The perfect brunch or breakfast menu item. Bring it to the table as soon as it comes out of the oven. A dutch baby, or German Pancake, is a cross between a souffle and an omelet. You have to try it. -- posted by Matthew Molus

Pancakes With Vanilla Banana (Using an Egg Replacer)

I don't like eggs and I always use an egg substitute unless I'm not having the recipe. If you want to try the recipe with egg just don’t use the tablespoon of water. The idea for the banana topping came from Recipe #173220 and the idea for the pancake came from the leaflet in the box of Egg-Like 'The Egg Replacer' -- posted by Chef floWer

Low-Carb Pancakes

If you are watching your carbs and craving pancakes, here is a breakfast you will like.
To obtain almond meal, put some almonds in your food processor and pulse them until they are the consistency of cornmeal. Be careful if you over-pulse, you will obtain almond butter :). -- posted by Engineer in the Kitchen

Kaiserschmarren (Emperor's Pancake) With Plum Compote

Forget the Sacher Torte! This is, imho, the best desert made in Austria. My friends and I were just finishing lunch at a heuriger in Grunzig when we saw enormous platters of this being served to another table. We had to find out what it was and order it ourselves. It may well have been the culinary highlight of our trip (that, and the one perfectly-prepared Wienerschnitzel, something that is not often done right, even in Austria). Spear a piece of the hot pancake, dip it into the plum compote and, yes, that is a smile on your face! -- posted by evelyn/athens

If you haven’t tried chestnut flour as a substitute for wheat flour, this is the perfect recipe for you. Chestnut flour is rich in carbohydrates, low in fat, and its tender texture and sweet nutty flavor is perfect for crepes and pancakes alike.
Gamma's Swedish Pancakes

These are thin pancakes. Trust the process-batter is very thin and runny! We always roll them up into little logs to serve with toppings or stuff rolled inside. It's fun for the kids to pick their own toppings. They 'keep' well, and it doesn't hurt the quality to collect them on a dish in the oven while you cook the whole batch so everyone can eat together. Save the leftovers, they microwave great! -- posted by Jess4Freedom

Nutella Banana Crepes

Easy Caramelized Bananas

These are great for breakfast over pancakes, waffles, french toast, crepes, oatmeal, etc. Or serve with low fat ice cream and toasted macadamia nuts for dessert. You can use regular tub margarine or butter in place of the cooking spray. However, this will double the cooking time, and make for a crunchier stickier outside to your banana. -- posted by Maito

Auberge French Lavender Pancakes With Lavender Honey

Our own Auberge de la Fontaine Lavender Pancakes - these are made with home-grown organic lavender flowers from our garden here in SW France, where we often serve them for breakfast! They also make a very elegant dessert when served with cream and fruit - I sometimes serve them with Recipe #241775.
Low Fat Chocolate Crepes With Raspberry Filling

Peach Oven Baked Pancakes.

These are sweet and a little salty at the same time. I like to drizzle with cinnamon bun icing or chocolate and whipped cream. I love it. Also if you don't want to go through all the trouble of the base then just use 2 cans of peach (or whatever) pie filling. You will not need to add sugar to the pancake mix as there is plenty in the peaches. Warning: This is eggy, good for someone who likes sweet and savory or just likes eggs alot, this does not taste like a normal desert and some guests may not like it, know your crowd first and then make this. Read it through first to go faster. -- posted by celestial_star03

German Apple Puff Pancake

We saw this recipe on Michelle Greenwald's (www.magicalmeltingpot.com)Yahoo Blog, and gave it a try. We both assumed it would be too sweet and gooey for breakfast, but since it's dreary and rainy this morning, figured we'd fire up the oven and give it a try. YUM! It wasn't too sweet at all, and the pancake had a bit of a custardy taste. It was easy to put together and made enough for the both of us, with a couple bites of crust left over for our four dogs. The recipe omits instructions for making up the batter, but we just combined the ingredients and mixed well. We used a 10-inch iron skillet, but any oven-safe non-stick pan would do. -- posted by Joyful_F&C

