Tropical Grilled Pork Chops With Mango Chutney Salsa

I found this recipe on another web site & tweeked it to my preference. It makes quite abit of chutney but I find the left-over freezes well for the next time you need it. Timing includes 1 hr marinating. -- posted by Mustang Sally 54269

Bone-In Ham on the Barbecue With Honey-Butter Glaze

My husband wanted a Bone in Ham the other day and with my kitchen was between 80 - 90 degrees, I did not want to heat the oven. I could find lots of recipes for steaks but very few for Whole or Bone in Ham. I combined what I found and came up with this. -- posted by Big Man's BBQ Queen

Nif's Honey Grilled Chicken Thighs

A sweet, but not too sweet, marinade with an Asian twist. This marinade would work with any chicken pieces and probably pork or salmon, but I had the thighs in the fridge!
Grilled Lime-Ginger Marinated Pork Loin

This is another one of my experimental yet successful creations. DH, the guinea pig, heartily approved. The pork loin turns out tender and juicy with many layers of flavor: smokiness from the grill, tanginess from the lime juice, nuttiness/saltiness from the soy sauce and a little heat from the ginger and red pepper flakes. -- posted by MarthaStewartWanabe

Blackberry-Barbecued Chicken

Store the leftover sauce in a tightly capped container in the refrigerator for several days or in the freezer for several months.
Peppered Venison Steak With Spiced Smothered Onions

Australian chef Huey (Iain Hewitson)'s recipe for what he describes as basically an American recipe: Peppered Venison Steak with Spiced Smothered Onions. Venison, he advises, should be medium rare at the most so have everything ready to go before adding the venison steaks to the pre-heated grill. Some conversions: 150 grams = approximately 5 ounces; 180 grams = just over 6 ounces. -- posted by bluemoon downunder

Smoky Corn Salsa (Bon Appétit)

This is a really delicious and addictive salsa with a smoky flavour from the grilled vegetables. The recipe is from the Bon Appétit Test Kitchen (August 2009).

Make a batch of this versatile sauce, then serve it all week. You can spoon it over grilled fish, chicken, or meats—or use it to fill quesadillas or burritos. It's even good served as a bruschetta on a sliced baguette. -- posted by blucoat

Jalapeno Shark Burgers

I came up with this when I had bought some shark steaks and had no idea what to do with them. My mom mentioned that shark is a meaty fish, but a bit bland, so I decided to throw it in the food processor and make burgers. Try to trim off as much of the skin and fatty stuff as you can. This is a very simple recipe, but has good spicy flavour if using my Habanero Barbecue Sauce (Rz#368097). -- posted by CoCaShe

The Other BBQ Sauce

I'm always looking for new things to baste my grilled food with..thankfully DH and I have a creation of our own, that we've played with the spices for month's till finally coming up with this one. It offer's an excellant alternative to the same ole same ole tomato based sauce. We primarily use this when grilling chicken and sometimes pork, but it IS best on chicken. If you enjoy the sweeter side of sauces that have a hidden surprise of a kick at the end, then this sauce is for you. Use this as a base for your next "white" BBQ sauce and adjust it, play with it to make it your own! :) -- posted by I am his Jenni

Perfect Easy Beef Kebabs

I think I found this idea in Cooks Illustrated, but it was so easy, I didn't save the article. The marinade flavors the meat, and will protect it during grilling so that your kebabs won't dry out. It will not, however, tenderize a tough cut of meat, since it has no acid in it. Choose a nice cut of beef: strip steak, a thick loin steak (sometimes labeled as london broil), or tri-tip roast all work nicely here.
Gourmet Garlic Mojo Hot Dogs

Mojo is a cuban sauce made from the juice of sour oranges (or, in this case, a mix of orange juie and lime juice).
Gourmet Harissa-Onion Hot Dogs With Preserved Lemon Relish

Bold North african flavors stand up to even the heartiest of hot dogs. Pile the dogs high with spicy harissa or sambal oelek flavored carmalized onions' a bright, pleasantly bitter preserved lemon relish; and just a bit of hummus.

