Ravioli With a Wild Mushroom Creamy Alfredo Sauce

My daughters and I are total Twilight fanatics. To celebrate the release of the dvd, we all got together for dinner before watching the movie. For the entree, a recipe for some type of Mushroom Ravioli was a natural choice since this is what Bella ordered when Edward took her to dinner. After searching online, I found a casserole type recipe for ravioli that had a mushroom sauce. A salad and Recipe #362337, named after the color of Edward's eyes, completed the meal. We thought the original recipe as written was a little on the bland side. So I went to the Italian forum asking for help with the recipe and Chef Dee514 was kind enough to give me suggestions for the recipe. I have now made the recipe incorporating her ideas and although it wasn't suggested, I did opt to leave in the container of alfredo sauce. Much better than the original recipe I had posted and I hope you'll think so too! Huge thanks and hugs to Dee514 for all her help!! :) -- posted by Dreamgoddess

Baked Tortellini With Italian Sausage

Recipe is originally from Aylmer's Tomatoes (back in the day when you snail-mailed to order a recipe book). Over the years I've tweaked the ingredients to our preference. I couldn't find this recipe on the web even so I'm posting to share with other Zaar members. The recipe doesn't call for garlic, however for those that enjoy it... mince away. -- posted by Mustang Sally 54269

My mom was cleaning out one of her closets and came across several folders full of recipes that she had clipped from magazines and newpapers over the years. I'm not sure what publication this is from but it's really good.
Caesar Salad With Tortellini and Asparagus

I was thumbing thru an old Summertime Southern Living magazine and found this recipe..I made it for dinner and we loved it...putting it here for safe keeping.
Quick Tip: Start with hot water for faster boiling and cook fresh pasta and asparagus together in the same pot. This does not work for all pasta dishes, but works well here since cooking times are the same. -- posted by CIndytc

Pierogi Filling

I grew up on Mrs. T's, never knowing what a homemade pierogi tasted like. I still have love for Mrs. T's, but there is nothing like a homemade pierogi; it's the ultimate comfort food for me. I won't bother to put up a dough recipe since there are so many good ones out there but I will advise never to trust a pierogi dough recipe that doesn't call for sour cream. So here are my recipes for potato and cheese, cabbage, and meat fillings. I try to cut a few corners since making pierogies is an all day event. They are all my own creations with the exception of the hunter's seasoning mix which I found in a traditional polish cookbook called "Polish Holiday Cookery" by Robert Strybel. You can make your own mix by using the instructions below or order the seasoning mix from an online food exporter or specialty store. -- posted by OwlMonkey

Lazy Mom's Lasagna

I found this recipe on the DisneyFamily food site. It is way easier than regular lasagna and tastes just as good. My kids don't care for the regular lasagna because they don't like ricotta, but they do love this one! Sometimes, I put some julienne carrots and zucchini in it too. It is very good that way as well as plain. Very much less work involved compared to the usual lasagna. Cooking time includes the 10 minutes for browning the ravioli and to saute' the veggies. -- posted by OceanLuvinGranny

A quick any night dinner fix when you are short on time and don't know what to make - from June 2009 TOH's Simple and Delicious. CAN be adjusted to suit your tastes and what's in the fridge/pantry! Recipe calls for frozen peppr strips, thawed.
Confetti on a Plate – Italian Garden Tortellini

In the blue-collar towns where I grew up the Italians were known for their colorful, productive gardens where they raised large amounts of food on tiny, urban plots. This colorful pasta dish, loaded with just-picked summer vegetables, is a tribute to that memory. But if fresh vegetables and herbs are not available you can use frozen veggies or dried herbs (1/3 as much). The recipe can easily be halved or doubled and it holds well for potlucks and picnics. Feel free to adjust the amounts and types of vegetables to use the fresh, seasonal items you have on hand. The goal is a colorful variety of flavors. -- posted by 3KillerBs

Very yummy and easy fried ravioli. Feel free to use your own homemade ravioli, I had coupons for Buitoni so I got their whole-wheat 4-cheese ravioli, it turned out great. Using this to make fried gnocchi works well too! (I especially love frying up whole wheat pumpkin gnocchi.) Makes an awesome kid pleaser, comfort food, and party favorite. -- posted by the80srule

Delicious Veggie & Herb Ravioli Soup

I received this wonderful recipe from my sister. I love that the only preparation needed is to chop up some garlic and herbs. I really like flavor of this soup's base as it is seasoned with garlic, herbs, tomatoes and chicken. This is a great meal to make when time is short. Lastly, I do not care for red peppers. In most recipes, I won't include them. Thankfully I tried this with the red peppers included, and I can't imagine this soup without them. -- posted by Leilani

Shrimp Ravioli With a Tomato Vodka Cream Sauce

I have been making these for years - ever since I moved to FL where shrimp is so affordable. They are light and creamy. Wonton wrappers make this easy to make and the creamy sauce is a quick 10 minutes on the stove. I often make these ahead and freeze ... then when I need them, just pop them in some boiling water, heat up my sauce, and dinner is ready. Serve with a traditional crisp salad (I happen to like a grilled romaine salad) and then of course some crusty garlic bread. A nice twist to the traditional cheese or beef ravioli. -- posted by SarasotaCook

Cheese Ravioli, a Creamy Pea Puree and Balsamic Mushrooms

Easy and quick and a lighter dinner. Now you can make your own ravioli, which I do quite often, but sometimes, I just buy a good quality fresh cheese ravioli - there are so many available these days. A pea puree makes this a bit lighter than a heavier tomato sauce and topped with simple broiled balsamic mushrooms (and yes take advantage of a bottled balsamic vinaigrette) and of course parmesan, make this a great dish. Serve with some fresh tomato slices, your favorite dressing (I happen to like Nakano Seasoned Rice Vinegar (Basil and Oregano) no oil ... healthy and has all the flavor. Then you have to have some crusty bread to top it off. Fifteen minutes and on the table. Now, this is a quick "homemade" dinner, so take a few short cuts. You still get a great homemade dinner on the table in no time. -- posted by SarasotaCook

Quick Ravioli Soup

Ravioli With a Cranberry, Date, Walnut & Pancetta Sauce

This came from a friend who owns a restaurant in Colorado, however I recently found the same recipe on "The Kitchen" website, so, all I can say is... it's a great dish whoever the chef maybe. It is simple and quick. The key is to use a good fresh ravioli. Now The Kitchen website recommended, spinach, mushroom or cheese ravioli, but I have used the mushroom which is my favorite, and have also tried a 4 cheese which is very good. I have a local Italian market that sells wonderful fresh ravioli, but Buitoni brand, also sells fresh ravioli which can be found at most major grocery stores. Butoni has a great variety of cheese, 4 cheeses, mushroom, spinach and chicken, even a whole wheat cheese variety which is very good with this. Also, Whole Foods carries a variety of fresh pasta as well. But there are many brands available these day, so just use your favorite. Serve with an Arugula salad with shallots and a honey balsamic vinaigrette and a crusty toasted baguette. -- posted by SarasotaCook
