All American Hamburgers

Make your own hamburger mix (not Lipton packets in here!) If you use grass fed beef, the beef doesn't shrink bcz there's not a ton of fat in it! But you may have to add a little oil. -- posted by WI Cheesehead

Garlic-Lime Chicken

The bright, fresh flavor of lime sparks up a simple chicken for the grill or the broiler. Too tasty to believe that its healthy! Removing the skin cuts the cholesterol. Adding a little heart-healthy olive oil preserves the juiciness. Its nice and quick too because, unlike many recipes of the sort, it does not require long marinating. -- posted by 3KillerBs

Ginger and Sesame Marinade

Fresh ginger juice adds a particular zing to a marinade: the fragrant, hot flavour penetrates into meat, poultry, fish and seafood, while helping to tenderise at the same time. The sesame seeds in this recipe add texture, the fish sauce adds saltiness, and the sweet-and-sour blend of sugar and lime juice completes the Asian credentials of this marinade. Can be used to prepare-
4 Beef steaks or 4 Lamb steaks or 4 Pork chops or 6 Chicken breasts or 6 Fish steaks and fillets or 4 Duck breasts or 2lbs of jumbo shrimp. Time does not include marinating. -- posted by English_Rose

Campfire Hobo Dinner

In the sixties I was a Camp Fire Girl and this is a recipe we learned to make and cook over a campfire. We made ours with a pork chop, potatoes, carrots and onion. I've tried to revise it so you can use any of your families favorite vegetables and meat. You could make these before you leave home and put them in a waterproof container in your ice chest. List of meats that work good: chicken tenders, smoked sausage slices, ground beef patties, ground turkey patties, thin boneless pork chops. List of vegetables that work good: carrots, green beans, corn, mixed vegetables, etc. (Vegetables can be fresh, frozen or canned). Be creative! -- posted by Darla Emerson

Teriyaki Sea Scallops

This is a fast and easy way to use your grill to make a tasty all-in-one seafood dish. I rarely plan ahead to make this -- more often, I end up making it when I run across sea scallops on sale at the grocery store. Prep time includes marinating time. You can also make this over the campfire coals when you're camping. Enjoy! -- posted by Bone Man

Twice Baked Outdoor BBQ Baby Potatoes

This is how we cook our leftover baby spuds, when we have any leftovers that is! Therefore, I often find myself cooking up a pan of these potatoes, in order for them to be grilled or baked on the BBQ! Quantities given are assuming that there will be other accompaniments - please feel free to increase or decrease the amounts listed. Split them open once baked/grilled and spread with butter and a good twist of sea salt plus some ground black pepper - no other embellishments are needed for these delicious potatoes! When the potatoes are VERY baby in size, I cook these in an old cast iron pan which is used just for the BBQ - they still come out smoky and delectable! -- posted by French Tart

Beer Marinated Chuck Steak for the Grill

The Women's Day Encyclopedia of Cookery was my main resource as a teen learning to cook. This marinade from that book was my Dad's favorite marinade for steak -- almost always bone-in chuck steak. Every time I use it I think of Dad and remember how he taught me to grill on the little hibatchi that perched on the side of the useless, brick fireplace some previous owner of the house had built. Come taste a memory with me. -- posted by 3KillerBs

The Best Salmon Marinade

Fabulous Family favorite!!! Super easy and lots of flavor! Made many times and never had negative results. If there are any leftovers this salmon makes a wonderful salad topper for lunch or a salmon salad sandwich. When cooking on the cedar plank or adding liquid smoke, it takes the salmon to a whole new level of flavor. Awesome... best of all this is pretty much idiot proof!
Chef Flower's How Do I Make Grill Marks on a Steak?

