Curtis' Mac and Cheese

Provided by Curtis Stone at http://curtisstone.com. I know this idea is not new but it was wonderful! Ate only a small taste and was very proud of my "find"- it was luscious! Three different kinds of cheese, add a little bacon, something green - like peas and some nice spicy flavoring make for a wonderful side dish or main dish.;) I added horseradish cheddar, which is amazing and zippy! Serve it with your favorite wine or champagne, or on a cheese tray cubed - there are many uses for this cheese with a bite! :) -- posted by Manami

Fresh Veggie Pasta

I have been making this pasta for quite a few years. It is great to serve for a dinner party or cut recipe in half for the two of you...you will still have left overs and is just as delicious a couple of days later too.. It is always a big hit and very appealing to look at. Great vegetarian dish, low in fat, low in calories. I serve it with fresh focaccia bread and my own herb infused olive oil. -- posted by Chef #1342204

Penne and Tuna Pasta Salad

I hope you like this recipe as much as I did. Cook time equals cook time for pasta.
Italian Broccoli & Pasta

This quick, yummy, fairly healthy recipe came from the internet (can't remember the site) and I modified it to our families taste. My Italian hubby grew up on this (although I make it a tad differently). We eat it as a main dish, although you could easily eat it as a side for any kind of meat or fish. Adjust the broth to your preferences, my husband likes it soupy, so this version has a lot of broth. -- posted by hmtheLords

Pesto Louisa Carbone

Not your typical pesto -- but outrageously delicious! This is my husband's grandmother's recipe. In 1986 it was published in a cookbook entitled *Italian Provincial Cookery* by Bea Lazzaro and Lotte Mendelsohn. Louisa was a shepherdess outside of Genoa before emigrating to Massachusetts early in the 20th century; she substituted cream cheese (more readily accessible) for sheep or goat cheese after arriving in America. -- posted by L'ecole

I created this and it is delicious and dairy free! Pasta primavera is an Italian-American dish that consists of pasta and vegetables. A meat such as chicken, sausage or shrimp is sometimes added, but the focus of primavera is the vegetables themselves. The dish may contain almost any kind of vegetable, but cooks tend to stick to firm, crisp vegetables, such as broccoli, carrots, peas, onions and green bell peppers, with tomatoes. Pasta primavera is usually highlighted by light flavors, aromatic herbs and bright colors ('primavera' meaning the season of spring). Classic pasta primavera is based on a soffritto of garlic, olive oil, and Parmesan cheese, but versions based on a heavier cream or Alfredo sauce are also common. Though recipes for cold pasta primavera may be found, they are best classified as antipasti, or appetizers.
Pastas served with this dish are typically smaller shapes, such as penne, farfalle, rigatoni and fusilli. If using longer types of pasta, such as spaghetti or fettuccine, the vegetables are normally sliced in thin strips to match the shape of the noodles. -- posted by UmmBinat

This is a throwback from my vegetarian days. It's also a quick dinner when you don't want to go to the grocery store as I almost always have these ingredients on hand. For extra fiber, I sometimes throw in some chickpeas. I often top this with fresh basil and shaved parmesan and serve with a crusty bread. -- posted by cinamongirl

Sarasota's Ham, Pea, Penne, in a Fontina Cheese Sauce

This is a great way to use up leftover ham, some frozen peas and some pasta and you have an amazing quick dinner. Now I really think that a combination of the fontina cheese and the parmesan is what makes this good. You can use other pastas, but I happen to like the penne or the small penne. My favorite is to serve this with balsamic grilled portabello mushrooms and a good glass of red wine. NOTE: Using a fresh Tagliatelle or similar pasta would make this over the top. -- posted by SarasotaCook

This was one of those left-over improvs that turned up just perfect it got good feedback from my mum and my bro (a major good-review as he's hard to please with greens). Campbell’s soup along with some Chilli-cheese makes brilliant pasta sauce. Combined with some healthy greens and smoked sausage it makes an original tasting meal in pretty quick and easy fashion, the numerous ingredients are flexible so fire away. Feedback welcome! -- posted by J-mo Smith

Spaghetti Alla Puttanesca, Italian Style

I first was introduced to this recipe when I was reading the book, "Belong to Me", when the main character "would have sold her soul" for a plate of this. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese! Italians customarily do not use cheese in this dish; the cheese overwhelms the sauce and makes the anchovies more pronounced, unbalancing all the delicate flavours you just worked so hard to create. -- posted by The_Swedish_Chef
