Macaroni and Cheese for Grown-Ups

This is a great side dish or main course. I say for grown-ups, but anyone can enjoy it. Use your choice of cheeses, I like Smoked Gouda, Swiss, Chedder and Munster. Thanks to Alton Brown for the idea of Panko on top as a crust.

I don't remember where I got this but I think it was my Nana. -- posted by Lauren4372

I found this recipe on an advertisement page for 'McCormick Gourmet Collection' spices. This recipe sounded pretty good, though maybe a little labor intensive for a week night!
Spinach Stuffed Shells

I love to make these stuffed shells. They are a favorite with my family. This recipe tends to make an "over-stuffed" shell which is what I like about it.

My first intro into sctach cooking was this recepe, given to me by of course--- My Mother back in 1986 as I started my Kitchen Madness. With it now 2009, I'm guessing I have shared this with probably 30 friends & co workers. I still love its taste as do many others.Furthermore, one can modify to taste very easily or what is available in the cheese drawer at any given time. -- posted by raminkc

This recipe will make a lot so you can freeze half for another meal. Just split the prepared shells and sauce between two smaller casserole dishes. Wrap one casserole dish well in aluminum foil and freeze for up to 2 months. To serve, thaw overnight in refrigerator and bake 15 minutes longer than directed.
Algerian Tli Tli B'djedj - Pasta With Chicken!

This is our family recipe for the very traditional Algerian dish tli tli. You can make tli tli with chicken or meat - the meat recipe is slightly different & I will post it later. You can use any tiny pasta for this but traditionally homemade tli til pasta OR orzo / bird's tongue that is used. My kids love it when I use the tiny stars or shells also. Traditionally we steam the pasta for this but you can cook it for 4 minutes or so in plenty of lighty salted water before adding the sauce - the pasta needs to absorb quite a bit of the sauce so keep it undercooked.. -- posted by Um Safia

Crock Pot Carne Guisada

We love carne guisada around out house. This is a really easy recipe!
FYI: I always go to my local meat market and have them cut a good looking rump roast into stew meat. It saves me the time of having to cube the meat myself and that way i get to pick out the best cut of meat. Also, if you like spicy, leave the seeds in one or two of the jalapenos. -- posted by Melanie2590

Baked Sausage-Stuffed Jumbo Pasta Shells

A Canadian Living hit with the Ontario ZAARians, at our Annual Appy-fest. While this recipe actually calls for mild Italian sausge I used Bajan-seasoning called Delish-Dish in a meatball stuffing. I doubt that many ZAARians have "Bajan Delish-Dish" in their pantry. To stay true to the original recipe, therefore, I shall post the recipe as it appears in Canadian Living.. I like the recipe because of the ease with which ingredients combine to produce an interestingly flavourful filling. Can be used as a main course, or appetiser. -- posted by TOOLBELT DIVA

Stuffed Shells

A hearty and satisfying meal that is sure to please everyone in the family, even the vegetarians. A perfect supper for a crisp fall evening. Pair it with a green salad, and you are good to go. My youngest son, Justin, does not like tomato sauce; I cook his shells separately placing some milk in the bottom of the dish so they stay moist.

Tip: For a change of pace, add fresh chopped spinach, prosciutto ham, fresh chopped mint, and some pine nuts to the cheese mixture. Fill some of the shells with the basic mixture for the kids and fill the rest with the additions for the adults or adventuresome eaters. My grandmother always included fresh mint; it adds an unexpected and worthwhile lift.

Time Saving Tip: Double the recipe and freeze the extra shells for dinner at a later date. These shells will keep well in the freezer, and you do not have to defrost, just add an extra 10 to 15 minutes to baking time.

