			<description>Something I whipped up the first time I needed to feed a big crew of  people.  It's simple, and a slight departure from the other southwestern pasta salads in the use of smoked mozzarella and fire-roasted tomatoes (a blessing that you can now get them diced in cans - saves me firing up the grill).  I like to use shell or orecchiette pasta for this as each piece tends to capture some other ingredient inside its curve.  As people expect to eat something aside from pasta salad at a meal (why I can't fathom), I try not to blow away anyone's tastebuds with heat.  If after tasting you want to accentuate the smokiness and heat, I would use a hint of ground chipotle. Well, regardless, I loved this because it combines all the flavors of a caesar salad without the calories. The arugula bumps up the flavor and the dressing on this is light and simple but still full flavored.
Now originally it didn't have chicken but one day I had 6 or so chicken tenders and decided to pan saute them and add it to the salad. 			<title>Shells Stuffed With Fresh Tuna Salad and a Tomato Vinaigrette</title>

			<description>This is quick, easy, and makes a great light dinner.  I love salads, and love to try to come up with something new that is still hearty, satisfying and easy.  I love to serve this with a hearty creamy white bean soup, or maybe a fresh garden potato soup or your favorite. Also, fresh grilled asparagus, grilled zucchini or marinated mushrooms or some green beans. I serve these pretty shells over a small bed of lettuce and let the fresh tomato vinaigrette be the dressing for that as well.  One last note ... you can use canned or packaged tuna (I prefer the packaged, much nicer texture), but I use fresh tuna for this.  It literally takes 5 minutes or less to saute, let it cool as you cut up and prepare everything else.  Stuffed shells and then drizzled with a fresh tomato vinaigrette over fresh greens makes a great salad option to that every night tossed salad.
