Low Carb Penne Pasta in Pesto-Cream Sauce

This recipe uses the recently introduced low-carb pasta for a flavor-packed, yet healthy side dish that satisfies your pasta craving without breaking your low-carb diet! Note: The 'Zaar nutrition chart doesn't recognize "low-carb" pasta, so be sure to add the number of carb grams shown on your pasta box. For example, my brand contains 5 G. net carbs, so my corrected total is 7.5 G. net carbs in each serving. -- posted by Cookin'Diva

Stilton Penne With Zest

I originally ate this in a Toronto restaurant across the street from the Art Gallery of Ontario where I worked at the time. This is my attempt to replicate it, and it is yummy!! The orange zest adds a little extra interest. Pasta shells would also work well, catching lots of sauce. After receiving the first review saying it was missing something, I realized I left out 2 items, so this is the amended version. -- posted by Karen in OC

Baked Macaroni & Cheese

Another simple creamy mac & cheese recipe. When I was a kid my grandmother made it with American cheese and long macaroni noodles. I recently found the noodles that she used in a farmer's market - they are Greek pastichio macaroni noodles broken into 1-2 inch pieces before cooking. Give it a try with the Greek noodles if you can find them. Otherwise, use whatever noodles work for you. -- posted by Karen67

Make Your Own Pasta Salad

Pepin's Penne, Ham and Vegetable Gratin

I have fallen in love with Jacques Pepin. His recipes, whether complicated or incredibly simple, like this one, always turn out perfect. I've tweaked it a little (forgive me, Jacques) to satisfy my teenager, who has requested this for her "birthday dinner." It's easy, inexpensive, and very satisfying. A real comfort food for us -- posted by SheCooksToConquer

Grant Achatz's Mac and Cheese

You would expect Chef Achatz’s macaroni and cheese to have some chef tricks, but it doesn’t. He uses a white sauce, elbow macaroni and cheddar cheese, just like the rest of us. His personal touch: a tablespoon of paprika (to enhance the color of the sauce) and lots of smoky, crisp bacon bits. We love this recipe, which we tried out on resident's to see if they liked the pasta and cheese sauce. Have tweaked it a bit!
Ziti, Eggplant and Fontina Gratin

Eggplant is sauteed in olive oil and cooking spray until its creamy soft and then tossed with pasta and cheese. A quick trip under the broiler browns the top & melts the cheese. "A dolcetto wine is delightfully dry and will make an ideal partner for this dish." Whether or not to salt and drain eggplant before cooking remains a matter of dispute, as well as whether we should peel or not peel the eggplant. As for me, I like the skin on and I like to salt and drain before cooking - when it is done this way it absorbs less oil during frying, as well as getting rid of the bitter flavor. F&W Magazine Don't forget - I didn't account for the draining time = 20-25 min. :) Originally posted on 07/17/2008 - Update: 11/08/2008 have decreased the amount of pasta and increased the heat!
Creamy Mac and Cheese

I can't stand stringy cheddary mac and cheese. It's got to be creamy - where the sauce sticks to the noodles and every bite is filled with gooey goodness. But I want to make this as healthy as possible. I got this basic recipe from #108068 on Recipezaar but I decided to throw my own flair in there. I made it for my family and I got rave reviews - they had no clue it wasn't "full-octane" with butter, whole milk, and full-fat cheese! This will be one they beg me to make at holidays! You can add ingredients to make it a main dish or just do a basic recipe for a side dish. -- posted by Chef #894253

Mom's Macaroni Supreme

The most popular recipe in my mom's arsenal! Unfortunately so many people have requested the recipe in the past 40+ years that she can no longer claim it as her own! This makes a great side dish and is often seen at every family gathering and church pot-luck that we attend. My brother & I always liked ours a little soupy so when I make it for us I add a little extra milk to the top so that it stays loose.
Creamless Penne Pasta Primavera With Olive Oil and Garlic

Entered for safe-keeping. I am searching for a recipe closest to the creamless pasta primavera that used to lure me to a local restaurant (until the chef left). This version by Chef George Krumov seems very close. For non-vegetarians, make this a complete meal by adding (per person) 1 grilled chicken breast cut into 1-1/2-inch long strips or 1/4 pound cooked shelled shrimp (31-40 count/pound). -- posted by KateL

Simple Pasta Salad

This recipe came from a good friend of mine. It's quick and easy to make. There are no real measurements since it is mainly done to ones personal preference. The amounts given here are just to start you off. The prep time is just a rough guess as well. It normally takes me about 20 - 40 minutes depending on how big a batch I am making. -- posted by Chef #1122241

The Best Macaroni and Cheese

This is a recipe I tried for a Christmas dinner and my whole family asked that it be a regular course from then on. Kids love it, and it is easy to make (but fatty). This is one of the best macaroni and cheese recipes I have tasted. I got it from the magazine "Southern Lady" (November/December 2008) issue. It says that it is a recipe about 80 years old, and makes a great dish for family gatherings. It is VERY filling, and can be made into a casserole with ham or a meat of your choice. -- posted by CrazyRedHead
