Mmm, these sure are nice!  The egg substitute is courtesy of Recipe #104832. It adds nutrients and eliminates bad fats. One thing worth noting, though, is be sure to grease your waffle iron well before making and in between waffles! Also, be careful to cut your apples very small or your waffle iron wont like it. Traditional coffe cake recipes call for at least 2 egg, but using just one whole egg and an egg white ensure that your cake will have a light, delicate texture. 			<description>From Cook's Illustrated. When fresh blueberries are not in season, frozen blueberries are a good alternative. To make sure that frozen berries do not bleed, rinse them under cool water in a mesh strainer until the water runs clear, then spread them on a paper towel-lined plate to dry. If you have buttermilk on hand, use 2 cups of buttermilk instead of the milk and lemon juice.  1 cup blueberries = 16 T, 1 T per pancake. If you like more blueberries, as my husband does, double the quantity of blueberries and use 6-8 blueberries per pancake. 			<description>This is a fabulous and impressive recipe (both visually and in deliciousness).  It's great with or without the raspberry sauce The recipe makes about twice the amount of sauce necessary (in my opinion), but the leftovers are amazing on ice cream!  I don't strain the raspberries because the seeds don't bother me. You can also replace with strawberries.  If you really want a decadent meal, top with whipped cream.  You can prepare the recipe as directed or just bring the apple topping and raspberry sauce out to the table and let people plate it themselves. I used regular bread in place of the croissants and cashews instead of pecans.  I found a teaspoon of butter was plenty, and only coated the pan at the beginning.   Personally, the french toast was great, but I could skip the rest. 			<description>The Old Farmhouse Bed &amp;amp; Breakfast, Salt Spring Island, British Columbia. Owner Gerti Fuss notes that these blintzes can be made ahead of time and heated just before serving. Put the filled blintzes on a baking sheet and freeze until firm, about 1 hour, then wrap the blintzes individually and freeze for up to 2 weeks. To serve, Fuss (who makes as many as 100 at a time!) defrosts them on a baking sheet overnight in the refrigerator, covered with a cloth to keep them from drying out, and then reheats them in a 300&amp;deg;F oven until heated through, about 15 minutes.

			<description>I have been making oven pancakes for years in my iron skillets, but just recently purchased a special oven pancake pan (it looks like a flat wok).  This recipe was adapted from the recipes that came with the pan.  We serve it with sour or whipped cream, honey, maple syrup, etc.  It's good with any of the topping choices.  It's relatively low in sugar, so my diabetic mother can enjoy it. Although you are supposed to let the batter rest at least 30 minutes, I have gone ahead and baked it (I do usually let it rest though).  I have also made the batter the night before and refrigerated it overnight; then I let it come to room temperature before I bake it.  That works okay when I know I'll be in a hurry the next morning, but I still prefer the original version.
