			<title>Vegan Lemon Pancakes</title>

			<description>There's no better way to wake up a camp full of groggy revelers than some lemony pancakes.  They taste best with a little playa dust, but work just as well at home!

The key to this recipe is to stir the batter as little as possible (hence the less than 20 turns).  The lemon and baking soda react to create air bubbles (remember making a volcano in grade school) and stirring too much will break down the bubbles and give you flat, chewy pancakes.

			<description>This recipe was given to me whilst I was on an allergy elimination diet. It has no gluten, dairy or eggs. A basic recipe, but not bad when your diet is restricted. The best rice flour to use is a very fine textured flour-you can buy it at most asian grocers. The coarser textured rice flour will taste gritty in your baked goods. It's been a while since I made these-so I'm guessing that they serve 4. These are also vegetarian. 			<description>I started with Pancakes #78893 (Shari2) and adjusted for my needs.  These pancakes have protein, no white flour and taste good!  I use half wholewheat and half oat flour.  The sugar can be adjusted, depending on what you plan to put on the pancakes.  With 3t fruit sugar, I can eat them as they are, or with bananas or unsweetened applesauce.  They do brown easily! DH and I give this 5 stars. This is excellent served with my Recipe #362340 using the maple syrup option or drop a few blueberries on top of each pancake before flipping. They are already delicious with pure maple alone. These work with variations such as a delicious incorporation of chopped or mashed banana, alcohol free vanilla and a dash of coconut milk to taste almost like banana fritters. He loves to eat these pancakes.  I spread the left overs on a cookie sheet and place them in the freezer for a few hours.
