Easy Orange Salad/Dessert

I'm prefacing this recipe with I'm pregnant and have some strange cravings these days! I really like the combination of cottage cheese and sour cream. I came up with this salad as a result of looking over oodles of recipes! Any flavor of jello will work - you may want to change the fruit to compliment the jello flavor you are using.
**Cooking time is chilling time.
Updated -- I remade this and agree with reviewer, the jello does need to be dissolved or it will be gritty. This is not a sweet salad, so if you want it sweeter, you would need to use whipped cream or add sugar. -- posted by kittycatmom

Rustic Canyon's Cranberry Orange Cornmeal Cake

This beautifully rustic cornmeal cake has light notes of vanilla and maple, with ricotta folded into the batter just before baking for extra-moist texture. The cake is on the dessert menu at the wonderful Santa Monica restaurant, Rustic Canyon. It was created by their pastry chef Zoe Nathan and was printed in the LA Times (Oct. 29, 2008 ). It's a great do-ahead cake, as it tastes even better the next day. Recipe can be halved- it will take about half the time to bake. -- posted by blucoat

Victorian Spring Posy Cake for Easter or Mother's Day

One of my recent cake inventions - a standard Victoria Sandwich Sponge with a few delicious additions! Fresh oranges and lemons, lemon curd, crystallised violets and mascarpone cheese make this basic sponge cake moist and special enough for the Easter Sunday tea-time table, or for Mum on Mother's Day! I used lemon curd for the icing, but orange curd would also work if you wanted a mellow flavour. I have a recipe for crystallised violets on Zaar, Recipe #216296, and if you don't have any fresh violets, use any sugar paste flowers or cake decorations that work for you - the object is to make a Posy of flowers! This makes a big cake with one layer, you can cut the cakes again and make a three layer gateau if you wish. This cake disappeared quite quickly, but if you have any left, it keeps EXTREMELY well in a tin for up to one week. The sponge cakes can be frozen before icing, cutting back on time if you are going to be busy for the special event. -- posted by French Tart

Orange Glaze - Anne of Green Gables

Taken from "The Anne of Green Gables Cookbook", written by Lucy Maud Montgomery's granddaughter Kate Macdonald. I am posting this as it appears in the original book, which was written as a tribute to her father Stuart Macdonald (Montgomery's son). The recipes were written with precise instructions, geared for young cooks. All recipes were apparently tested by a 12 year old cook, with perfect results. Other recipes are available in a cookbook prepared by chef #756627 - book #243014 *NOTE*: Posting to add to the cookbook. I have not personally made this recipe. -- posted by Diana #2

Cran-Orange Mini Bundt Cakes

From the Nestle Baking Site... I'm posting this in honor of Sydney Mike and his love of cranberries. He did such a wonderful job with PAC and this recipe is being posted in his honor. I love the mixture of cranberries and light flavor of the orange zest and then add some chocolate chips - well it is a bit of heaven on a plate. Feel free to use dried cranberries in place of the fresh and low-fat buttermilk (or make your own...3/4 tbsp lemon juice + 3/4 cup milk (any fat content) -- let stand for 10 minutes will equal the 3/4 cup buttermilk needed for this recipe. Of course you can make this as one large bundt cake - just have it bake about 50-60 minutes, testing after 50 minutes. Enjoy! (Total time does not include time needed to allow cakes to cool). -- posted by HokiesLady

I love strawberries and this simple dessert really gets you in the mood for spring. It's very fresh and creamy. I didn't have orange juice but I had oranges so I made fresh squeezed (YUMMY). I also used real whipped cream instead of whipped topping. I found the recipe on Kraftfoods.com. Delicious!
Fresh Orange Sherbet

Unlike ice cream, store-bought sherbet is usually third-rate. If you want a really good fruit sherbet, do you have to make it yourself? YES!
If using a canister-style ice cream machine, freeze the canister for at least 12 hours or, preferably, overnight. If the canister is not thoroughly frozen, the sherbet will not freeze beyond a slushy consistency. For the freshest, purest orange flavor, use freshly squeezed unpasteurized orange juice (either store-bought or juiced at home). Pasteurized fresh-squeezed juice makes an acceptable though noticeably less fresh-tasting sherbet. Do not use juice made from concentrate, which has a cooked and decidedly unfresh flavor. Vodka can be substituted for the Triple Sec, but I prefer the citrus flavor of the Triple Sec. Prep time includes juice chilling time.
Iced Oranges With Granita

A pretty little dessert! Great to serve on a hot day or after a summer barbeque.

