Curried Shrimp Macaroni Salaad

To me, this recipe ALWAYS represents summer. My mom would make this salad for our family only in the summer months. Everyone who tasted it wanted the recipe. NOTE: Prep time, does not include overnight chilling. The flavors are best when you allow them to chill overnight, but it is not absolutely necessary. -- posted by Omegachowz

My Dad's Ultimate Macaroni and Tomatoes

I am originally from the Canadian east coast, and like most people from that area, I grew up with classic macaroni and tomatoes. Sound plain? Well, it can be, but not the way my Dad makes it! Even if you think this doesn't sound that exciting, give it a try- I know you will love it! Kids love this too...

*** Edit for the person who mentioned they left out the summer savory because they don't like mint flavouring in their food- it is NOT minty, it is another herb similar to sage and thyme actually. Hope that helps! However, since I know it is hard to find in some areas, it isn't necessary, it's just that I love it, hehe. -- posted by Lady Clare

Lighter Macaroni and Cheese

These individual Mac-and-cheese casseroles call for pungent Parmesan and extra-sharp cheddar, which means the noodles get away with less-than-usual amounts of cheese, Low-fat milk, chicken stock and olive oil keep the sauce creamy.
Raw Macaroni and Cheese

This isn't the creamiest, best tasting macaroni and cheese out there. This is a yummy, super quick casserole, that my family adores. My kids love the pepperoni variation the best. It is easily adapted for your pickiest eater. I have also increased the quantity easily. I add a bit more butter, and noodles. Just be sure the milk comes up to top of noodles. I've never had to increase time. It does rise and could boil over if there isn't enough room in pan. -- posted by Ezri_B

Baked Macaroni & Cheese

Here's a classic mac & cheese recipe given to me by my (would-have-been) mother-in-law many years ago. It has become a family favorite, and I get asked to make it nearly every Thanksgiving and Christmas. It makes enough to feed a small army!

It's best to use block cheese and grate it yourself, to get the best cheese flavor.

Leftovers can be easily cut into squares, wrapped with wax paper and frozen. Then just take one out and nuke it for a great side to go with a sandwich. -- posted by Chef #1299589

Got this from a friend and posting for safe keeping! Note: for the elbow macaroni, I would cook them shy of Al Dente; about 6 - 7 minutes.
Bacon and Macaroni Frittata

This is quick and easy to prepare- a great meal with salad in the summer or with more substantial sides in the winter. I like that it is a complete meal, without the fatty crust associated with a quiche. If you do not have Cavenders seasoning, pepper will do. I use extra lean bacon medallions so add about 1/2 tablespoon of oil to cook the bacon in. -- posted by Shuzbud

Buffalo Chicken Mac-N-Cheese

Buffalo chicken meets mac-n-cheese. How can you possibly go wrong? I threw this together for the end-of-the-year potluck lunch at the high school where I teach, and it went over really well.

Addendum: Like the first two reviewers, I also used Ken's. Worked great! However, I have to disagree with one reviewer about the celery. I've made this with and without the celery, and its inclusion really makes a world of difference in terms of texture. -- posted by Cluich

Three Cheese Macaroni

This was a happy accident based on the cheeses I had in fridge today. You can save yourself a pan to wash by boiling the macaroni in the same saucier you build the sauce in (I would recommend 3 qt. for the amounts I used, it worked perfectly!). This made 6 good side dish servings, probably 4 main dish servings. Topping this with slices of a good tomato would be excellent as well. -- posted by CraftScout

Mexican Noodle Bake (Meatless)

I got this recipe from a cooking group on freezer meals. It comes from the book Frozen Assets Lite & Easy by Deborah Taylor Hough. My family loves this, and bonus, if you make it ahead and freeze it, it is a very fast meal on a night you don't feel like cooking! This recipe makes a lot, so I usually freeze half and bake half when I make it. We had this again last night for dinner and I wanted to post it so everyone else could enjoy it too! This is good served with sour cream and salad. -- posted by Quiltingqueen

I do not have Beecher’s cheese so I improvised with what is available and it came out as tasty as the original. Serve this with a crisp salad.
Double-Dutch Mac & Cheese With Chard

This is a rich and delicious macaroni & cheese from Bon Appétit Magazine (May 2009). You can use any combination of good melting cheeses such as Gruyere, Emmentaler, Fontina, or cheddar. It works with kale, chard, or spinach. If you omit the greens, this also makes a great traditional mac & cheese. If you want a creamier macaroni & cheese, just add a little more milk until you get the desired consistency. -- posted by blucoat

Very easy and yummy dinner that you can customize in your own way or just do it like the recipe shows! I've used more meat and/or noodles if I wanted it to be thicker, I would put about 1.5 lbs of meat and 2+ cups of macaroni.
I've added a small can of sliced mushrooms and a handful or 2 of chopped onions to change it up a bit and that tasted great as well! You can also try different kinds of spaghetti sauces!
My My My Minestra - Italian Vegetable Soup With Pasta

Some of Italy's finest ingredients make up this warming soup.