Here's a great recipe for a burger to wow the tailgating crowd, or for any gathering of friends/family. The topping has tangy zing to it, and the hamburger mixture is made with some ingredients you don't usually see in the mix. Aged cheddar or a smoked provolone cheese will add the final touch to this new twist on the standard hamburger.
Leskovac Burger

This piece of southern Serbian cuisine is probably the most common of all burgers in the south and around Leskovac (where burgers are in most cases NOT considered junk food). There are likely several ways of preparing this both in terms of ingredients and the grilling process. This is a classic burger recipe I memorized from a burger spot in my town and is best prepared either on the grill, or you can make it in your frying pan with just a bit of oil. -- posted by ShinigamiChef

Grilled Jerk Pork Tenderloin

I feel that the apple cider makes this Jerk marinade unique, and a bit untraditional. Being from the apple country of Virginia the apple cider was a natural. For added flavor, add apple or hickory wood chips soaked in water on top of the hot coals. You can begin grilling when the chips start smoking.
Hickory-Smoked Brisket With Southwestern Barbecue Sauce

Found this in the LA Times, they note the following - This recipe calls for hickory chips and the use of a smoker, or a charcoal grill converted to a smoker. Hickory chips are available at many well-stocked markets as well as at barbecue supply stores. The barbecue sauce makes about 6 cups, more than is needed for this recipe. Any remaining sauce will keep up to 1 week, refrigerated.
Grilled Duck Breasts With Dried Cherry-Zinfandel Sauce

DH and I made this grilled duck breast recipe for dinner a few nights ago and enjoyed it very much. It is quite easy and since it is on the grill, it required less cleanup than usual. While we prefer the recipe I posted for seared duck with cherry port sauce, we did not have the demi-glace that the recipe calls for, so this was a nice substitution. We ended up running out of propane during grilling and had to finish the duck under the broiler. This worked fine. We served it with roasted asparagus. The recipe is from the Williams-Sonoma "Grilling" cookbook.

Note: the recipe states that you can vary this recipe by pairing dried cranberries with Pinot Noir (instead of cherries with Zinfandel), dried peaches or apricots with Riesling or Gewurztraminer, dried pears with Sauvignon Blanc, or dried apples with Chardonnay. -- posted by Dr. Jenny

Jalapeno Poppers - Williams Sonoma

Found this recipe in a William Sonoma catalog and as DH loves peppers decided to give it a try. I did buy a special pan (see photo) to make it and the smoky flavor of the grill gave a wonderful fire-roasted flavor. Make sure you wear gloves when handling the raw jalapenos. The little effort involved with making this was so worth it. I'm sure you could also do these in a regular pan in the oven - but we loved that grill flavor. Be sure and get all those little seeds out or they can be really hot. -- posted by Bonnie G #2

Turkey Kubideh (Persian Ground Meat Kabob)

When we go to our favorite Iranian restaurant, my wife usually orders Chicken Kubideh. Here's my go at it, but using turkey instead. I add butter, because ground turkey is so fat-free that the kabobs could come out dry.

Salmon With Honey-Lime Dressing

I got this recipe from Weber's Real Grilling. The original recipe calls for a huge fillet salmon on a full cedar plank, but I've done this recipe for individual salmon fillets on smaller planks. It's a much nicer way to serve them, and easier to do for a smaller group. The proportions here are for the whole large salmon, but I find that about half is enough for 3-4 smaller fillets. -- posted by CoCaShe

Citrus Pesto Tuna

I got this recipe from Weber's Real Grilling cookbook, and tried it today for my first tuna recipe. The marinade was great, although the cooking time seemed a bit short (the recipe says 3-4 minutes, turning once) so I increased it to 4 minutes per side and it was overdone. I'm including the original cooking times in this recipe, but it depends on the size of the steak, so I'll have to keep experimenting! -- posted by CoCaShe

Best Homemade Lamb Gyros

After trying several other recipes and being disappointed, I've experimented multiple times to come up with this version. The meat is tender, flavorful, and pretty darn close to what you get at a very good Greek restaurant. I usually use lamb necks, which are very economical... but it does take some work to get the meat off the bones, and the yield is only about 50%. You need a good food processor and a grill to make this recipe!! Please note that you need to start at least two days before serving.. and three days is better. My fussy 5 year old LOVES this gyros even though she won't touch a hamburger. -- posted by MarySC

Honey-Mustard Turkey Burgers

Burgers made with ground turkey are a lean alternative to beef burgers, providing you choose turkey ground from the breast. Regular ground turkey, which is a mixture of light and dark meat and some skin, contains almost as much fat as lean ground beef.
Amazing Burgers

I always used to play around with my burger recipes until the night i made these- I'll never make burgers any other way. Enjoy!

NOTE: The addition of a slice of your favorite cheese melted over the top of your burgers can never hurt.

ANOTHER NOTE: I make my patties and let them sit in the fridge covered in clear wrap for a half hour before grilling.

MORE NOTES: A good juicy burger can tend to make the bun soggy so it's a good idea to lightly toast the bun on the grill.

LAST NOTE: For a great sauce for all your burgers check out my 'Amazing Burger Sauce' recipe. -- posted by Drunk Chef

Lemon Garlic Chicken

This is a wonderful grilled chicken that is fantastic served warm over a salad for a light fair. Prep and cook time does not include time for marinating or heating of grill, so plan accordingly. -- posted by Chef Buggsy Mate
