Garlic, Herb and Smoked Ham Tagliatelle (Ww Recipe)

We have had this a couple of times over the years when I have been off and on Weight Watchers. It is a nice way of having a bit of a cream pasta meal without having to worry much about the fat grams. I got it from a WW cookbook put out by the UK version of WW a number of years ago. The recipe claims to be 11 points for the whole recipe but I know that UK points and USA points are worked out differently. -- posted by Sarah_Jayne

Pasta With Chicken, Mushrooms, and Garlic-Wine Sauce

Simple ingredients make this good for busy nights. This dish is one of my specialties, and since finding the recipe on a pasta box years ago, I've been changing and refining it to this final product. This recipe makes enough for 3 or 4 servings, but it is easily doubled or tripled for a crowd. The computer didn't recognize the pasta mix, but I've used both Near East and Pasta Roni brands with the same result. -- posted by Kim_150

Christmas Vacation Manicotti Casserole

When the whole family is home for the holidays, it's nice to have several recipes on hand that you can put together in the afternoon while they're off doing something else, and then be able to sit down together at the table for supper. This recipe is one of THOSE....put together and gather 'round the table to inhale it! Better double this recipe when you have a crowd! The crusty top will be so inviting you'll be drooling from just looking at it!
Mushroom Spinach Lasagna

From Cooking Pleasures Magazine This is a vegetarian lasagna that can be made for OAMC. To add some variety, try using some wild or exotic mushrooms instead of plain button mushrooms. If you use portobellos, scrape out the dark gills before you slice them, or your sauce will discolor. Directions are included to either make 1 9x13 pan, or 2 8x8 pans. -- posted by IngridH

Vegan Mushroom & Bechamel Lasagna

This is a decadent lasagna for special occasions. After trying to make it low fat, I finally figured out I needed a rich bechamel sauce I love in order to make a lasagna I love. I began by adapting Ina Garten's buttery bechamel sauce to a vegan one, and then tinkered with the rest until I had a creamy lasagna with lots of fresh mushroom flavor. Hope you like it. -- posted by vecca

Pesto Mushroom Lasagna With Fresh Mozzarella

I was inspired to create a pesto lasagna that is meatless but still tasty and satisfying.

The key is the fresh lasagna noodles--- these are great because they don't require boiling, you just bake them. I also prefer the taste and texture of fresh lasagna noodles, but if not available you can absolutely substitute with dried. -- posted by Chef #1153139

Free-Form Lasagna With Wild Mushrooms and Parmesan Cream

I found this recipe in the Chicago Tribune. It's based on a recipe from "Mushroom", by Alastair Hendy. Bravo, Alastair! I've made two servings at once, but I think anything more than that should be made in batches. I subbed half-and-half for the whipping cream, for a slight calorie saving. Use whatever mushrooms you like - I used oyster, shiitake and button. Use fresh herbs in this dish, because of the short cooking time. Even parsley would be preferred to dry herbs. -- posted by duonyte

Spaghetti With Lentil Bolognaise

A versatile vegetarian bolognaise and a great way to get some nutritious lentils into your diet! Adapted from a recipe I found online. I love the vegetables that were in the original recipe but you could vary them depending on what's in season, what's reasonably priced and, of course, to meet your taste preferences. I just had to add a leek as I love the subtle blend of flavours from onion, garlic and leek cooked together. And when I made this I used probably double the 15 mushrooms included in the original recipe! :) Vary the herbs to meet the whim of the moment! -- posted by bluemoon downunder

Korean Chicken Soup

Food & Wine Magazine, December 2008 edition - Perfecting Chicken Soup, recipe by Grace Parisi. It is a deeply flavorful broth and we enjoyed it ever so much :) and have even put it on the menu at our Cafe Ponce. We serve this with a salad, homemade bread or some sort of biscuits (I know) but the residents' like biscuits and we use different recipes to see which they prefer. We also had to make a few changes with the soup but that is when we are making it for the whole home, as we have chicken soup twice a day! When we make it for the Cafe - it is the real thing. It also works on colds like Jewish Penicillin ;) -- posted by Manami

Wild Mushroom & Onion Manicotti With an Asiago Sauce

Wild mushrooms, caramelized onions, creamy ricotta, tangy cheese, fresh herbs make this a great dish. Now I prefer whole wheat manicotti if you can find it. I found some at Whole Foods which I love, but if not, good ol' Ronzoni or Muellers or any brand will work just fine. To me it is just a nice option to the tomato based manicotti or that with beef or chicken. I just enjoy the change of having a lighter vegetarian dish now and then even though this has a rich cream sauce. You can certainly use a heavy cream vs milk, or even a combination of the two if you want even a thicker sauce, but the the comibination of the wild mushrooms and the Asiago make this a rich dish. -- posted by SarasotaCook

Delicious Veggie & Herb Ravioli Soup

I received this wonderful recipe from my sister. I love that the only preparation needed is to chop up some garlic and herbs. I really like flavor of this soup's base as it is seasoned with garlic, herbs, tomatoes and chicken. This is a great meal to make when time is short. Lastly, I do not care for red peppers. In most recipes, I won't include them. Thankfully I tried this with the red peppers included, and I can't imagine this soup without them. -- posted by Leilani

Beef Stroganoff (With Make Ahead Directions)

This is a wonderful, rich dish which can be made mostly from pantry staples. It takes almost no time to make, yet tastes like you spent a lot of time on it. It's also versatile- I use this sauce (without the sour cream) for Salisbury Steak. If you want to take it upscale for company, try using sliced beef tenderloin. It's also a great way to use up leftover beef, just cut into thin strips, skip the steps regarding cooking the beef, and add it into the sauce a few minutes before serving so it has time to heat through. -- posted by IngridH