Adapted from 'Pasta Cooking' by Parragon.... the original recipe called for spinach, which I didn't fancy, so I subbed zucchini. I get the impression that our zucchini are generally a bit smaller than those in the Northern hemisphere, so balance the amount used with your other vegetables, just feel your way! You don't want your soup to be over-loaded with any one vegetable.
Hope you enjoy! -- posted by Karen Elizabeth

I guess you would call it a comfort food for me as I was always so happy when I asked, "What's for supper" and Ma answered, "Chop Suey". She never called it "American Chop Suey" except on her recipe card. It was always "Chop Suey". I can't believe that I haven't posted this as I still make it often. I guess I figured it wasn't fancy enough and everyone knew about it, but because I don't want to lose it, I am posting it now. Found this on an ethnic foods website and made it for Greek Night (figuring everyone else would do the usual spanakopita, mousaka, etc.) The fresh rosemary really makes this dish -- you might even want to up the amount a bit! -- posted by L'ecole

Dairy Free Chicken Pasta Primavera (Gluten Free)

I created this and it is delicious and dairy free! Pasta primavera is an Italian-American dish that consists of pasta and vegetables. A meat such as chicken, sausage or shrimp is sometimes added, but the focus of primavera is the vegetables themselves. The dish may contain almost any kind of vegetable, but cooks tend to stick to firm, crisp vegetables, such as broccoli, carrots, peas, onions and green bell peppers, with tomatoes. Pasta primavera is usually highlighted by light flavors, aromatic herbs and bright colors ('primavera' meaning the season of spring). Classic pasta primavera is based on a soffritto of garlic, olive oil, and Parmesan cheese, but versions based on a heavier cream or Alfredo sauce are also common. Though recipes for cold pasta primavera may be found, they are best classified as antipasti, or appetizers.
Pastas served with this dish are typically smaller shapes, such as penne, farfalle, rigatoni and fusilli. If using longer types of pasta, such as spaghetti or fettuccine, the vegetables are normally sliced in thin strips to match the shape of the noodles. -- posted by UmmBinat

I ran out of ideas one night and got tired of hearing "I don't know" when I asked my family what they wanted for dinner. So when I told them I was making this, I got funny looks. Let's just say there was very little left for leftovers that night. :) The only suggestion I got was my son wanted to try this with broccoli next time. Sure helps stretch the budget. If you plan it right(with supermarket sales), this meal would cost you roughly $5. to make. -- posted by Chef #409295

Garbanzo/Chickpea Pumpkin Macaroni Casserole

Spicy goodness! Pumpkin's not just for dessert anymore either-- and this is a fun casserole that has elements of Latin and Middle Eastern cooking. Best of all, you don't even have to use the stove to make the sauce! It is a very thick and rich sauce. The pumpkin base is very hearty and delicious, and is jam-packed with Vitamin A and lycopene. The garbanzos (chickpeas) are loaded with protein and cold-press olive oil is good for your heart (so it's a good fat instead of bad fats like in vegetable oils and shortening.) You won't believe this yummy casserole is healthy. :) This is a totally vegetarian dish, but if you want to vegan-ize it, you can use soy, hemp or almond "cheese", skip it altogether, or use some soy silken tofu. Meat lovers might want to throw in ground beef, and/or use chicken or beef stock/broth instead of veggie broth. I made this up myself, and love it! I make it when I know I have a busy week ahead and can easily get about 4 meals out of it for just me. -- posted by the80srule

My sister clipped this from the Bucks County Courier Times because this foodie loves squash and mac n cheese, so the two of them together = heaven. I'm posting the recipe here for safekeeping although I'm probably going to tweak it according to size and budget (do you know what Locatelli cheese is...? I'll probably just use cheddar. And I'm too lazy to cut a piece of squash, I'm using that frozen pureed squash!) And I'll probably skip the panko topping or at least do it un-buttered to save on calories. -- posted by the80srule

Fontina and Mascarpone Mac N" Cheese

Mac n" Cheese made different in that it uses Fontina and Marscarpone cheese. I have adapted this recipe which was loosley based on a recipe from Cooking Light. Since I always have Marscarpone floating around, it was a given that I would try this recipe. The soft fontina problem can be solved easily by placing the fontina in the freezer for a half hour. Fontina definately comes from the smelly cheese family . Some options: You can add more nutmeg and tabasco for more of a kick...add some parmesan cheese for part of the other cheese....adding some ham. I always seem to have whipping cream or half and half around...I would finish this up and top it with the 1% milk. (definately takes the recipe out of the "light" catagory!!) Marscarpone cheese too expensive? Try Recipe #66077. I always cook my pasta using Recipe #30358. -- posted by Abby Girl
