			<description>Few things are more-identified w/traditional German cuisine than potato pancakes. This recipe from *Modern German Food* by Roz Denny   takes your garden-variety potato pancake &amp;amp; expands it to include the flavors of ham &amp;amp; cheese. Katenspeck is from the word *Katen* &amp;amp; means &amp;quot;barn&amp;quot; in German, i.e. this ham is made farmhouse-style (cured, smoked &amp;amp; cooked). Roz's intro read: &amp;quot;Potato pancakes are a traditional Rheinland confection. Once it was mother who wielded the pan. Nowadays spec dys in bars &amp;amp; cafes are the ideal opportunity to sample this dish &amp;amp; there are street stalls selling them. The most famous is outside the Cologne railway station, so visitors have no excuse not to sample this delicacy! The pancakes are sometimes served w/applesauce, but this version w/chopped crispy Katenspeck, grated onion &amp;amp; cheese is always popular.&amp;quot; Made me hungry just to think about it &amp;amp; the pic pushed me well over that hunger edge. I have not tried this yet, will update once I do.

Serve with either non fat plain yogurt or no fat sour cream. (add appropriate points) Also good with just a little light margarine. 

*NOTE - Increase number of servings to 4 and use as a side dish (points value per serving drops to 3)

This is the way my grandmother made them, and they were served at the Jewish holidays of Hanukah and during the 8 days of Passover, but not at the Seder (dinner and religious service), but for a light supper. They are good served as a side dish with the Winter Vegetable Plate in my  cookbook. 			<description>These smell wonderful while cooking. The taste reminds me of sweet potato cookies. I found this recipe in Taste Of Home magazine. My family really enjoyed these waffles. When I made them I used Splenda in place of the sugar and walnuts in place of the pecans as that's what I had on hand. I also added 1 scoop of protein powder to my batter. The next time I make these I plan to bump up the Splenda to 2 or more tablespoons and the cardamom to 1 1/2 teaspoons. 			<description>Often served as a side dish with holiday meals, the Jewish potato latke (something of a pancake) is usually made from grated potatoes mixed with eggs, onions,  matzo meal, and seasonings and then fried.  Ideally, latkes should be somewhat thick, golden, very crisp on the outside, and very creamy in the center.  Figuring out how to make these ideal latkes meant finding the best potato, the best grating method, and the best frying technique.  Matzo meal is a traditional binder, though we found that the pancakes' texture does not suffer without it. These do not require much oil, and can easily be fried on a hot griddle, to make them faster. Just brush the griddle with oil before placing the batter. Instead of chopping the green onion, just snip it into rings with kitchen shears.
