Pretty Little Cranberry Pear Pies

This recipe is from "The Little Book of Christmas Cooking". It is full of these great little recipes designed for kids to do with adults, with easy step by step instructions. - The book has a tip that you don't need to peel canned pears, so that might be easier for kids. I think that fresh pears always work better. You will also need a 2 inch round cookie cutter and a small star shaped cookie cutter (smaller than the round). -- posted by Jess4Freedom

French Pear Tart

I love using pears in my recipes, I already have 6 of them & here's a definitely spec occasion, but make-ahead dessert I esp fancy from *The Carnival Experience* by Peter Leypold (Exec Chef of Carnival Cruise Lines). This recipe is untried other than to taste & appears a bit labor-intensive to me, but my hope is that someone labor-fearless will take my word that it is impressive & divine.
Poached Pears With Wine Sauce

I made this last Easter for my boyfriends "meat and potatoes" family and they LOVED this! They especially got a kick out the fact that the pears come out pink.

I usually like to spoon the sauce onto the plate first and put a pear half on top off center, then I put small "drops" of chocolate syrup in the sauce and next to the pear half and run a toothpick through the chocolate "drops" to make heart shapes. -- posted by Meaghan G.

Rustic Cranberry-Pear Galette

Although now slightly tweaked, this recipe comes from the Jan 2003 cookbooklet Favorite Brand Name Recipes -- Holiday Desserts. Why it's called a 'galette' is beyond me since in France, I understand that refers to a type of cake, while in French Canada, I think it's more like a large cookie. What this recipe makes, for me, is more like an open, rustic pie! Whatever you call it, it is delicious! -- posted by Sydney Mike

Mom's Fruit Cobbler

This is the recipe my mom uses on both blueberry cobblers and peach cobblers. I am sure it would work with practically any fruit you wanted to try. When using blueberries, adding a little lemon zest/extract brings out the brightness in the flavors. When using peaches, adding some cinnamon pairs nicely. You may find adding a bit more self-rising flour to the sugar mixture in step #3 will help if you have runny cobbler -- posted by Jill R Q

Pear Spice Bundt Cake With Walnut Praline Topping

Found this tasty adaptation of a circa 1992 Gourmet magazine recipe on www.joythebaker.com , a delightful blog up for an award for Best New Blog of 2009 on www.2009.bloggies.com . Give it a look & see whether you'd give her a vote (I did along with a vote for www.fark.com for the esteemed lifetime achievement award). She's got some tasty recipes for sure. Anyone resurrecting the much maligned American Bundt cake gets a hat tip from me anytime.
I plan to make this & halve it immediately after cooling cake but before spooning on topping - will add topping to each half with the best looking one going IMMEDIATELY to dear neighbor's home as I strongly suspect this could become a main meal substitute if allowed to remain in toto in our house, LOL. -- posted by Buster's friend

This casual breakfast treat can also be individually wrapped in plastic and taken on your next picnic or family outing. Try substituting 3 cups of peeled and coarsely chopped tart apples plus 3/4 cup chopped cranberries, 4 cups fresh chopped pineapple or 3 cups peeled and diced peaches for the pears. Or try using 3 cups of fresh or frozen blueberries or blackberries to top the batter.
Pears With Roquefort and Sauternes Syrup

A recipe by Kerry Saretsky, as published at Serious Eats. This can be lunch, an appetizer, dessert, or a cheese course. You could substitute Stilton or Gorgonzola for the Roquefort for a different flavor. The pears should be perfectly ripe, neither too hard nor too soft, and absolutely sweet. Any variety will do, as long as it meets those criteria. Since the Sauternes is cooked, it need not be a very expensive bottle (it can be pricy). -- posted by DrGaellon

Cinnamon-Merlot Roasted Pears

DH and I made these as a dessert for a dinner party where we would be served Merlot. Everyone loved them. This is from my book, "The Wine Club" by Maureen Petrosky. I am posting the recipe as it is written, however, DH and I baked our pears, having already halved them, as we could not fit them into the 8X8X2-inch baking dish whole. This worked out fine.

According to the recipe, these pears will serve 12 if halved, and 24 if cut into quarters. -- posted by Dr. Jenny

Fondant Aux Poires Et Au Gingembre (Choc Ginger Pear Fudge Cake)

From FamousFrenchDesserts.com, "An exquisite experience. Elegant, rich & it really melts in your mouth!" Posted for ZWT 5 & I made it for the first time after the event. The original recipe did not specify what size or shape baking dish to use so I have made changes below according to what I did when I tested it.
It feels strange to leave a review on my own recipe (I don't usually post a recipe without having tried it first) but I want to be honest about this cake not really knocking our socks off. The actual making of the cake was very easy. I chose to use a 10 inch round springform pan hoping that it would be the best option for arranging the pears. I used 2 anjou pears & one from New Zealand, sliced into 3/4 inch slices, fresh ginger & it all baked up in 32 minutes. I thought the batter was thick & difficult to spread over the pear "star" without disturbing the arrangement so either double the batter or a smaller pan, maybe a pie plate (using less pears) would allow for a thicker cake instead of "a little cake with my pears". I really loved the combination of chocolate & ginger but felt the pears were overwhelming and not quite as sweet as we would normally like. We ate it both warm & cold but we still weren't sold on the pears. I may try a raspberry version with the cake & if I do I'll post it. If you try this recipe, please feel free to offer any constructive criticism & if you find a baking dish or technique that works I'm open to editing this again (giving credit where credit is due, of course). Thanks! *Tink -- posted by **Tinkerbell**

