Chicken Passionata

Nice light pasta and chicken dish! Very versatile and forgiving that children tend to love. This has become a family dish we make often. I have even served it for large crowds and dinner parties. I have been making it for more years then I would like to admit and I received it from my mother-in-law. Omit the chicken, add more broccoli and you have a nice vegetarian meal. -- posted by Intl Teacher

Creamy White Wine Sauce and Italian Chicken over Pasta

This is a super easy, ultra tasty recipe that calls for white wine, a packet of Italian dressing mix, chicken and pasta. Upon my first time making it, I already had leftover cooked chicken breast, so I made the sauce on the stovetop and let simmer for 20 minutes, chopped the chicken and added it to the sauce and served over pasta. I used 1-1/2 cups of white wine to yield a sauce that was a little more runny, but consistency is a matter of preference. I also used 2 freshly chopped roma tomatoes, rather than the sundried. -- posted by Thumbs

Baked Penne With Sausage and Spinach (Oven or Crock-Pot)

This baked pasta recipe is great for a potluck, or to take to someone who is in need of a home-cooked "comfort" meal. It's very flavorful, simple to prepare, and inexpensive to make. You can bake it in the oven or make it in the crockpot (instructions included). I particularly like the blend of fresh and zesty ingredients (spinach, fresh mozarella, pesto and hot sausage).
For a fantastic meal, serve it with my Recipe #291227, #291227. -- posted by Cookin'Diva

Cheesy Baked Penne

Entered for safe-keeping. I am searching for a recipe closest to the creamless pasta primavera that used to lure me to a local restaurant (until the chef left). This version by Chef George Krumov seems very close. For non-vegetarians, make this a complete meal by adding (per person) 1 grilled chicken breast cut into 1-1/2-inch long strips or 1/4 pound cooked shelled shrimp (31-40 count/pound). -- posted by KateL

Mark Bittman's Pasta With Cauliflower

A quick and simple recipe printed in "The New York Times" (Feb. 6, 2009).
"There are many possible variations. For the cauliflower, you can substitute broccoli, rape or even kale or collards. When you're simmering the garlic, you can add anchovies, capers, pine nuts or dried red pepper flakes -- some or all of them. You can toss crumbled cooked sausage meat or chopped shrimp into the garlic mixture along with the bread crumbs. Or you can garnish with chopped parsley, basil or grated Parmesan." -- posted by blucoat

This is a recipe that I created to mimic an old favorite of mine at Pasta Bravo. A great combination of penne (or rigatoni, spirals) tomato, cheeses all baked to perfection...creamy on the inside with a crispy outside crust.

The Best Macaroni and Cheese

This is a recipe I tried for a Christmas dinner and my whole family asked that it be a regular course from then on. Kids love it, and it is easy to make (but fatty). This is one of the best macaroni and cheese recipes I have tasted. I got it from the magazine "Southern Lady" (November/December 2008) issue. It says that it is a recipe about 80 years old, and makes a great dish for family gatherings. It is VERY filling, and can be made into a casserole with ham or a meat of your choice. -- posted by CrazyRedHead

Penne Bolognese

VERY tasty & a bit healthier than a traditional bolognese. Hearty mix of vegetables, leaner meat, and pasta make this a great one-dish meal. This recipe is taken from Men's Health magazine (Apr '08) - I thought my DH was crazy when he asked me to look at a recipe from a men's magazine, but we all loved it! Even the picky teenagers I made this dish with a whole box of Penne pasta, which made the dish go a little farther for leftovers. Also, I used a Reduced Fat smoked turkey/pork sausage in place of the 'diced smoked turkey.' It was VERY tasty and I will probably stick with that when I make this again. I also added to the carrots, since I wanted to make this a one-dish meal and skip a side dish. I know most bolognese recipes usually have a thicker sauce, but because you're using milk (I used skim) in this recipe instead of cream, it's a little different. But in the end, there is no sacrifice of taste...just calories and fat! -- posted by Chef #532638

Baked Penne With Grilled Veggies and Meat Sauce

First I bought some beautiful peppers at the vegetable market. Then I started thinking about a vegetable lasagna. However I kept going and ended up with a meat sauce as well. Then I checked the pantry for lasagna noodles and only came up with a partial box, hence the need to use penne. This is my own crazy concoction.
"pizza" Pasta Toss

A delicious pasta dish, that even the kids will enjoy, because of the flavor. A variation of this could be to omit the pepperoni, reduce vegetable cooking time to 5 minutes. Add 2 cooked and crumbled bacon slices, along with the cheese.

If using a very thick pasta sauce, reserve 1/4 cup of the pasta cooking water when draining the pasta. Gradually add the reserved cookng water to the finished dish until of desired consistency. -- posted by Chef mariajane

Three different kinds of cheese, add a little bacon, something green - like peas and some nice spicy flavoring make for a wonderful side dish or main dish.;) I added horseradish cheddar, which is amazing and zippy!
Dairy Free Chicken Pasta Primavera (Gluten Free)

I created this and it is delicious and dairy free! Pasta primavera is an Italian-American dish that consists of pasta and vegetables. A meat such as chicken, sausage or shrimp is sometimes added, but the focus of primavera is the vegetables themselves. The dish may contain almost any kind of vegetable, but cooks tend to stick to firm, crisp vegetables, such as broccoli, carrots, peas, onions and green bell peppers, with tomatoes. Pasta primavera is usually highlighted by light flavors, aromatic herbs and bright colors ('primavera' meaning the season of spring). Classic pasta primavera is based on a soffritto of garlic, olive oil, and Parmesan cheese, but versions based on a heavier cream or Alfredo sauce are also common. Though recipes for cold pasta primavera may be found, they are best classified as antipasti, or appetizers.
Pastas served with this dish are typically smaller shapes, such as penne, farfalle, rigatoni and fusilli. If using longer types of pasta, such as spaghetti or fettuccine, the vegetables are normally sliced in thin strips to match the shape of the noodles. -- posted by UmmBinat

Spaghetti Alla Puttanesca, Italian Style

I first was introduced to this recipe when I was reading the book, "Belong to Me", when the main character "would have sold her soul" for a plate of this. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese! Italians customarily do not use cheese in this dish; the cheese overwhelms the sauce and makes the anchovies more pronounced, unbalancing all the delicate flavours you just worked so hard to create. -- posted by The_Swedish_Chef
