			<description>I copied this recipe years ago out of a cookbook a friend received for Christmas. It has been one of my favorite pasta recipes ever since. I can't stand mushrooms, so I never use them. I also use lobster meat sometimes. Imitation crab and/or lobster meat works well in a pinch. Sauce tends to thicken after removed from heat. Since the recipe was listed as a sauce, it didn't give an exact amount of pasta. It simply recommended using a shell or curly type. I'm guessing 6-8 ounces is how much I use and I usually use rotini. 			<description>This is a quick and flavorful dish that I pieced together from a half-remembered cooking show. The licorice flavor of the fennel works well with the shrimp and red pepper. In addition to being fast, it also reheats exceptionally well.  I've always done the ingredients by eye, so all measurements should be treated as approximate.  With a little planning you can do a lot of the prep and cooking in parallel.

			<description>When I left school I worked in an Italian restaurant. For staff meals we were allowed various basic pastas, but we could pay extra for a more luxury meal, such as seafood etc.  Every Saturday, Id spoil myself and buy salmon pasta. Once I left the job, I would crave this pasta, so I had to try to recreate it as best I could. I do tend to vary the optional items depending on what I have in the fridge, but the basic stays the same. Crawfish Zerpa was the grand prize winner in the 1986 Times-Picayune Cooking Contest, created by Jacqueline S. Keller. This is a very rich and absolutely FABULOUS dish, crying out to be served at your next dinner party. It's not called for in the recipe but I like to add chopped green onions and fresh parsley just before serving. Serve with a big green salad tossed with a simple herb vinaigrette, and hot French bread and perhaps a nice Beaujolais. 			<description>This is quick, easy, and makes a great light dinner.  I love salads, and love to try to come up with something new that is still hearty, satisfying and easy.  I love to serve this with a hearty creamy white bean soup, or maybe a fresh garden potato soup or your favorite. Also, fresh grilled asparagus, grilled zucchini or marinated mushrooms or some green beans. I serve these pretty shells over a small bed of lettuce and let the fresh tomato vinaigrette be the dressing for that as well.  One last note ... you can use canned or packaged tuna (I prefer the packaged, much nicer texture), but I use fresh tuna for this.  It literally takes 5 minutes or less to saute, let it cool as you cut up and prepare everything else.  Stuffed shells and then drizzled with a fresh tomato vinaigrette over fresh greens makes a great salad option to that every night tossed salad.
