Beef and Eggplant Stew (Greek - Crock Pot Version)

This is a delicious Greek stew that I have adapted for the crock pot. The spices give it the characteristic Mediterranean flavour and the sauce is divine. The eggplant will be very soft, and some pieces may even have melted into the sauce. This is terrific served over a thick pasta, like penne or rigatoni. -- posted by evelyn/athens

Bolognese Sauce

Excellent, thick, rich meat sauce. Spaghetti is too thin to stand up to this sauce so I recommend ziti, penne, rigatoni, or radiatore. -- posted by MsKittyKat

Crock Pot Meatballs & Penne in Red Sauce

I adopted this recipe from the Recipezaar account as I am always on the look out for make ahead recipe and this one would be a great one for my "what to make with frozen meatballs" cookbook". This is the original introduction This is an adaption of Red Penne with Garden Veggie Meatballs recipe #52512 by --Kari*left*Denver--. I had it on the menu to make, but put it off and some of my ingredients went bad before I got the chance to make it, so, here's the version I came up with instead. I like to make up several batches of the cooked meatballs in the freezer to pull out for an easy meal." Thanks cbw -- posted by * Pamela *

I really love a good roasted chicken seasoned with tarragon and chicken. So when I had a hanker for just such a dish but didn't want to heat up the oven and only had chicken breasts on hand this is what I came up with. This is so easy and so yummy.
Baked Penne With Sausage and Spinach (Oven or Crock-Pot)

This baked pasta recipe is great for a potluck, or to take to someone who is in need of a home-cooked "comfort" meal. It's very flavorful, simple to prepare, and inexpensive to make. You can bake it in the oven or make it in the crockpot (instructions included). I particularly like the blend of fresh and zesty ingredients (spinach, fresh mozarella, pesto and hot sausage).
For a fantastic meal, serve it with my Recipe #291227, #291227. -- posted by Cookin'Diva
