Delicious Penne With Scallops

Found at Diannaskitchen.com, tried last night and the family loved it! I doubled the sauce recipe (not the pasta). Creamy with a little bit of a flavorful kick.
Penne With Shrimp and Spicy Tomato Sauce

Paprika, cumin, and ginger lend their aromatic alchemy to a simple, no-cook tomato sauce. You can use the sauce with a wide range of ingredients(see Variations). One variation is vegetarian. With its competing spices, strong-flavored cilantro, and acidic tomatoes, this pasta dish calls for a simple Italian white--a pinot grigio, for example. Notes: I use fresh tomatoes instead of canned. -- posted by NcMysteryShopper

One Pan Pasta With Creamy Shrimp and Pesto Sauce

This recipe from Sunset uses only one pan. Yup, a single pan! The secret is to use frozen cooked shrimp and prepared pesto. When I make it, I thaw the shrimp by putting them in the same colander I am going to use for the pasta. Then I pour the pasta and its boiling water over the shrimp, and--voila--thawed shrimp! The recipe is very pesto-y, so, if you like, feel free to cut down on the pesto and use more sun-dried tomatoes. Also, use whatever pasta shape you like (we prefer long noodles, for instance). -- posted by juniperwoman

Penne Con La Sardine (Baked Pasta and Sardines)

Pasta and sardines baked in the oven are wonderful. The salty flavours of the sardines go so well together with the pasta, feta cheese and that bit of cream. Rich and full of flavours.
For this recipe you can use sardines fillets, but you can also use whole fish. Sometimes, when I'm too lazy, I use the whole fish for this recipe and serve it that way. Every guest can take as many as he wants. And it is a lot of fun. Brings back memories of Italia, sitting in one of those little fish restaurants and enjoying fresh fish. For this recipe you should always use fresh fish.
Serve it with some bread and a glass of a dry white white wine. -- posted by Thorsten

Salmon Pasta

When I left school I worked in an Italian restaurant. For staff meals we were allowed various basic pastas, but we could pay extra for a more ‘luxury’ meal, such as seafood etc. Every Saturday, I’d ‘spoil’ myself and buy salmon pasta. Once I left the job, I would crave this pasta, so I had to try to recreate it as best I could. I do tend to vary the optional items depending on what I have in the fridge, but the basic stays the same. BTW, if you don’t like garlic, you don’t have to add it, but it is definitely worth it! -- posted by Luschka

Shrimp Stuff

A really simple way to make shrimp and pasta. I'm in college and it's fairly quick and easy to make. Created it for my boyfriend who dubbed it "Shrimp Stuff", and also for my roommate who didn't like shrimp because of it's "fishy" smell but he liked this.
It's probably not the healthiest small meal to eat but when you're a hungry college student, it gets you through finals!

Spicy Shrimp and Chicken Pasta (Like Carino's)

This is my FAVORITE dish at Johnny Carino's in my town and this is my rendition of the recipe. My husband says it tastes exactly like theirs. I have played around with how much cayenne pepper to put in this dish because the recipe I found originally just said "to taste". For me, one teaspoon is too mild, but two teaspoons is pretty spicy. I'd put some in and do a taste test before you add more. The original recipe was in Denver's Rocky Mountain News, but I have modified it to our tastes, including leaving out the green onion and increasing the amount of the sauce. Also, the original recipe said it served 4, but we have no problem getting 6-8 servings of this. I serve it with a tossed salad and my Recipe #281657. -- posted by Sooz Cooks

Penne With Roasted Red Pepper, Artichoke, & Garlic Puree

This is a very easy homemade recipe that has all the traditional tastes of Italy. It's a Penne Rigate dish with Roasted Red Pepper, Artichoke, Onion & Garlic Puree. I happen to love this and so does DH. You have to like roasted red pepper to enjoy this recipe to the fullest extent. It's so simple to prepare as most of the prep is done with a food processor or blender for the puree then you just serve it over your favorite pasta - we like it best over Penne Rigate, but any pasta will do. ** You could also stir in some cooked shrimp or cooked sliced sausage if you want a more hearty dish ** -- posted by BlondieItaliana
