Pretty Orange Cranberry Gelatin Mold

From a TOH holiday cookbooklet and submitted by D. Terry. I loved the addition of fresh navel oranges to the mold. It is pretty making this into minature 1/2 cup molds and serving on lettuce leaves. I've also made it in a large 2 cup mold and then sliced it. Allow 4 hours of chill time at least to set. -- posted by HokiesLady

Barley Water

From "To Set Before a Queen"--a cookbook written by a former cook for Princess Elizabeth's household (Queen Elizabeth before she was crowned, that is). It's an interesting cookbook, with some good recipes and some interesting anecdotes. She claims that the royal family were all "addicted" to this recipe. She also says that this is the recipe she was given to use at Clarence House. I've tried it and like it quite well myself. Posting here as it's an older cookbook and I don't want to lose the recipe. Since the rinds are used, it's best if you can find organic fruits without oils or waxes or chemicals on the rinds. Failing that, be sure to clean them very well--I soak them in vinegar water, then rinse them under very hot water. I can't recall the amount you get at the end, so I am estimating. Times don't include cooling time. -- posted by Halcyon Eve

Easy Orange Salad/Dessert

I'm prefacing this recipe with I'm pregnant and have some strange cravings these days! I really like the combination of cottage cheese and sour cream. I came up with this salad as a result of looking over oodles of recipes! Any flavor of jello will work - you may want to change the fruit to compliment the jello flavor you are using.
**Cooking time is chilling time.
Updated -- I remade this and agree with reviewer, the jello does need to be dissolved or it will be gritty. This is not a sweet salad, so if you want it sweeter, you would need to use whipped cream or add sugar. -- posted by kittycatmom

This delicious and unique recipe is healthy, satisfying and easy to prepare. It's based on a recipe from the "Bon Appétit Test Kitchen" and was printed in their magazine (Jan. 2009). The chocolate and the mustard are not in the original recipe, but I think they add a nice depth that really compliments the citrus. -- posted by blucoat

Orange Glaze - Anne of Green Gables

Taken from "The Anne of Green Gables Cookbook", written by Lucy Maud Montgomery's granddaughter Kate Macdonald. I am posting this as it appears in the original book, which was written as a tribute to her father Stuart Macdonald (Montgomery's son). The recipes were written with precise instructions, geared for young cooks. All recipes were apparently tested by a 12 year old cook, with perfect results. Other recipes are available in a cookbook prepared by chef #756627 - book #243014 *NOTE*: Posting to add to the cookbook. I have not personally made this recipe. -- posted by Diana #2

Use It or Lose It Smoothie

I bought a ton of fresh fruit at the start of the week and it is now Saturday and there is the odd bit of fruit still left in the fridge that must not have much time left in it. I hate throwing food away but know I won't get to eating it all one bit at a time before it goes off. So, I threw it all in the smoothie maker and decided to see what would happen. I ended up really enjoying the results. I used Greek yoghurt because it is what I had and my lactose intolerance doesn't flair up if I use it. I am sure you could use any fat free yoghurt though. This made two big smoothies for me but could easily be four smaller ones. -- posted by Sarah_Jayne

I used navel oranges for mine - please note that if you use another type/size of orange, you may have to change the quantity of syrup/juice accordingly.
Cardamom-Flavored Fruit Salad (Salatat Al-Fawaakih)

From: "Classic Vegetarian Cooking from the Middle East & North Africa"-Arabian Gulf. This is the BEST fruit salad my husband or I have ever tried! It's easy, healthy, refreshing and WONDERFUL. You have to like cardamom to really appreciate it though. You may find yourself doubling the sauce in the future because you want to drink it up. I don't repeat very many recipes because there are too many new ones to try but this one is repeated over and over during cantaloupe season. I'm sure it would work with other fruits as well but I like this combo so much I haven't experimented. -- posted by Engrossed

Vanilla Orange Freezer Pops

"These creamy vanilla-flavored orange juice pops will transport you back to the days of standing in line at the ice cream truck. Add a couple drops each of yellow and red natural food dye to give them a more vivid orange color." Recipe from Eating Well Magazine. Update: WOWZERS are these good!!! I cut the recipe in half which allowed me to use just one 6oz cup of yogurt and it made 5 small Tupperware size popsicles. -- posted by JanuaryBride

Cold Avocado and Cucumber Soup With Dill

No-cook soup good for hot days of summer. Real easy to make because the blender or food processor does most of the chopping, but it takes time to chill which is not included in cooking time. I omitted the optional shrimp (8-16 boiled & chilled) since I'm a vegetarian, but you might want to add some to yours. It also very light and low-fat. From the August 2009 food section of the New York Times, adopted from "Once Upon a Tart..." by Frank Mentesana and Jerome Audureau. Once Upon a Tart is a charming cafe in Soho neighborhood of NYC. -- posted by Kumquat the Cat's friend
