Penne With Roasted Tomatoes and Fennel

Marcelle Bienvenu, contributing write for The Times-Picayune, included this exquisite summer pasta salad in her article giving the "heads up" that the famous & beloved Creole tomatoes are just about ready to start coming to market. The Creole tomato is a fabulous tomato, a phenomenal workhorse in hot & humid conditions that kill off other tomato plants. In LA it is also imbued with a special rapacious taste that I am praying mine develop in my coastal mater patch.
Fennel bulb - crisp & refreshing like celery but with that bright but gentle licorice-like essence is a wonderful foil for robust tomatoes to accent their sugars. This pasta salad appeals to me because it seem lighter, hence more refreshing, than others loaded down with mayonnaise or store bought "Italian" bottled/prepared dressings. Perfect with a pile of chilled shrimp steamed in Old Bay just after being netted. Iced Tea with sprigs of mint or an ice-cold Rolling Rock ( 7 ounce bottles on ice - Pleeeze LOL!) & supper is on the table for deck dining at its best!
Tip - Roast the tomatoes & fennel on separate sheets at the same time while the pasta is boiling to cut down on cooking times & limit heat in the kitchen. -- posted by Buster's friend

"pizza" Pasta Toss

A delicious pasta dish, that even the kids will enjoy, because of the flavor. A variation of this could be to omit the pepperoni, reduce vegetable cooking time to 5 minutes. Add 2 cooked and crumbled bacon slices, along with the cheese.

If using a very thick pasta sauce, reserve 1/4 cup of the pasta cooking water when draining the pasta. Gradually add the reserved cookng water to the finished dish until of desired consistency. -- posted by Chef mariajane

Pierce Brosnan's Penne Pasta

Rumor has it, this is Pierce Brosnan's favorite penne. It comes from one of Pierce's favorite restaurants, II Ristorante di Giorgio Baldi in California.
Quick and Easy Pasta Salad

I had never made a pasta salad before, but my girlfriend wanted one for a party, so I threw this together and it turned out amazing.
Radish Penne

Another find from the "Cooking with Amy" food blog, this is a simple pasta dish that makes use of an often-overlooked vegetable -- the radish. Even the greens are used, which adds to the nutrition and visual appeal of the finished product. I haven't tried it yet (I literally *just* came across it, and knew I had to share!), but will do so the next time I remember to buy radishes. ;) Prep time is estimated, and includes the cooking of the pasta; if you prepare your veggies while the pasta cooks, the recipe can come together pretty quickly. -- posted by Lynne the Pirate Queen

Carrot Pasta Sauce

The fresh ingredients and the short cooking time, make this a perfect light summer pasta dish. I found this recipe online claiming to be a fake tomato sauce. It doesn't taste like tomato, but then again it doesn't really taste like carrot either. The way all of the flavors mesh, it's really an indescribable flavor.
Carbonara

This is pretty much the quickest pasta dish I know how to make, plus it only uses one pot so there is little washing up to do. Really full of flavour, but it doesn't reheat all that well (it still tastes alright but isn't as good as fresh!), so it's best served immediately. If you would like to make it a chicken carbonara add 500g of chicken, cut into 3cm pieces, to the pan when you cook the bacon. -- posted by Hayley_11

Provided by Curtis Stone at http://curtisstone.com. I know this idea is not new but it was wonderful! Ate only a small taste and was very proud of my "find"- it was luscious! Three different kinds of cheese, add a little bacon, something green - like peas and some nice spicy flavoring make for a wonderful side dish or main dish.;) I added horseradish cheddar, which is amazing and zippy! Serve it with your favorite wine or champagne, or on a cheese tray cubed - there are many uses for this cheese with a bite! :) -- posted by Manami

I invented this forever ago. It's super yummy! You can serve it over any pasta, I guess, but I'm partial to rigatoni. You can also bake this after you combine the pasta and sauce, if you want, but I like it just how it is.
Pesto Louisa Carbone

Not your typical pesto -- but outrageously delicious! This is my husband's grandmother's recipe. In 1986 it was published in a cookbook entitled *Italian Provincial Cookery* by Bea Lazzaro and Lotte Mendelsohn. Louisa was a shepherdess outside of Genoa before emigrating to Massachusetts early in the 20th century; she substituted cream cheese (more readily accessible) for sheep or goat cheese after arriving in America. -- posted by L'ecole

Dairy Free Chicken Pasta Primavera (Gluten Free)

I created this and it is delicious and dairy free! Pasta primavera is an Italian-American dish that consists of pasta and vegetables. A meat such as chicken, sausage or shrimp is sometimes added, but the focus of primavera is the vegetables themselves. The dish may contain almost any kind of vegetable, but cooks tend to stick to firm, crisp vegetables, such as broccoli, carrots, peas, onions and green bell peppers, with tomatoes. Pasta primavera is usually highlighted by light flavors, aromatic herbs and bright colors ('primavera' meaning the season of spring). Classic pasta primavera is based on a soffritto of garlic, olive oil, and Parmesan cheese, but versions based on a heavier cream or Alfredo sauce are also common. Though recipes for cold pasta primavera may be found, they are best classified as antipasti, or appetizers.
Pastas served with this dish are typically smaller shapes, such as penne, farfalle, rigatoni and fusilli. If using longer types of pasta, such as spaghetti or fettuccine, the vegetables are normally sliced in thin strips to match the shape of the noodles. -- posted by UmmBinat
