet & smoky bacon counters the bitterness of the sprouts. And don't use non-fat sour cream - full fat works better. -- posted by Glutton

Rainey-Day Chilli

I can never find a chilli recipe that reminded me of my moms. So I made my own one day. I took what I could remember from hers and added some things. I just took a container to my pap for dinner tonight. I can't wait for him to call and let me know how it is. After hunting season I will use ground venison instead of the beef. -- posted by JLChic2814

16 Quart Chicken Corn Soup

My mom bought what she thought at the time was the biggest stockpot ever in 1998, and this is the first thing she made in it. I've always loved it and I make it when I can in my own 16 quart pot! It freezes really well, so don't be afraid to make it all. Cook the chicken a day ahead so you can refrigerate the broth to skim the fat off easier. Thanks Mom!! -- posted by Chef Skie

Slow Cooker Chicken and Cornbread

Usually I work too much to get any use out of my slow cooker, but on snow days I can put it to good use and make this delicious comfort food. I originally had the inspiration for this recipe at Garryowen Irish Pub in Gettysburg, PA.
