			<description>A few years back, my wife and I attended a heart-healthy cooking class, put on by professional dietitians in the local hospital kitchen. This is a nice little salad, and was only one of the great heart-healthy, tasty dishes which came from the numerous recipes that were generated from those classes. The recipe says that it serves six -- I say that it more realistically serves four. There is a lengthy marinating time so plan this one ahead. The recipe is a spinoff of the original version created in 1924 by Caesar Cardini, an Italian restaurateur in Tijuana, Mexico. That's right, the salad is named after its creator, a Chef, not Julius Caesar of the famed Roman Empire, according to The JNA Institute of Culinary arts. Anyway, this salad is great for brunch. 			<description>I saw Rachael Ray makes this of Foodnetwork and I decided to try it. This dish is so full of flavor and lots of color. My husband is always happy when he sees this presented on the table. As a tip, I store the unused chiles in a zip-loc bag in the freezer; then I cut the amount that I need. A little goes a long way! In fact, I use about a 1-inch slice or the recipe can be quite spicy. Sometimes I serve this with coconut rice, instead of the brown rice. I'm from Sonora Mexico, (where this soup is famous) and my nana gave this recipe to my mom and my mom to me. ;) Of course the cheese is important and the best is the &amp;quot;queso regional&amp;quot; but you can substitute it by queso fresco and it works for me...  :) as long as you don't use a cheese that melts in strings in the soup...;) for the potatoes I like the California potatoes, or any white potato that is more crunchy... you know how some potatoes are more creamy... pick the crunchy ones. When you buy the queso fresco check the taste, some of them are salty so have in mind that if the cheese you bought is salty you may want to add less salt to the soup. I like the potatoes crunchy, thats why I don't let them boil or cook for long time, so do the potatoes the way you like them --   and the chile tepin is a dry round pea size chili very hot that you can buy in a mexican store, I crush one or two in a paper napkin and add it to the soup, but that is optional. 			<description>This delicious recipe uses all of the shrimp.  Be sure to buy un-peeled shrimp.  You start by making a sofrito and end with a broth that is incredible in its depth of flavor.  Let your food processor do the mincing.  Where you see shrimp soup listed in the ingredients know that I use cubes of  Knorr Sopa de Camaron that are about a Tbsp.  For some reason the Recipe Tsar won't let me use the term.  Feel free to add more of the Sriracha if you like.  I do.