Serve this to the chocoholic in your life and he — or she — will be yours forever. Both filling and pat-in pastry can be doubled easily to make a 10-inch (25 cm) pie; just add a whole egg instead of an egg white when making the pastry and arrange two or three pears in spoke fashion. -- posted by blonder

Pears in Red Wine Sauce

Adopted from Steam It, the way nature intended cookbook. My girlfriend is an excellent cook. She cooks all types of ethnic foods, specializing in italian, indian, and homegrown. She does not like to bake but found this cookbook and is such a happy camper. Steaming foods is so much better for us but I never knew to steam desserts such as these. This is a to die for delectable dessert for 1, 2, or company. It is elegant on theplate and such a simple prep, it belies the end product. Please enjoy.
cooking time does not include chill time, times overlap with prep I gave myself an hour and was good with that and had time to prep other things for dinner while waiting. -- posted by Chef1MOM~Connie

Dark Chocolate and Sangiovese Pear Brownies

This yummy and super-rich chocolate brownie recipe has been adapted from a recipe by Maggie Beer, a revered Australian chef and author of many cookbooks. If Sangiovese Verjuice is not available use any Verjuice; and you could use glacé cumquat, ginger - or whatever glacé fruit you like instead of the pear - and you could use a mixture of fruit and nuts. I'd recommend macadamia nuts. Some conversions: 300g = approximately 91/2 ounces; 250g = 8 ounces; 60g = 2 ounces; 40g = 11/3 ounces. For the BEST results, do use top quality chocolate, such as Lindt 70% cocoa. Recently, I tried some German chocolate that was 85% cocoa... that was probably too rich and too bitter for most tastes, so rich in fact that you'd find that much as they enjoyed it people wouldn't be coming back for a second and third brownie - so your brownies would last longer! -- posted by bluemoon downunder

Pear Clafouti

A traditional French countryside dessert, a clafouti, is usually made with cherries or prunes. This version, with pears and ice cider, has the flavours of Quebec. In fact, Quebec is a pioneer in the production of ice cider, a drink made from the fermented juice of frozen apples. TIP: An equal amount of ice wine or pear liqueur can be substituted for the ice cider. An equal amount of course granulated sugar can be used instead of vanilla sugar. -- posted by Chef mariajane

Sarasota's Simple Pear and Apple Tart

I admit ... I'm not much of a baker. I do bake, but I prefer to cook. I can make a great pie crust, and can make a great cake. The question is do I like to. NO. This is my version of baking. I take advantage of a premade pie crust, but please, if you like making your own, go for it. Fresh fall flavors and NO pie pan. This is a rustic tart with tons of flavors. This was actually my ex mother-in-laws recipe, but she made it as a pie and used nuts as a topping. After deciding to make it a tart, I though that my topping I came up with really added some flavor. But either way you make it as a pie or as a tart -- it is great. -- posted by SarasotaCook

Spiced Baked Pears

This is a perennial favorite for Thanksgiving! It's adapted from a recipe for Spiced Baked Apples by Lorraine Chausse on allrecipes. The pears make a really lovely presentation for dinner parties and can cook while you eat dinner.
The recipe states 6 servings, but you can also halve them and just ladle the sauce over the half. These are yummy served by themselves or with some vanilla ice cream. -- posted by Heidigal

Pear Caramel Crumb Pie

I wanted to make a pear pie with a pecan crumb topping, but sometimes the sweetness of such a topping can make a plain fruit filling seem tart. Inspiration came from a jar of pear cinnamon caramel dessert sauce I had in my fridge. The flavors blend perfectly, and the pecans give a nice crunch to the topping. We also have heart-health issues in my family, so unlike most crumb recipes, this one doesn't use butter. -- posted by akageorge

This is a great brunch dish substitute for french toast if you leave off the Jack Daniels sauce! -- posted by REALtorFOOD

So easy to make this recipe.
Serve cold with Vanilla Ice Cream and some of the sauce spooned over the top!
I have included chilling time with cooking time for this recipe. -- posted by Tisme

Almond Stuffed Baked Pears

This dessert makes the most of the pears' natural sweetness. Use a dessert pear such as Comice. To remove the core neatly from each pear half, use a teaspoon or a melon baller. Serve these pears warm or cold. They also reheat well if you have any left over. -- posted by English_Rose
