I stumbled upon it by throwing things into a pot and it is absolutely the best minestrone I've ever had!  Be sure to salt and pepper as you go; every couple of steps to taste.  You can add the pasta right to the soup if you plan to eat it all right away. 			<description>This recipe originally called for adzuki beans, but as those are extremely hard to find state-side, I use whatever type of beans I have on hand. I like garbanzos and cannellini best, but kidneys and pintos work well also. Adjust the pepper flakes to your personal taste. I usually use around 3/4 tsp. depending on how I am feeling while cooking. If you don't have Asiago cheese on hand, Parmesan and Mozzarella will work just as well. This can also be made vegan by omitting the cheese or substituting soy cheese. 			<description>Something I whipped up the first time I needed to feed a big crew of  people.  It's simple, and a slight departure from the other southwestern pasta salads in the use of smoked mozzarella and fire-roasted tomatoes (a blessing that you can now get them diced in cans - saves me firing up the grill).  I like to use shell or orecchiette pasta for this as each piece tends to capture some other ingredient inside its curve.  As people expect to eat something aside from pasta salad at a meal (why I can't fathom), I try not to blow away anyone's tastebuds with heat.  If after tasting you want to accentuate the smokiness and heat, I would use a hint of ground chipotle. I read a few recipes online, (www.cooks.com as well as recipezaar.com) then used a &amp;quot;frankenstein&amp;quot; technique to make them just like my mom does. I made my sauce kinda plain, I'm pregnant and not much for chunky stuff right now. When I'm not so picky, I will add zucchini and chunky stewed tomato. It fed 4 hungry adults and a two year old with about one portion of left overs so I would say it could comfortably feed five adults.

			<description>This is a simple, quick and relatively healthy pasta recipe (especially if you use whole wheat pasta and low fat cheese).  I recommend using shorter pastas like penne, ziti, farfalle, macaroni or rotini. If you want to use spaghetti or linguine, break the noodles into thirds or quarters. You can also use any kind of sauce. I prefer vodka tomato sauce, but I've also used garlic basil, and it tasted great.