Rice Flour Crepes / Pancakes- Gluten, Dairy and Egg Free

This recipe was given to me whilst I was on an allergy elimination diet. It has no gluten, dairy or eggs. A basic recipe, but not bad when your diet is restricted. The best rice flour to use is a very fine textured flour-you can buy it at most asian grocers. The coarser textured rice flour will taste gritty in your baked goods. It's been a while since I made these-so I'm guessing that they serve 4. These are also vegetarian. As all gluten-free flours are a little different in how much liquids they absorb-add some extra liquid if required to achieve the right consistency -- posted by **Jubes**

To pack even more chocolaty goodness in every bite, I use a combination of mini chocolate chips, semisweet chocolate chunks, and dark chocolate chips-- use any combonation of chocolate you desire! The pancakes are delicious with or without the spread-- I've also had them with Brown Sugar Syrup-- also delicious! Recipe can easily be doubled. -- posted by dulce_amore

I have had this recipe in my special holiday folder and now is when I got around to posting it. These latkes are delicious!
They are made with farmer's cheese (a drier form of cottage cheese), & they taste similar to the filling in blintzes. These latkes are best made just before serving.
Pancakes With Lemon and Sugar for Shrove Tuesday - Pancake Day

This is my family's old recipe for traditional English pancakes - served the way we like them in the Britain - with a squeeze of fresh lemon and sprinkled with sugar! Please note, that these are NOT thick pancakes, but thin and lacey - more like a French crepe. Scotch pancakes and Welsh cakes are also different - they are thicker, and belong to the family of griddle cakes, and drop scones. These are what we will be making and eating on Shrove Tuesday - Pancake Day! The only accompaniment that is needed, is a fresh lemon or two and caster sugar.........some people have jam , honey or syrup with their pancakes, although that is not traditional! Now - how to TOSS that pancake without it landing on the floor, and will I WIN the Pancake race this year??!! A little information about this great British tradition: Origins -
Pancake Day, or Shrove Tuesday, is the traditional feast day before the start of Lent on Ash Wednesday. Lent - the 40 days leading up to Easter - was traditionally a time of fasting and on Shrove Tuesday Christians went to confession and were "shriven" (absolved from their sins). It was the last opportunity to use eggs and fats before embarking on the Lenten fast and pancakes are the perfect way of using up these ingredients.
Pancake Tradition - A thin, flat cake, made of batter and baked on a griddle or fried in a pan, the pancake has a very long history and featured in cookbooks as far back as 1439. The tradition of tossing or flipping them is almost as old: "And every man and maide doe take their turne, And tosse their Pancakes up for feare they burne." (Pasquil's Palin, 1619).
Tossing pancakes -
Certainly these days part of the fun of cooking pancakes is in the tossing. To toss a pancake successfully takes a combination of the perfect pancake and good technique - it's so easy to get it wrong and end up with half the pancake still stuck to the pan while the other half is stuck to the ceiling or floor. All in all, it's probably best to practise a few times without an audience.
Pancake races -
In the UK, pancake races also form an important part of the Shrove Tuesday celebrations - an opportunity for large numbers of people to race down the streets tossing pancakes.
Mardi Gras -
The French name (literally "fat Tuesday" ) for Shrove Tuesday has been given to a number of Mardi Gras carnivals around the world. Among the most famous are those of Rio de Janeiro and New Orleans -- posted by French Tart

The Easy, No Waiting, Delicious Crepe Recipe!

I have been making this recipe for years and never actually wrote it down. It was always in my head and the batter was almost entirely based on texture and appearance. Well, here we are, finally, my masterpiece!

A warm souffle-style soft thick pan-cake, made from simple ingredients you probably have in your cupboard already. Perfect for a quick and easy meal or snack when you don't feel like shopping.

I make these for company or just because. They are so easy, delicious and lovely to look at, they are a completely satisfying snack, breakfast or dessert anytime. Also extremely versatile! I sometimes leave out the sugar and lemon and add a teaspoon of savory herbs and salt, then add grated cheese and sausage as a topping/filling at the end for a more hearty breakfast. My recipe is for a 12" skillet, if you use a regular 8" or 9" pie pan, reduce servings to 6 above (or just cut recipe to 3/4). -- posted by RupaMagic