I have been often asked how I cook steaks to get the perfect grill marks on the meat. My secret is my pan, it's a 'Jamie Oliver hard Anodised Shark's Tooth Grill' by Tefal.
Asian Marinated Flank Steak

I originally got the idea for this out of Sunset Magazine, and have tweaked it to suit my family and friends. It makes a great OAMC entree for the grill, or to take camping. I've used this on chicken and salmon as well as beef, just reducing the marinating time appropriately. Don't use ground (dry) ginger in this- the flavor is not the same. -- posted by IngridH

Rosemary Lemon Twin Roast Chickens for the Grill

I've been without an oven for a year and a half and I'm getting pretty good at roasting meats in the propane grill. Try something different for your next cookout or camping trip by roasting a pair of chickens this simple way. It takes less attention than grilling and you don't get any grease flares. This will work best on a grill that has 3 burners running front to back so that you can turn on the side burners and leave the center unlit. Note: Prep time does not include marinating time. -- posted by 3KillerBs

Owens Sausage and Ground Beef Backyard Burgers

This recipe was included in an ad in my local paper. It sounded so good that we had to try it. We used Owens rolled sausage since I had the coupon. It was great, but I'm sure other sausage brands would work too! The recipe originally said to make 8 patties, but they ended up so small that I decided next time I will make 6 larger patties. We used regular flavored sausage, but my husband and I love spicy food, so I can't wait to try this recipe using hot flavored sausage. Be sure to have all your favorite burger toppings on hand like lettuce, tomatoes, pickles, etc.**Update - made these patties for the 4th of July and used 96/4 extra lean hamburger since the sausage is so "fatty". Doubled the recipe and made 12 patties. They came out just the right size. Huge hit with all the guests! Many tried to guess the "secret ingredient" and were amazed when I told them it was breakfast sausage mixed with the beef. -- posted by Texas Aggie Mom

This recipe was the one that started my trail cooking website - and convinced me to write my first trail cookbook a couple years ago. Taken from my book 'Freezer Bag Cooking: Trail Food Made Simple'.
You can prepare it two ways - either in a hikers cooking pot or in a quart sized freezer bag. I listed the one pot method here. For the FBC way, put your dry ingredients in the bag and add the hot water/chicken. Stir, seal tightly and insulate for 15 minutes, then fluff and eat. -- posted by Trail Girl

Pop-Pop Potatoes

My Dad, Arel gets credit for these awesome spuds. He has made them for my boys since they were little, and they still request them in their teenage years at every visit. Super easy, and the kinds of potato, oil and spices can be changed to suit any preference, although this is the masters' blend. We love them best finished on the top rack of the grill when the steaks are on, and nice big Jersey tomatoes sliced on the side. -- posted by Chef #616952

Fresh corn still in the husk takes wonderfully to grilling. Serve it with one or all of the seasoned butters here and a platter of ribs or chicken hot off the grill. Copied from www.williamssonoma.com [Adapted from Williams-Sonoma Complete Grilling Cookbook, Edited by Chuck Williams (Time-Life Books, 2001)].
Isis’ Grand Canyon Veggie Spaghetti

Every year I do a group backpacking trip to the Grand Canyon.
This is my preparatory recipe for one nights dinner for 10 happy campers.
I'll update this after our trip in March with group notes or any changes made to the recipe. I would like to thank William (Uncle Bill) Anatooskin recipe #21960 and my mom for giving me a launching pad to create this. NOTE: All of the vegetables used are in there DRIED diced form, and the prep time does not include soaking time. P.S. THE POSTED NUTRITIONAL INFO IS WRONG. I estimate that this comes out to just over 450 calories per person of food and for those backpackers out there I think that this is about 3 1/2 lbs for 10 serving dinner. This is a back packing meal, so don't attempt this recipe with fresh ingredients in these quantities, it will not taste good. -- posted by isispleiades

Teriyaki Marinade

Years ago I was given a recipe for homemade teriyaki marinade by a friend from Hawaii. The recipe was rich, flavorful, and surprisingly easy to make. I regretfully somehow misplaced the recipe over the years. Now that I'm married and back in the kitchen, I'm cooking more and a lot more from scratch. I've tried to recreate the recipe I had years ago and think I've done a pretty good job. Preparation time does not include two hours in refrigerator to marinate meat.
