Cool Cucumber Pasta Salad

This is a great summer salad that tastes super with any grilled meat. The longer it marinates the better! The ingredient are things I normally have in the house so it's easy to whip together. It from a '97 TOH and it has become a favorite at this house. The cooking time listed would be cooking the pasta. Hope you enjoy it as much as we do. -- posted by DDW

Penne Pasta Salad With Roasted Red Peppers and Fresh Basil

Celebrate the late summer harvest of red peppers with this simple and light pasta salad. You can easily substitute roasted peppers from a jar. This recipe is from an obscure little cookbook with fabulous recipes called “Canada Cooks Pasta”. I have a propensity for lemon and increase the amount of zest and juice. As a matter of fact, I increase the feta and basil as well!

This is a great brunch, pot luck or buffet salad!

Note: Whether you use fresh peppers or jarred, ensure you dry them thoroughly...you really don't want a pink salad! -- posted by Highland Lass

Simple Pasta Salad

This recipe came from a good friend of mine. It's quick and easy to make. There are no real measurements since it is mainly done to ones personal preference. The amounts given here are just to start you off. The prep time is just a rough guess as well. It normally takes me about 20 - 40 minutes depending on how big a batch I am making. -- posted by Chef #1122241

I hope you enjoy it as much as I do.

Lemon Pasta Salad With Tomatoes and Feta

So good, and a nice change from typical pasta salads. I always get asked for this recipe at potlucks. I usually increase the dressing by about a third, as we like salads moist. A few hours before serving I add the tomatoes along with chopped artichokes, kalamata olives, basil and parsley. Right before serving, I add some roasted pine nuts. This recipe is very versatile, add whatever you want, some of the ingredients I have added in the past are fresh grated parmesan cheese and cucumbers.
This dish gets better the longer it sits, even 24 hours works just fine. Cooking time does not include the setting time. Adapted from Bon Appétit, August 2003. -- posted by Scoutie

Penne With Roasted Tomatoes and Fennel

Marcelle Bienvenu, contributing write for The Times-Picayune, included this exquisite summer pasta salad in her article giving the "heads up" that the famous & beloved Creole tomatoes are just about ready to start coming to market. The Creole tomato is a fabulous tomato, a phenomenal workhorse in hot & humid conditions that kill off other tomato plants. In LA it is also imbued with a special rapacious taste that I am praying mine develop in my coastal mater patch.
Fennel bulb - crisp & refreshing like celery but with that bright but gentle licorice-like essence is a wonderful foil for robust tomatoes to accent their sugars. This pasta salad appeals to me because it seem lighter, hence more refreshing, than others loaded down with mayonnaise or store bought "Italian" bottled/prepared dressings. Perfect with a pile of chilled shrimp steamed in Old Bay just after being netted. Iced Tea with sprigs of mint or an ice-cold Rolling Rock ( 7 ounce bottles on ice - Pleeeze LOL!) & supper is on the table for deck dining at its best!
Tip - Roast the tomatoes & fennel on separate sheets at the same time while the pasta is boiling to cut down on cooking times & limit heat in the kitchen. -- posted by Buster's friend

I had never made a pasta salad before, but my girlfriend wanted one for a party, so I threw this together and it turned out amazing.
