			<description>Have no idea where I got this recipe some 40 or so years ago!  It was a favorite with my family.  I like to use couscous but it also works well with cooked rice.  The measurements, as listed, should stuff 4 &amp;quot;average-size&amp;quot; home-grown peppers.  If using particularly large or small ones, adjustments may need to be made.  Shrimp all those years ago were cheap.  But even still, sometimes the budget was tight.  Those were the times there was more couscous and less shrimp in the stuffing!! 			<description>This is a very old recipe that was my husband's grandmother's own creation.  She was well known for her cooking and baking.  I have been making this for over 40 years and always get raving reviews.  Once, a cousin gifted me with a very large glass bowl that had 8 smaller serving dishes.  She included a note that this was to become 'the family dinners rice custard pudding bowl' as everyone requested that I make it for all our gatherings!  For a creamier custard pudding, use Aborio rice or a medium grain rice; I prefer the short Aborio rice.  Never use instant rice.

			<description>This rice has been passed down in my family for at least four generations.  The cumin is the key to this recipe.  Use whole cumin, freshly ground.  Ground cumin looses it's flavor quite rapidly. If you must use cumin purchased already ground, try throwing in an extra teaspoon. But I really didn't want another appliance (rice cooker)... But this method is GREAT and foolproof! NO MESS, easy and you don't hav to watch like a hawk. I'm sure this would work for any kind of rice, but you'd have to adjust time and the amount of water.