"not so Italian" Butternut Stuffed Shells

So stuffed shells don't always have to be all cheese, spinach, tomatoes, beef or sausage. This gives a nice lighter version, with none of the traditional parmesan or mozarella cheeses. It is a rich - but lighter at the same time dish. This is great served as a nice light "NO meat" dinner with a fresh arugula salad or fresh fall salad with diced apples and pears and a tangy honey vinaigrette would be amazing with this dish. Originally, I had this dish at a small dinner party quite a few years ago. The host hated tomatoes and most traditional Italian dishes, so this was her version of stuffed shells. Well I loved it. She served it with sauteed spinach and a fresh simple tomato salad on the side. I was lucky enough to get the recipe and with a few changes over the years for my taste, this has become one of my favorites. -- posted by SarasotaCook

Sarasota's Light Version of Pasta Caesar Salad With Chicken

This originally came from a cookbook which I sold. I think Cooking Light or Prevention Magazine, but I just copied the recipe on a index card so this is all I have. Besides I think I changed a few things along the way.
Well, regardless, I loved this because it combines all the flavors of a caesar salad without the calories. The arugula bumps up the flavor and the dressing on this is light and simple but still full flavored.
Now originally it didn't have chicken but one day I had 6 or so chicken tenders and decided to pan saute them and add it to the salad. I love the extra flavor of the breaded chicken to the salad. -- posted by SarasotaCook

Vegan Spaghetti Casserole

This is a nice change from the typical burger or parmesan topped spaghetti sauce. Easy, tasty and the kids like it! I also like that it is a one dish meal. You can use any small pasta in place of the wheat. I use home canned tomato puree but you can replace that with two 28 ounce cans of tomato sauce and 2 cups of water. Serve on top or on the side with frozen corn that is steamed. -- posted by RussianMama

Three-Cheese Jumbo Shells

This is a Taste of Home recipe that I found in their ground beef cookbook. I love that it features a super simple tomato-beef sauce. I hate the taste of commercially prepared spaghetti sauce. It is simple enough to throw together during the week, and special enough to be featured as part of a holiday meal or for guests. I haven't tried it yet but I would imagine this would be a good recipe to make ahead and then freeze, or refrigerate overnight and bake after it is thawed if you are short on time. -- posted by Megan V

Ultimate Vegetable Stuffed Shells

This was sent to me by a friend a couple of years back. And according to her ... she found it on the web. Being a vegetarian she was always looking for some unique ways to enjoy traditional dishes since her boyfriend was a "meat eater.". Now her pasta, and cheeses were tailored to her diet requirements so I tailored it to mine. Now if you want, you are welcome to make your own tomato sauce, etc. and I do sometimes, but there are some quality pasta sauces out there. When my tomato plants are flourishing, absolutely make my own sauce. I changed a few ingredients, but these are definitely worth it. It is a little work but so well worth it and you will certainly have leftovers. I served a chilled romaine salad with a blue cheese vinaigrette and some crusty Italian bread with a basil butter.

This is good for a weekend dinner, or company. They also freeze very well. -- posted by SarasotaCook

Shells Stuffed With Fresh Tuna Salad and a Tomato Vinaigrette

This is quick, easy, and makes a great light dinner. I love salads, and love to try to come up with something new that is still hearty, satisfying and easy. I love to serve this with a hearty creamy white bean soup, or maybe a fresh garden potato soup or your favorite. Also, fresh grilled asparagus, grilled zucchini or marinated mushrooms or some green beans. I serve these pretty shells over a small bed of lettuce and let the fresh tomato vinaigrette be the dressing for that as well. One last note ... you can use canned or packaged tuna (I prefer the packaged, much nicer texture), but I use fresh tuna for this. It literally takes 5 minutes or less to saute, let it cool as you cut up and prepare everything else. Stuffed shells and then drizzled with a fresh tomato vinaigrette over fresh greens makes a great salad option to that every night tossed salad. I don't like this as a cold salad but room temp, I find the room temp really accents the flavors rather than hides them. -- posted by SarasotaCook

Stuffed Jumbo Pasta Shells

This is an extremely easy recipe for one of my favorite meatless Italian meals. You can use this as a basis for many other wonderful, delicious meals. Add your own ground Italian sausage right in with the cheese mixture. Choose your own sauce, or any one of the delicious onee on the shelf of your supermarket. You'll love this, and your own touches will make it special!

Note**: Add the salt to the water in which you will cook the pasta only AFTER the water has come to a boil. If you add it to the water before it boils, it will hinder the boiling process. -- posted by FLUFFSTER
