			<description>I started with a recipe a friend gave me ages ago and adapted it to what I had and what I felt like eating.  You could add some onions or garlic to the meat mixture if you felt like it, or use something other than mushrooms (or leave out that part entirely) if you don't want them.  Whatever flavour or brand of spaghetti sauce is your favourite will work, as long as it's not one of the ones with meat.  Excellent served with garlic or other crusty bread and a green salad. 			<title>Chicken Florentine Lasagna Rolls</title>

			<description>A twist on the standard lasagna dish. Fontina, fresh spinach, roasted chicken, cremini mushrooms and sauteed onions make this a great dish.  A creamy bechemel sauce and rolled lasagna rolls make this perfect.
I admit this takes a little time but worth it. Now I also take advantage of a grocery store roasted chicken for this or you can roast your own. But I do insist on fresh spinach and herbs, but why not take advantage of a little help ... I also get my mushrooms pre-sliced. Take a little help on some store bought items when you can. The fontina to me just adds lots of flavor, but if you can't find it mozzarella will work just fine.

Why do we love this lasagna? 
Let us count the ways: 

1. Lasagna can be a yawner, but this formula is outstanding yet utterly simple (especially the chicken and seafood versions). 

2. It's do-ahead, cheap and feeds a crowd. And almost everyone will eat lasagna. 

3. It can be frozen for a month or more. Simply thaw overnight in the fridge before baking. 

4. It easily retains heat for a half-hour, making it a good candidate for the buffet table.

			<description>Found this in a supermarket checkout cookbook years ago and it's still a family favorite. One important step is getting the water removed from the spinach as much as possible; after I drain it and squeeze as much out by hand I wrap it in a 4 layer pad of paper towels and squeeze it some more. Save the paper towels and use them later to dry off the noodles so they don't slide all over, this makes it a lot easier to spread the filling. I have listed 2% cheese and 1/3 less fat cream cheese but it started out being  made with the full deal, we don't notice any decrease in flavor (I've also made it without the egg a time or two when I ran out and it tastes the same and holds together OK). I also think the filling makes a good spinach dip if you leave out the egg. I used about three different recipes to approximate it, so here's my current version.  I made this for dinner the other night and it was fairly easy and very good.  This recipe is written for use with fresh Lasagna sheets, the ones that aren't dried and you don't have to boil or anything. The original recipe called for non fat cottage cheese and non fat ricotta, but I use low fat and part skim,  they taste better to me.  I also use the oven ready lasagna noodles, which weren't in existence back then. This recipe freezes nicely and the leftovers are wonderful the next day.  If you want, you can saut&amp;eacute; onions in some butter and serve on the side.  I would recommend using an 8x8 casserole dish and trimming the lasagna noodles to fit, but you can certainly use a 9x13; just add an extra sheet of lasagna to each layer. I don't like a lot of meat and I really HATE ricotta cheese so this is the perfect lasagna for me.  We make it with jarred marinara sauce and to make it taste less like store bought try adding chopped green peppers and simmer it for about ten minutes prior to assembly. 			<description>This is my favorite lasagna, and is always the one I go back to. It is &amp;quot;fairly&amp;quot; classic, but I enjoy the mix of turkey and sausage vs all beef or beef and sausage which can be a bit heavy to me. A nice mix of romano, parmesan and mozarella and some red peppers in the tomato sauce makes this just a bit unique. I have many different recipes, including ... a vegetarian lasagna, mushroom, spinach and kale, mexican, and seafood ... but this by far is my ultimate standby. I really call this my Classic Lasagna. This is what I do: Layers ... 1) meat sauce  2) noodles  3) meat sauce  4) ricotta mix  5) grated cheese  6) noodles  7) meat sauce  8) ricotta mix  9) grated cheese 10) noodles  11) meat sauce  12) grated cheese.  FYI ... These feeds a crowd, but I love to make it and then keep 1 or 2 pieces out for the week and freeze the rest. 			<description>This is a PHENOMENAL recipe from Fine Cooking.  I have made it for company and everyone raves over it.  It's labor intensive but SO worth it.  It either makes one huge pan or two smaller ones.  I have found that making the ragu the night before makes the preparation a lot easier. 

Two minor substitutions I have made:  (1) I use the already prepared ground chuck and ground pork from the meat section of my grocery store.
