I hadn't had this in about 15 years (the last time my mom made it for me), so I made it the other night and couldn't keep my fork out of the pan after dinner.  Follow the recipe the first time you make it and then decide what you want to add (i.e. mushrooms, etc.) to make it your own.  My mom's recipe calls for a 16-oz can of tomato sauce, but I could only find 15-oz cans. This makes a lot, but they freeze wonderfully well, so makes it super if you like to make enough for two meals at one time, or easily cuts in half.  You will notice that I leave a lot up to you. I like the recipe because of the ease with which ingredients combine to produce an interestingly flavourful filling. Well, regardless, I loved this because it combines all the flavors of a caesar salad without the calories. The arugula bumps up the flavor and the dressing on this is light and simple but still full flavored.
Now originally it didn't have chicken but one day I had 6 or so chicken tenders and decided to pan saute them and add it to the salad. I hate the taste of commercially prepared spaghetti sauce. It is simple enough to throw together during the week, and special enough to be featured as part of a holiday meal or for guests. Adding the squash makes the whole thing rich and smooth, with a color and consistency similar to Kraft Mac'N'Cheese!  Delicious!  Even my daughters loved it!
