			<description>This is a great meal to serve to company, keeping in mind to start early in the day for roasting time.  Growing up on a farm, we always had a freezer full of beef, so mom would make this ever so often when we had a bunch to feed.  The flavor is so good people just keep eating and eating.  It's like an Italian feast when served with bread and a green, leafy salad. 			<title>Penne Pasta &amp;amp; Oven Roasted Chicken (By Florida Native)</title>

			<description>This is my stab at Romano's Macaroni Grill's dish called &amp;quot;Penne with Oven Roasted Chicken&amp;quot;. I think it is my favorite chicken and pasta dish, and I've tried alot of them and made up a few myself. I found a couple of recipes for this but could not get the exact ingredients so I improvised and this is what I ended up with. I added no salt as the chicken broth and cooking wine I used both had salt. I think it's pretty close, not exactly Romano's but still YUMMY!

The flavors are excellent and it's a totally new way to use up leftover ham.  The crispy ham reminds me of pancetta. Upon my first time making it, I already had leftover cooked chicken breast, so I made the sauce on the stovetop and let simmer for 20 minutes, chopped the chicken and added it to the sauce and served over pasta.  I used 1-1/2 cups of white wine to yield a sauce that was a little more runny, but consistency is a matter of preference. This recipe is taken from Men's Health magazine (Apr '08) - I thought my DH was crazy when he asked me to look at a recipe from a men's magazine, but we all loved it! Even the picky teenagers  I made this dish with a whole box of Penne pasta, which made the dish go a little farther for leftovers. Also, I used a Reduced Fat smoked turkey/pork sausage in place of the 'diced smoked turkey.' It was VERY tasty and I will probably stick with that when I make this again. I also added to the carrots, since I wanted to make this a one-dish meal and skip a side dish. I know most bolognese recipes usually have a thicker sauce, but because you're using milk (I used skim) in this recipe instead of cream, it's a little different. Now I really think that a combination of the fontina cheese and the parmesan is what makes this good. You can use other pastas, but I happen to like the penne or the small penne.  My favorite is to serve this with balsamic grilled portabello mushrooms and a good glass of red wine.
