You can adjust the spices to suit your taste. I use more, because I like it hot.

			<description>This is a family favorite that I learned from my Mom. It has been passed down and I am sure it has changed over the years, but everyone that has it loves it.  I use it anytime I need a nice side dish in a pinch!! The left overs reheat nicely and never stick around more than a day or so!  I tend to cook by sight, so I did my best to approximate the measurements. I like to make this with fried chicken, grilled salmon, pork roast,etc with a fresh salad or veggie. I've loved homemade mac and cheese since forever, but finding one that my family would enjoy hadn't worked until now.  I've tried recipes from all sorts of cookbooks: Martha Stewart's, Better Home and Gardens, and too many others to list.  I'd given up hope until I found this one.  This is a keeper!  My daughter and I did have trouble finding asiago cheese in our small West Texas town, so she drove to San Antonio and bought some for me. 			<description>Chill a beer for this nice and spicy dish!
The elbows should be cooked al dente in well salted water to prevent broken mushy noodles. Do salt the water liberally. (2 teaspoons is not a lot once mixed with the rest of the ingredients) Seasons the pasta and avoids father salting in the recipe.
This can be eaten as a side or a main balanced meal.