I used navel oranges for mine - please note that if you use another type/size of orange, you may have to change the quantity of syrup/juice accordingly.
Tourteau Fromage a la Compote de Fraises et Oranges. This dessert is from the Vendee and Poitou regions in France. They're a cross between a rock bun & a scone. Can be enjoyed at any time of the day.
Some say they're best when still warm, cut in half & spread with butter. I like to eat them cold with butter, or as a treat with cream. -- posted by Wakey lass Lisa

Cardamom-Flavored Fruit Salad (Salatat Al-Fawaakih)

From: "Classic Vegetarian Cooking from the Middle East & North Africa"-Arabian Gulf. This is the BEST fruit salad my husband or I have ever tried! It's easy, healthy, refreshing and WONDERFUL. You have to like cardamom to really appreciate it though. You may find yourself doubling the sauce in the future because you want to drink it up. I don't repeat very many recipes because there are too many new ones to try but this one is repeated over and over during cantaloupe season. I'm sure it would work with other fruits as well but I like this combo so much I haven't experimented. -- posted by Engrossed

Bergamot Fresh Fruit Salad With Scented Pelargonium Leaves

This fruit salad is amazing, and all the more for the addition of bergamot leaves and flowers! The fragrant leaves of this versatile herb delicately flavour the syrup whilst the gorgeous shaggy red flowers and scented pelargonium leaves decorate it for the final finishing flourish! If you are a lover of Earl Gray tea, you will instantly recognise the flavour of this herb, as it is used to flavour this famous and popular tea blend.
NOTE: Bergamot, often referred to as bee balm, became distinguished as "Oswego Tea" when a Quaker botanist, John Bartram, sampled a tea made from the leaves. A Bergamot lemon is a small yellow sour citrus fruit similar to an orange, mostly cultivated in Calabria in Italy. The rind contains an essential oil used in perfumery (the basis for eau-de-cologne), confectionary and Earl Grey tea. The zest is also used in pâtisserie. NB: Prep time includes cooling time. -- posted by French Tart

Chocolate-Orange Cake

I love this cake for several reasons. I love chocolate and orange together, I love cake in general, and sometimes I like to cook without eggs or other high-allergen foods just to keep my game up, although this cake does require yogurt so probably can't be made vegan . I found the original recipe on a blog by Shyamala Ramanathan-Edwards http://srefoodblog.blogspot.com/, who based her recipe on one from the eggless baking book by Cintia Stammers, published by the Bhaktivedanta Trust. Then I put chocolate in it.
I have never made the orange-sultana (raisin) filling, instead using (eggless) orange curd such as http://www.recipezaar.com/fresh-orange-curd-357753 and/or chocolate ganache. -- posted by Shoga-chan

Adding this to my holiday cookie trays. Adapted from a recipe in The Seattle Times provided by Lynne Rossetto Kasper. Something wonderful about orange at Christmas. Coconut is always so festive too. The article noted this dough really benefits from resting overnight in the refrigerator so start the day before. Over working this dough seems to make tough cookies - think I'll be using cake flour.
Crepes Suzette (Weight Watchers)

Just like Julia...if you liked the movie, you'll love the recipes. Weight Watchers has updated the beloved chef's timeless classics, keeping the French flavor, but trimming the fat. The original: 19 Points values - WW remake: 4 Points values. So why not serve a few of your favorites when you host a Julia-inspired Oscar fete this year? Bon appetit! Tip: If you want to prepare this dessert but skip the alcohol, substitute 1 Tbsp lemon juice for the liqueur and omit boiling the sauce in step 4. When you swirl in the butter in step 5, add the grated zest of 1/2 lemon. -- posted by Crafty Lady 13

Rab Torte (Rapska Torta)

It is believed that Rab Torte was served for the first time in 1177. when Pope Alexander III, escorted by his ten galleys, was overtaken by a storm as he was crossing the Adriatic, and took cover under the cliffs and in the harbors of Croatian island Rab (and town), and thus by a quirk of fate arrived in Rab just after the renovation of the Cathedral of the Assumption, which he consecrated on the occasion. In order to enhance this unexpected ceremony and to express their respect, nuns of the Benedict order served him cake on the host – Rab cake. The original recipe for the first Rab cake is kept in the archives of the Benedictine abbey of St. Andrew on the southern coast of island Rab.
This is another excellent recipe from Diana Rattray. The glaze has a nice consistency due to the cornstarch included and its citrus taste is very good in any cake or cupcakes. Enjoy. -- posted by pinky kookie
