			<description>I ran out of ideas one night and got tired of hearing &amp;quot;I don't know&amp;quot; when I asked my family what they wanted for dinner.  So when I told them I was making this, I got funny looks. Let's just say there was very little left for leftovers that night. :) The only suggestion I got was my son wanted to try this with broccoli next time.  Sure helps stretch the budget. 			<title>Garbanzo/Chickpea Pumpkin Macaroni Casserole</title>

			<description>Spicy goodness! Pumpkin's not just for dessert anymore either-- and this is a fun casserole that has elements of Latin and Middle Eastern cooking.  Best of all, you don't even have to use the stove to make the sauce! It is a very thick and rich sauce. The pumpkin base is very hearty and delicious, and is jam-packed with Vitamin A and lycopene. The garbanzos (chickpeas) are loaded with protein and cold-press olive oil is good for your heart (so it's a good fat instead of bad fats like in vegetable oils and shortening.) You won't believe this yummy casserole is healthy. :) This is a totally vegetarian dish, but if you want to vegan-ize it, you can use soy, hemp or almond &amp;quot;cheese&amp;quot;, skip it altogether, or use some soy silken tofu. Meat lovers might want to throw in ground beef, and/or use chicken or beef stock/broth instead of veggie broth. I made this up myself, and love it! 			<description>Mac n&amp;quot; Cheese made different in that it uses Fontina and Marscarpone cheese. I have adapted this recipe which was loosley based on a recipe from Cooking Light.  Since I always have Marscarpone floating around, it was a given that I would try this recipe. The soft fontina problem can be solved easily by placing the fontina in the freezer for a half hour.  Fontina definately comes from the smelly cheese family .  Some options:  You can add more nutmeg and tabasco for more of a  kick...add some parmesan cheese for part of the other cheese....adding some ham.  I always seem to have whipping cream or half and half around...I would finish this up and top it with the 1% milk. (definately takes the recipe out of the &amp;quot;light&amp;quot; catagory!!) Marscarpone cheese too expensive?  Try Recipe #66077. 			<description>My family adores this, and it reheats quite nicely. This is *NOT* a low-fat recipe. I use cream when I have it on-hand, or a combination of cream and milk. I use whatever cheese I have on-hand, or I will pick up blocks of cheddar and/or Monterey jack, basically anything that will melt nicely. I avoid using the pre-shredded cheese, because they have a dusting of flour to keep them from clumping in the bag, and throws off the recipe in use. Tool cleanup gets interesting, too. 			<description>Tweak the spices to your liking.  I like it also without the paprika, but garnished with a sprig of fresh rosemary.

Also try making it cheesier or adding or substituting cheeses.  I've made an excellent one with brie. I've also used canned tuna instead of chicken for a quicker version.

I have also experimented with different seasonings and rubs for the chicken or tuna, including celery salt, cayenne, rosemary, cumin, etc.

Changing the pasta also greatly changes the flavor as well, in my opinion.

Can be made with dried spices but I recommend fresh!

			<description>Wow!  This is comfort food at it's finest.  I stirred in ham before baking, but skipped the bacon topping.  I also didn't put the breadcrumbs and melted butter on top, and it was still heavenly.  I cooked my noodles only until slightly underdone so they wouldn't be overcooked but you decide how you like them.  If you use processed cheese (like Velveeta), the recipe says to omit the bread crumbs. A friend of mine challenged me to find a mac &amp;amp; cheese recipe that wouldnt leave us feeling like we ate our entire body weight in fattening dairy. I know it sounds strange to use squash as the base for the cheese sauce, but it actually worked. The dish doesnt taste like squash. Its nice and creamy with a crispy, browned top.
