I used cottage cheese instead of ricotta, but whatever you have on hand or prefer.  I didn't use a nonstick skillet, and I found a 12&amp;quot; skillet wasn't large enough. 			<description>This is a combination of several recipes I've experimented with from different sources.  I think I've finally perfected it.  I think the fennel seed is critical, giving the sauce a unique flavor.  Slowly cooking the sauce is key in my book.  Take your time, and you won't regret it.  I like my lasagna rich and a little more dense than typical so I skip any sort of egg mixture and I go light on the ricotta.  I think spinach is a must for lasagna, and makes you feel less bad about eating it.  There is really no need for a side dish here. 			<description>Years ago, Mid 1990 I think. I was sitting around talking about how the Pizza chains had come out with BBQ Pizza when I got the idea of BBQ Lasagna. I was inspired by the pizza, my Italian family upbringing and my southern living as an adult. This may sound strange at first but everyone I have served it to for the past 10+ years loved it. I start by cooking a large 6-10 lb Boston Butt on the smoker ahead of time slicing off some for a diner and then pulling the rest for pulled pork sandwiches and of course BBQ Lasagna. If you are already accustomed to pulled pork you are ahead of the game. If not there are many great smoked Boston Butt/pulled pork recipes on the web.  If this seams like way to much work (smoking/ barbequing is a sport and requires lots of time and beer) then there is ready made pulled pork alternatives sold in most grocery stores that could be used.  Here is one I see in the stores. Lloyds BBQ Pork, search lloydsbbq.com http://www.lloydsbbq.com/products_shredporkbbq.aspI have not tried this but Im sure it would be pretty good. I will stick with smoking and pulling my own.  The same can be said for BBQ sauce. There is lots of good recipes on the web or use your favorite store bought brand. You can go spicy or sweet the choice is fully yours. Fact is you will find that you can vary this entire recipe many different ways using your favorite Lasagna recipe if you already have one. I like to think of this more as an Idea then a recipe. You can even trade out BBQ pulled Chicken, Beef etc. I will not use exact measurements for the pork or BBQ sauce as like I said I always make a lot and use what is left for other meals. I would guess I use somewhere between 1-2 lbs of pork in the Lasagna. I mix plenty of BBQ sauce to my pulled pork in a sauce pan and bring it to a slow simmer. (Dont burn) You just want the meat good and wet with the sauce and enough to simmer but not so much it is soupy. It should be very meaty. On the flip side if you choose a real thick sauce you may need to add a little water to thin it out. When I made this recipe, I only needed one box of lasagne noodles because the veggie mixture was so plentiful that I couldn't fit in another layer. The flavor is great, and I think you could use rotini noodles and bake it in a casserole dish for an easier preparation. (Leave the sweet potatoes in chunks if you do that.) Notice that the recipe doesn't call for any oil. Surprisingly the result came out so great.  My hubby loved it so much and said this is the way in which I should make my lasagnas in the future!  We ate it with some freshly toasted garlic bread. Just let it cool and store it in the fridge for a couple of days and then microwave it on the highest temperature for 2 minutes and you're ready to enjoy! I whipped this up last night with some Smashed Garlic Potatoes... we sat down rather hesitantly to dinner not so sure how our budget of budget meals was going to turn out, at least the potatoes would be tasty... it was devoured in minutes, there were no leftovers - even the finicky toddler licked his plate clean!

I used to fix this with just ground beef but tried it with the Italian sausage (sweet) and liked it even better.  Or, you can just use the Italian sausage.  Almost as good with fat-free ingredients so give it a try too.  It's good either way. You could add some onions or garlic to the meat mixture if you felt like it, or use something other than mushrooms (or leave out that part entirely) if you don't want them.  Whatever flavour or brand of spaghetti sauce is your favourite will work, as long as it's not one of the ones with meat.  Excellent served with garlic or other crusty bread and a green salad. I admit this takes a little time but worth it. Now I also take advantage of a grocery store roasted chicken for this or you can roast your own. But I do insist on fresh spinach and herbs, but why not take advantage of a little help ... I also get my mushrooms pre-sliced. Take a little help on some store bought items when you can. The fontina to me just adds lots of flavor, but if you can't find it mozzarella will work just fine.

			<description>Found this in a supermarket checkout cookbook years ago and it's still a family favorite. One important step is getting the water removed from the spinach as much as possible; after I drain it and squeeze as much out by hand I wrap it in a 4 layer pad of paper towels and squeeze it some more. Save the paper towels and use them later to dry off the noodles so they don't slide all over, this makes it a lot easier to spread the filling. I have listed 2% cheese and 1/3 less fat cream cheese but it started out being  made with the full deal, we don't notice any decrease in flavor (I've also made it without the egg a time or two when I ran out and it tastes the same and holds together OK). I also think the filling makes a good spinach dip if you leave out the egg.
