			<description>Not like a pancake at all but solid fruit, lightly bound together with a bit of batter. This is what they say about this recipe in Swarovski Magazine (July 1997): This delicious, wholesome recipe was rediscovered by Franz Steinlechner. It is a very old dish which used to be popular with the local farmers during the blueberry season. They collected the wild berries, which are plentiful in the Tyrolean countryside, with a specially designed square wooden shovel with metal bars at the bottom to rake the berries out of the bushes. Blueberries are also used to make jam and schnapps. This dish was originally made with a pancake dough but Franz felt that the lovely berries should be more prominent, hence his blini recipe. It is very quick and easy to prepare. The blinis can be served as a warm dessert or as a main course following a hearty soup. 			<description>I found this recipe from Crisco Oil in a very old Hadassah magazine stuffed in the back of a drawer in my grandmother's house. It's a favorite of mine. I think the nutmeg and lemon give the blueberries an exceptional flavor. I usually make it with milk (1 or 2%, but you can use water if you want to make it dairy-free. And if you can get them, try it with fresh blueberries. It is heavenly! (Although frozen work quite well, just taste for sweetness and adjust accordingly). These blintzes freeze very well, and I'll usually freeze them wrapped in packets of two. You can cook them up straight from the freezer; no thawing is needed. It's a really nice treat for kids with a dollop of sour cream, or even dusted with some powdered sugar, with or without cinnamon. 			<description>These low fat whole wheat banana pancakes are low in calories and fat, but not in taste.  If you like, you can add blueberries (I recommend wild blueberries, you can buy them frozen and put them directly into the batter frozen).  I haven't tried the pancakes with both blueberries and the cocoa powder, so you may want to remove the cocoa powder from the recipe below if you add blueberries.

(New addition: I tried them with double the cocoa and using frozen raspberries and they were even better.  I broke the frozen raspberries up into smaller pieces after adding them to the batter.)

I've actually never used sugar in this recipe--I've always used Splenda.

If you prefer thicker pancakes, you can lessen or eliminate the water in the recipe completely.

My kids (5 and 2) like to help with this recipe.  I have them each mash one of the bananas, and then pour half of the wet ingredients into each of their bowls to mix.  Then, when they're added to the dry ingredients, they each get a turn to mix them into the dry ingredients.   

Also note: I really like vanilla; if you don't, reduce it to 1/2 tsp.

Or at least to me and my husband. Made with a banana to replace the  oil and sugar, the  hearty, stick-to-your-ribs buckwheat pancake can be customized easily for each diner. Pancakes are more art than science.  Expect to sacrifice the first victim of the griddle to the Pancake Gods as you adjust temperature.  The amount of buttermilk or milk is approximate, and will have to be adjusted based on the size of the banana and your personal preference. If not, a regular lemon will certainly do. I prefer them with real eggs and rice milk, but you can use egg replacer and any type of milk replacement. Try raspberry jam on them instead of syrup... it works wonderfully with the flavor and texture of the pancakes. This moist and tender cake is bursting with juicy berries. Brown sugar and cinnamon make it so melt-in-your mouth delicious that you won't believe that its lower in calories, fat, and cholesterol than traditional coffee cake. And the aroma from the baking cake is sure to rouse the sleepyheads at your house. Serve it warm from the oven-it's worth waking up for. :)
Traditional coffe cake recipes call for at least 2 egg, but using just one whole egg and an egg white ensure that your cake will have a light, delicate texture. 			<description>From Cook's Illustrated. When fresh blueberries are not in season, frozen blueberries are a good alternative. To make sure that frozen berries do not bleed, rinse them under cool water in a mesh strainer until the water runs clear, then spread them on a paper towel-lined plate to dry. If you have buttermilk on hand, use 2 cups of buttermilk instead of the milk and lemon juice.  1 cup blueberries = 16 T, 1 T per pancake. If you like more blueberries, as my husband does, double the quantity of blueberries and use 6-8 blueberries per pancake. My family loves this recipe, and it was a hit at a recent brunch.

I have used both fresh blueberries and frozen - with great results.

			<title>Cheese Blintzes With Blueberry Sauce</title>

			<description>The Old Farmhouse Bed &amp;amp; Breakfast, Salt Spring Island, British Columbia. Owner Gerti Fuss notes that these blintzes can be made ahead of time and heated just before serving. Put the filled blintzes on a baking sheet and freeze until firm, about 1 hour, then wrap the blintzes individually and freeze for up to 2 weeks. To serve, Fuss (who makes as many as 100 at a time!) defrosts them on a baking sheet overnight in the refrigerator, covered with a cloth to keep them from drying out, and then reheats them in a 300&amp;deg;F oven until heated through, about 15 minutes.
