Amish Macaroni Salad

I really love Amish Macaroni Salad, and this is my favorite recipe for it. Amish Macaroni Salad is somewhat on the sweet side, so if you don't mind your salads sweet, I think you'll like it too. It's even better the next day, so if you can, let it sit overnight. I got the recipe from a Berk's County website a while back. NOTE: It does make a lot of salad, so if you wanted a smaller amount, it halves easily. Just use the 3 eggs chopped up and just garnish with paprika. Time does not including cooking the macaroni. -- posted by Charmed

Broccoli Siciliano

This has been a comfort dish for me for years. Different from the broccoli side dishes that call for cream soup (I love them, too!), this one has a buttery Parmesan sauce that goes great with the broccoli. The oregano is the secret ingredient that makes this dish. This can also makes a satisfying meatless entree. Note: this can be a terrific main dish using rigatoni noodles. -- posted by Roxygirl in Colorado

Stove Top Macaroni and Cheese

This is Alton Brown's recipe with a few small tweaks. It is SOOOO much better than a boxed mix and almost as quick. I have made it with 1% milk instead of evaporated.
Beans With Small Shell Pasta

This recipe originally called for adzuki beans, but as those are extremely hard to find state-side, I use whatever type of beans I have on hand. I like garbanzos and cannellini best, but kidneys and pintos work well also. Adjust the pepper flakes to your personal taste. I usually use around 3/4 tsp. depending on how I am feeling while cooking. If you don't have Asiago cheese on hand, Parmesan and Mozzarella will work just as well. This can also be made vegan by omitting the cheese or substituting soy cheese. This can be used as a main dish for four or a side dish for eight. -- posted by ksduffster

Chopped Salad Appetizer Shells

This beautiful appetizer consists of an Italian chopped salad that is mounded into cooked pasta shells. It can be made up to four hours ahead and the romaine salad will remain crispy for serving.
Note: To give proper credit, this is an adaptation of recipe #29329, which uses chicken as a main ingredient. In the version I am posting, the chicken is eliminated and the chopped salad is garnished with salami and feta cheese. I also make my own vinaigrette, but if you prefer, just use a bottled Italian dressing. -- posted by Cookin'Diva

Great for the summer, pot lucks, a complete meal or a side.I've been making this for about ten years it was one of my girlfriends recipes but every time she see me she wants me to make it. she says she can't do it right anymore so she passed it down to me. you can use any mayo you like, (I recommend Miracle Whip because it just doesn't taste right to me with other mayos). -- posted by Shellflutterby

Co-worker Marjorie brought this delicious macaroni salad for lunch one day and I just had to have the recipe. I think it must be the onion and bacon that give it that kick. I love it and hope you will too.
Pasta House Pasta Con Broccoli (Actual Recipe)

This is the acutal recipe (not a copycat) as posted on their website and as printed in the St. Louis Post Dispatch. THE REAL DEAL HERE MY FRIENDS (there are others posted on this website, but none of them are this exact recipe). This is so yummy and is a St. Louis tradition. This recipe serves 2, so feel free to double or triple it to feed your family. Serve as a main dish (as they do) with a Pasta House Salad on the side! It also makes a nice side dish to grilled chicken. -- posted by JanuaryBride

Yummy! Quick and very easy to make. Great for a main dish or as a side. As described below, I usually make it in the microwave. It is quicker and doesn't dry out as much. I just made this recipe up one day. I had some tomatoes on hand and some bacon that I needed to use, so I made this for lunch to use up what I had.
The best pasta salad I've had! My mother-in-law's recipe, improved! This is always a hit when I have company over. It definitely tastes better the next day, and keeps well in the fridge! I vary the types of peppers I put in it (orange, yellow, red all add nice colors).
This recipe came about at the last minute on Memorial Day. I needed something to take a to a barbeque, but didn't want to go to the store. My husband suggested shells, tuna and peas, all things we had on hand. I thought, ewww, sounds gross in the heat, but, I whipped it together. It was a huge hit.
