Mommy's Instant Oatmeal

After making instant oatmeal from packs and trying to adapt the quick oats for years, I finally created this basic high octane (fiber & protein) recipe to fuel our mornings. To accommodate changing tastes and my desire to experiment I mix and store the basic recipe. The desired add-ins are mixed when I serve the cereal. The recipe can also be increased to accommodate OAMC. -- posted by TeresaD

Peanut Butter and Honey Bread

My family loves the combination of peanut butter, honey, and bananas, so I decided to make it into a bread. Make sure to use all natural peanut butter and feel free to add more chopped nuts or chocolate chips if you desire. This recipe works well for small loaves or muffins of any size. -- posted by sszz

Creamy Quinoa Mousse

VERY healthy dessert or breakfast. This is the kind of recipe where you like it or you don't... if you do, you're in for a treat (there'd no guilt, it'ts even good for you!!!). The texture is slightly fibrous, due to the quinoa. Can be served warm or cold, l prefer mine partially frozen (I place them in individual cups, then freeze for an hour). Adjust spices to your taste. You can sub the milk for soymilk (if using vanilla flavoured, omit sugar and vanilla from ingredients). -- posted by Génial Génie

Bircher Muesli

Bircher muesli was created in the late 19th century by Dr Bircher Brenner. He believed that combining fruit and unprocessed grains would dramatically improve his patients' health. The muesli is designed to soak overnight to activate the enzymes in the seeds and whole grains. Though a few minutes in the microwave with water also works well. -- posted by Agnes #2

Sarasota's Steak & Eggs With Pesto Bread and Tomato Relish

I love to take an ordinary steak recipe and make it affordable any night of the week. This is one of those. I love steak and eggs, but I also love to cook a tender good steak. So, this is one of those dishes. One (1) strip steak made affordable for 3, served over grilled pesto bread and of course topped with fried eggs and a tomato basil relish. This is such a quick easy dinner. It looks like a lot, but it is not difficult. Serve this with some grilled asparagus as a side dish for a great perfect dinner. -- posted by SarasotaCook

Celestial Oatmeal Cookies

Coconut Date Granola Bars

Fresh Fruit Quinoa "risotto"

Oddly, adapted from Men's Health magazine. Excellent for breakfast or dinner, and a good way to get the family to eat healthily. The juice adds a fair amount of sweetness; if it is still too bland for you, add some brown sugar.
Lemon Crumb Bars

Southern Breakfast Biscuits - Easy but Light and Fluffy

Having run through a range of biscuit recipes, this has become Kimberly's favorite way to have them. I'm not going to complain, they're lovely and fluffy, and if I have to make them, it's easy as pie.

They're a little crispy on the edges, top and bottom, deliciously soft on the sides, and almost impossible to get wrong.

All credit to the talented Kimberly for the recipe's creation.

Wheat Sandwich Bread from Amish Starter

I had an abundance of Amish friendship bread starter and wanted to try something different than the sickly-sweet quick bread recipes out there. I saw JanuaryBride's Sourdough French Bread - ABM (Amish Bread starter) at http://www.recipezaar.com/sourdough-french-bread-abm-amish-bread-starter-375789 and decided to adapt it a bit.

I have a Cuisinart SM-70 stand mixer, so my directions reflect this. Refer to your mixer's manual for the speed and duration to use for bread dough.

You can also use a bread machine on the French Bread setting. Follow your machine's instructions.

Keep in mind that the bulk of that prep time is idle time when your dough is rising and you can do other things. :)

NOTE: The starter ingredients at the beginning are here for nutritional info only. The system doesn't know the nutritional info for starter, so I gave approximate measurements of the starter's ingredients). -- posted by Gardenwife

Spicy Seitan

This is the seitan recipe I came up with after looking at two fairly popular recipes (http://vegandad.blogspot.com/2008/06/veggie-lunch-meat.html and http://www.postpunkkitchen.com/forum/viewtopic.php?id=15959&p=1). This recipe makes a nice sized (7 to 8 inches I suppose) sausage like loaf and can probably be easily changed to your taste based on what spices you use. Note: if you want it to be more like the former recipe (like lunch meat) cook it longer (30-45 mins steaming, 45 mins baking), if you're looking for a nice ground beef substitute 30-35 mins steaming, then another 30-35 mins baking is better. I've used the longer cooked seitan in stuffing and the lesser cooked in dirty rice. Both were thoroughly enjoyed by all involved! I hope you enjoy it too! -- posted by Raven D

BBQ Flavored Seitan

I wanted to make more a BBQ type seitan after the success of my spicy seitan, so I made a few modifications to my original recipe and came up with this.

