For those who are not familiar with Mee Pok
Mee pok is a type of Chinese noodle that is flat and yellow, often varying in thickness and width. Most hawker stalls (Singapore, Malaysia) mee pok come in two variants- fish ball mee pok (hee wan mee), and minced meat mushroom mee pok (bak chor mee).

The sauce in which you toss the noodles is an important aspect of the dish, and is often considered a representation of the cook's skill and experience. The importance of the sauce in mee pok can be thought of similarly as the sauces that accompany pasta. This sauce can be made vegan if you omit the butter (in that case, add a little more olive oil). I've reduced the amount of scallions and added carrots for extra veggies. I also skipped on the sherry and went with stock because I didn't have any sherry. I was intrigued by the picture in the cookbook; however, mine didn't turn out looking like the picture!  I had way too many noodles and too little broth.  The cookbook, &amp;quot;Soups for Any Body&amp;quot; states that it is a mix between a soup and a stew.  Mine was pretty thick, so I would add more beef stock to the recipe.  I'd also serve more soy sauce with each serving, and allow each diner to add their hot pepper oil.  If you let your meat marinate while you chop the vegetables, it gets on the table pretty quickly! Other additions/substitutions might include 1/2 c of any of the following: a plain Japanese-style omelet (tamago), cut in thin strips; corn kernels, frozen and thawed or fresh (if fresh, blanch for 1 minute first); cucumber, seeded and julienned; bell pepper, julienned and blanched for 1 minute; cooked chicken; chopped shrimp; roast pork; shredded duck. Avoid rice noodles, which tend to get hard when cold, or udon, which are simply too thick. 			<description>There are many, many versions of Seviyan (&amp;amp; spelling), you will find it differs from house to house &amp;amp; of course there are regional variations. Seviyan is the name of the toasted vermicelli used to make sweets aswell as savoury dishes in countries such as Pakistan &amp;amp; India. It is eaten throughout the year but comes into it's own during Ramadan. This is great fro Suhor (the morning meal before dawn) or as a desset after Iftar (the evening meal). I also like to make this a little drier &amp;amp; reduce the sugar somewhat. Recently I discovered that it's fun to swap the almonds &amp;amp; pistachios for a handful of prepared 'tropical fruit &amp;amp; nut mix' like you find in the health food shops &amp;amp; supermarkets). Seviyan is easy to find in most Asian supermarkets as well as the international isle in your regular supermarket - where it'll be sold as Pakistani Vermicelli. You can buy Seviyan / toasted vermicelli at most Asian stores &amp;amp; you can find it in the international isle of the larger supermarkets. Otherwise you can toast your own fine vermicelli in the oven! The fruit &amp;amp; nuts I refer to is the tropical dried fruit &amp;amp; nut mix you buy which typically has coconut, papaya, pineapple, banana, raisins &amp;amp; peanuts. Roy Yamaguchi made these for a special event and they really went over well. * Kochukaru and Kochujang are typical Korean ingredients for Hot Pepper Flakes and Hot Pepper Paste (in that order)
* If you do not have these available, I have included Cayenne Pepper and Maggi Sweet Chili Sauce as you can get the at most grocery stores

			<description>A vegan adaptation of a Cantonese-American favorite.  Not hard to make but takes some time to stuff the wontons.  

Serve the wontons in a mild, low sodium vegetable broth (chicken flavor if possible).

You can double or triple the wontons recipe, lay them out on a cookie sheet, and freeze them, then bag them and take them out to make soup in small quantities.