I love oatmeal raisin cookies so I was really excited when I found this recipe on the UKTV Food website! It makes really thick, crispy waffles which taste great with maple syrup. I've also made them with cinnamon instead of the lemon and they came out really well, and also made with flavoured oatmeal (I used Quakers maple and brown sugar). -- posted by Rainbow*Bubbles

Dutch Baby (Giant Baked Pancake)

These look and taste absolutely heavenly! It's great if you have guests or larger gatherings for breakfast or brunch as each pancake has 4-6 servings and, since it is baked, requires less work than regular pancakes. This delicious and impressive-looking recipe is from Sarah Kate, of "The Kitchn". It was a Christmas breakfast tradition in her family. It's also sometimes called a German Pancake and is quite similar to Yorkshire Pudding. If you want a sweeter recipe, increase the sugar to 3 tablespoons and add 1 teaspoon of vanilla. Batter needs to sit for a half-hour before baking. -- posted by blucoat

Crepes

One of the reasons why I love crepes is that they are very simple to make and they can really be used as a base in such a wide variety of foods. For this sweeter style crepe, I prefer ham, apple, and maple syrup topping; but this crepe can also be used for a delicious blintz. I set the heat to medium on my stove-top and cook in a calphalon non-stick pan. Also note, if the dough is too runny or too thick, you can add more flour and more milk respectively to make your prefered crepe.

This simple recipe has been passed down through generations and makes the lightest, fluffiest, most delicate blintzes I've ever had. Drizzle the folded blintze with melted butter (an absolute MUST), roll up with a filling, and enjoy! We like them as a big breakfast served with soft boiled eggs, pork sausages, maple syrup and strawberries with ice- or whipped cream.
Whole Grain Breakfast Delight

This is a lovely treat to wake up to in the morning- without guilt! The cottage cheese and pumpkin filling slightly resembles a pumpkin pie filling, and the maple syrup makes it perfect! All the flavors allow for the tortilla to adopt a sweeter, crepe like flavor. Top with whipped cream and graham crackers if you're really dying for something decedant... Cooking time is actually freezer time.
Blueberry-Swirl Coffee Cake (Healthy)

This coffe cake is amazing!! You have to try it. I found this recipe in a cookbook i recently purchased: Cooking Smart for a Healthy Heart.
This moist and tender cake is bursting with juicy berries. Brown sugar and cinnamon make it so melt-in-your mouth delicious that you won't believe that its lower in calories, fat, and cholesterol than traditional coffee cake. And the aroma from the baking cake is sure to rouse the sleepyheads at your house. Serve it warm from the oven-it's worth waking up for. :)
Traditional coffe cake recipes call for at least 2 egg, but using just one whole egg and an egg white ensure that your cake will have a light, delicate texture. It also makes this even healthier. -- posted by Baking Latina Girl

The Gazebo Restaurant on Maui is known for their macadamia nut pancakes and I've tried to copy them to the delight of my friends here on the mainland. I think they're just as good without the nuts and that the real secret is serving them with coconut syrup and a dollop of coconut flavored whipped cream. The pancakes are based on Kittencal's Recipe #82094 with some alterations.
Kolobki (Russian Cottage Cheese Donuts)

Posting this for safe-keeping, will tweak it later.

Kolobok (kuh-luh-bOck) is a dough ball from a Russian fairy tale. These fried gems are fun for kids, tasty calcium for adults. To be clear, I wouldn't feed this to my toddler because of the fried aspect, but I loved them when I was little! -- posted by Lighty

Mixed-Berry Dutch Baby

"A Dutch Baby, also known as a German pancake, is a mixture of eggs, flour and whole milk that gets baked in a heavy skillet until it becomes puffy and golden. In the terrific version here, Grace Parisi folds in fresh berries to create a wonderful summer dessert that’s also great for breakfast." Recipe from Food & Wine July 2009. -- posted by JanuaryBride

Crepes - Natural and Healthy

This is a modified recipe of the the original one I found on "The Simple Dollar" blog. The recipe does not use any sugar or sugar substitutes. It is probably the healthiest crepes recipe there is. For topping, I like to spread Nuttela (hazelnut spread) and thinly sliced bananas on top of it. Sometimes, to mix it up, I put cinnamon, coconut flakes, and raisins only.
I have been making it for breakfast every Saturday morning for my wife. That may be the reason she loves me so much. -- posted by slobo80