I also made BBQ sauce for the first time and it turned out pretty good. Unfortunately I didn't really keep track of measurements, so I won't be posting that recipe right away.

Also, if you're making this on a large scale (the first time I made this I actually octupled the recipe) you're probably going to need to add more of the liquid ingredients (maybe 1 to 2 cups more of the mixture). You want the seitan to feel similar to a wet sponge.

Just like with my other seitan, how long you cook it will effect how hard or soft it is. Personally, I like this kind to be sort of like lunch meat, so I've included the times for making it a nice, soild, meat substitute. If you think you've over cooked it (it gets really browned), don't worry. Let it cool and bake it or fry it up later. The "skin" will soften when it's reheated. -- posted by Raven D

Vegetarian Stuffed Cabbage (Ww)

Although delicious this is a time consuming recipe -- the original recipe says 2 1/ 2 hours but I took 3 hours to make this plus the another 1/2 hour to reheat the next day --- so be prepared!
Better Banana Walnut Bread

I love banana bread! Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes. There are tons of low fat recipe options out there but the always take out the walnut. Removing them will take away from those "scary numbers" we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping.
Side Note: Many people use "Splenda" as a sugar substitute, if you get an icky aftertaste try Stevia, like "Truvia". I personally prefer "Sun Crystal", a mix of natural sugar cane and stevia. Ultimately, it's your choice. -- posted by Southern Kitchen Gardener

Mediterranean Barley Salad

I created this dish in an effort to find something I can pack and bring to work for lunch that will keep me feeling full. Nothing undoes the hard work of eating a healthy diet quicker than a growling tummy. Studies have shown that barley contains dietary fiber that can slow glucose absorption and control blood sugar levels. I’ve used it as the base for the dish along with nutrient-packed veggies and lean protein. I suggest serving the salad at room temperature. -- posted by Diet It Up

Brother Juniper's Cajun Pepper Bread

Delicious bread from Brother Juniper's Bread Book. Excellent when paired with savory foods or just by itself (with butter, of course). I often use half the amount of Tabasco for those with a little milder mouths, because the full amount is SPICY! As noted, I use the Trader Joe's frozen pepper medley, but you can also use fresh, cans/jars or even pimientos.
Elegant Tarragon and Tomato Butter Tea Sandwiches

These delightful and rather unusual tea sandwiches combine the delicate French herb tarragon, with ripe tomatoes, garlic and shallots – a change from the usual basil and tomatoes. The tomatoes are gently poached with all the seasonings until a thick puree or butter is obtained; the tomato butter is then cooled and you are left with a wondrous sandwich filling, bursting with flavour and colour! The butter can be used for all manner of things, including a topping for a pizza or for toasted sandwiches. Use fresh bread, white or wholemeal, and garnish with fresh tarragon leaves. Any excess butter can be stored in an airtight container for up to a week in the fridge. NB: Prep time includes chilling time for the butter. -- posted by French Tart

Victorian Watercress Tea Sandwiches for High Tea and Picnics

During Victorian times, children used to take watercress sandwiches to school in place of meat ones. I love them, especially when cut into small trianges and served with a cuppa (cup of tea!). Use the freshest bread - I like to use wholemeal, and a fresh salted farmhouse butter. I have inlcluded a soup idea at the end of the recipe, to be made with the excess stalks!
Peanut Butter Granola

Here's a healthy granola that doesn't have a lot of oil, but has a lot of good-for-you ingredients in it. It's good sprinkled over vanilla yogurt or with milk -- or out of hand as I walk through the kitchen! I bake it at 325 for about 40 minutes, but my oven is going wonky, so I put the recipes original instructions here. You can substitute orange or cranberry juice for the apple juice.
