			<description>When I was a kid my dad came home form work one day and told my mom we weren't going to eat red meat anymore. This coming from a meat and potatoes type of guy was quite surprising to say the least. At that time my mom switched from white rice to brown as she feared we would need an extra nutrient boost. That change didn't make me to happy...brown rice was not at the top of my favorites list. So one day we jazzed it up a bit. Hope you like what we came up with. My family does. Definitely use a low-sodium soy sauce unless you love salt! 			<description>This is adapted from a recipe shown on a Good Eats episode (Alton Brown). I was never happy with brown rice, because it was always too hard and never quite absorbed enough flavor. The first time I made this, I was hooked. I am giving my adaptation, however the original is simply rice, water, butter and salt. It's the method that makes this one incredible. Sometimes I exchange part of the water for fresh lemon juice and toss in some slivered almonds and drop the veggies (excellent with curried shrimp). Other times I use chicken broth, add sesame oil, soy sauce, and fresh peas and use it as a mock fried rice. Making it with chicken broth walnuts and dried cranberries is nice with turkey as a holiday side dish. It's great to bump up the &amp;quot;healthy&amp;quot; factor. 			<title>Rice Stuffed Sunburst / Patty Pan Summer Squash</title>

			<description>Recently they have been selling some pretty large patty pan squash at the farmers' market, much larger than the little baby ones you often see roasted or grilled.  I didn't want to just cut them up like regular squash so I searched around and found quite a few recipes for stuffed versions, baked in the oven.  Didn't find one with rice though.  This started as a recipe on about.com, but morphed as I have made it a few times, into what it is now.  This only makes 4 squash, but you could easily double.  You could make this a very substantial main course for a vegetarian if you added some protein.  Note that the amount of rice is actually more than you'll need, by about 1/3 of a cup, we all really like the rice though so it's nice to have extra.  In fact we like the rice so much I have doubled up that part of the recipe and used it for another meal.  All depending on what you're serving this with, you could easily adjust the flavours, (ie I'm thinking feta, lemon &amp;amp; marjoram to go with greek).  This is a small enough side dish that I can cook it in my toaster oven.  Next is to try it on the BBQ. 			<description>My cat, Fee, is 22 years old(!), blind and has kidney disease, but his quality of life is still great thanks to daily subcutaneous fluids, a special diet, and daily supplements that lower his BUN and creatinine. For a change of pace from Fee's usual (costly) prescription diet, I occasionally make this for him. 

Diabetics need fiber and kidney kitties need to limit protein.  The inclusion of brown rice addresses these issues.

The ingredients as given are minced, but I drop everything into my Magic Bullet yielding the consistency of pate. You can freeze portions, too - handy! They called for a package of their Yellow Curry Rice and I changed to use what we have on hand (big tub o' Mae Ploy yellow curry paste &amp;amp; brown rice LOL). That also includes substituting a handful of sultanas or fresh cranberries for the dried cranberries as needed. 			<description>Although this recipe sounds like another one named similarly, it has different proportions so be aware they are different.This recipe is for a unique appetizer with a southwest kick. Fun to make and fun to eat. Very simple ingredients but delicious. These were eaten so fast and everyone wanted the recipe guest and family alike. The rice gives it unique texture. I use cheddar pepper jack so you can too if you have trouble finding just pepper jack. Further, I used Japanese sticky rice (not Uncle Bens or the the like) and Tostitos salsa but you can sub in your favorites. The sticky rice really binds it. Picture coming. Enjoy! 			<description>I have tricked several wheat eaters with this recipe. Very tasty and not gritty like typical gluten free recipes. Our normal grocery store carries soy flour and shouldn't be too hard to find. Definitely worth using! Adds protein and fiber and I think it helps with texture. You could probably get away with omitting the teaspoon of guar gum, but I have it on hand and use it.
I've used both milk, lactaid and soy milk for this recipe without any problems. I have also used pure pumpkin and pumpkin pie mix (this will make the batter more watery, so bake a little longer).
